Its better to have a few good
knives than a block full of poor
ones. Chef Susan Jessup,
Cordon Bleu graduate and
co-owner of 42 Fine Foods in
Ottawa, says building a good
knife collection is an invest-
ment you can make over time.
Here are the essential knives
Jessup says evey man needs.
1. Chef's knife
This is your go-to kitchen knife.
Buy one with an 8-inch blade
thats wide and relatively thick
except for the cutting edge
so it can handle the workhorse
knife jobs in your kitchen.
Perfect for slicing a roast or
cutting up hard vegetables.
A quality chefs knife starts
around $50.
2. Serrated knife
Its important to have a serrat-
ed knife because cutting bread
will dull your smooth blades.
Theyre also great for tender
vogotablos and ruits witn hrm
skin, like tomatoes. If you love
large rustic loaves of bread, go
with a 10-inch blade for about
$50. If youre mostly eating
baguettes or oval loaves, an
8-inon blado is hno and starts
at $30.
3. Paring knife
The smaller version of your
chefs knife perfect for peeling
fruit and vegetables or slicing
smaller items such as scal-
lions, ginger or garlic. A good
paring knife will set you back
$12 to $15.
4. Knife sharpener
Dull knives will bruise fruit and
vegetables, crush fresh bread
and slide off food surfaces, so
store knives in a knife block or
on a wall-mounted magnetic
strip. Sharpen knives you use
daily once a month others
may only need it once a year.
You can use a honing steel,
an electric home sharpening
machine or take them to a
professional sharpener.

Outdoor Dining
Think of Havana, load up on mint leaves,
juicy limes and white rum, and get mud-
dling. Andres Gonzalez, owner of Mambo
Lounge in Toronto, says the key to a good
Mojito is fresh ingredients.
Ingredients:
1 sprig fresh mint, including stem
2 tsp fresh lime juice
2 tsp white granulated sugar. Add to taste.
1 oz white rum
cup sparkling water
Method:
Pour sugar into a tall glass and cover with
lime juice. Add mint and muddle. Fill your
glass with ice cubes. Pour rum over mint-
lime mixture. Add sparkling water. Gonza-
lez says dont skimp here, cheap sparkling
water has high salt content and ruins the
havour o tno mint. Stir witn a long oooktail
spoon. Garnish with a lime wedge and a
mint leaf.

er. She says its a great ice-breaker at a party.

Spicy, savoury, salty. Its like a Bloody
Mary, except more delicious. Unlike
Bloody Marys, Caesars use Clamato
juice a salivating blend of tomato and
clam juices. Our Spicy Caesar has every-
thing you need to kick-start the day fruit,
legumes and a shot of vodka.
Ingredients:
6 oz Clamato juice
1 oz vodka
celery salt
1 tsp horseradish
4 dashes Worcestershire sauce
4 dashes Tabasco sauce. Add to taste
lime wedge
spicy bean
Method:
Run the lime wedge around the rim of the
glass. Pour celery salt on a plate, and rim
the glass with the salt. Throw in ice cubes,
and pour vodka and Clamato Juice into
the glass. Add Worcestershire sauce,
Tabasco sauce, horseradish and garnish
with the lime wedge and a spicy bean. Stir
and enjoy.

You dont have to be a gym rat to sculpt a beach body personal trainer Ben
Costigan offers advice on bulking up at home, nutrition and gym etiquette.
What's a good home workout for someone with no equipment?
One of the easiest routines is eight rounds of a simple exercise, 20 seconds
on, 10 seconds off. It takes four minutes to do each exercise, and you can
cycle through push-ups, planks, squats, lunges, jumping jacks or sit-ups. Just

Protein shakes post-workout- worth it?
Theres a 30-minute post-workout window when your body absorbs nutrients
better than usual. Exercise breaks down muscle so you need to build it back
up the importance isnt the protein shake itself, but getting nutrients right
after you work out. Its hard to eat a full meal at the gym, so protein shakes
can be an easy way to get those nutrients in within the half-hour time frame.
Is it okay to hit on someone at the gym?
Is it appropriate to hit on someone on the street? I think its the same. If some-
ones working out hard, listening to music, its totally inappropriate to stop
them. If they talk to you, then sure its the same as any public place.

Ditching the city centre for a breath of
fresh air may seem simple, but you gotta
know someone who knows someone to
experience the wild side of Nova Scotia,
says John Glynn-Morris. He wants to
change that. A mastermind behind Recre-
ation Nova Scotias Outdoor Network, his
mission is to make information about prime
outdoor areas available to those outside
the circle of hardcore outdoor enthusiasts.
To start, heres his top-three list of hiking
trails near Halifax:
The BIuff TraiI tops the list for a few
reasons. First of all, its Timberlea location
means Halifax Metro Transit can take
you there in no time the cost of getting
there is pocket change. Its also one of
Glynn-Morris favourites because it has
four stacked loops, meaning you could
stroll for two hours, make it a full-day or
overnight trip. In 2008, Explore Magazine
named it one of the eight best urban
escapes in the country.
The Duncan's Cove TraiI is a less-
er-known coastal trail less than half an
hour from downtown Halifax. Its a there-
and-back trek that takes three hours round
trip. This ocean-side trail makes for a
breathtaking view and is also popular for
some World War I monuments along the
way a wilderness and history experience
all in one.
The Crowbar Lake TraiI is a well-es-
tablished trail system about 45 minutes
northeast of Halifax. Like the Bluff Trail, it
offers various options, ranging from 1.6
km to 20 km, depending on your level of
ambition. The three major lakes these trails
visit are great places to stop for lunch or to
cast a line.

Youre still at work and, oh, that
girl from the bar is coming over
for dinner. The kitchen is still a
mess, you havent picked up
groceries all week, and are in
no way prepared for the night.
But fret not: heres a quick,
easy meal to impress your
date.
For starters, you better have
some fusilli and a jar of tomato
sauce in the cupboard. Throw
a pot of water on the stove.
Chop up a clove of garlic, an
onion, and get them grilling on
the frying pan. That was liter-
ally the hardest part. Cook the
pasta and warm up the sauce
with a couple spinach leaves.
If youve got mushrooms, chop
them up and throw them in. Let
the sauce warm for a couple
minutes, allowing the spinach
to wilt and the mushrooms to
soften. Mix the pasta and the
sauce it on a nice plate. Throw
some grated cheese on, and
add some fresh basil or pars-
ley to green it up.

How often shouId someone shine their shoes?
About once a week.
Even in summer?
You can wear a nice suit all dry cleaned, but if your shoes are dirty it ruins it. The suit
might not be that great, but if your shoes are clean and shiny well, then youre looking
good. Shoes always play a role. You can get a sense of someone. Like if you go to a
bank and theres a guy whose whoes are shiny and clean, then hes probably clean cut
and fussy about how his apartment looks.
How Iong wiII good quaIity shoes Iast?
At least two years. Theyll still look good if youre polishing them up. Sometimes new
laces look nice because those can get worn out. It looks fresher when you throw a new
pair of laces in.

She slied into the seat beside him smeing of
strawbeies and sunscrn. Her wet hair tied into
a subtle tourban with her favourite silk scarf, she
leaned in for a quick ki and put her ft up on the
dash. They had the wkend ahead of them and the
city behind them and tiny sandwiches in a cler in
the trunk. But the wind was fierce that day and,
when rounding a particularly precarious bend,
