400 g paccheri (or large macaroni) 1 onion 1 clove of garlic 3 carrots 2 stalks celery 2 large courgettes 500 g asparagus 1 20 g of tomato puree 50 ml of fresh cream 3 tablespoons extra virgin olive oil 20 g butter 1 /2 cup w hite w ine 1 spoon of vegetable broth 1 /2 hot pepper salt pepper

PREPARATION
Peel the zucchini, celery and carrots, and cut ev ery thing into small cubes. Chop the onion and brown the diced in a pan with 2 tablespoons of oliv e oil. Pour the wine, add the tomato sauce and let cook for 30 minutes, add salt and pepper Peel the asparagus, remov e the white part of the stems, rinse them and tie them to the deck. Boil for 20 minutes in a pan with high sides. Drain, cut into cubes only the tender and brown in a pan with the oil remaining v irgin and peeled garlic. Eliminate laglio from asparagus and add the broth hot, fresh cream and crushed red pepper, and stir. Season with a pinch of salt and allow to thicken for 1 0 minutes, then transferred to the blender and blend. Boil in half cooking the pasta and then drain.
