EDITORS NOTE
Hello and welcome to our special Mothers Day edition of Lets eat! Magazine. Few relationships in our lives can match that which we have with our mothers, and at the heart of this relationship is food! Depending on your origin, your favourite childhood dinner may have been a fragrant beef rendang, a serve of spicy tacos, a hearty wiener schnitzel, or a fresh cooked seafood paella. Mothers home cooking means something different to everyone but no matter where you are from, nothing can beat good old home style mamas cooking. In search of a true Italian mama, our team track down Luigina who raised her four sons in Italy on a staple of pasta, pizza and gnocchi before bringing her particular style of home cooking to Bali where she cooks up a storm of regional specialties at Rustica (p 40). We also meet Kertawidyawati, secretary of the Hendra Oktaviano Editor-in-Chief Indonesian Food and Beverage Executive Association, an inspiring woman who successfully balances her job at Aston Bali Beach Resort, with quality family time (p52). Alison is a travel writer and self confessed food-lover. She has spent many years traveling the globe, immersing herself in foreign cultures and sampling local cuisine, applying her motto Everything should be tried at least once. Her heart has now been captured by Bali where she is happily indulging her favourite things; writing, traveling and discovering new restaurants

Menur describes herself as a part-time food lover and a fulltime food friend. She enjoyed her exposure to many different restaurants during her year teaching Indonesian Language and Culture in Washington DC. Now back in Indonesia she has discovered that her pleasure in trying new food has deepened and she hopes to one day open her own restaurant.

Eve is the newest member to join the Lets Eat team and says her familys motto has always been live to eat, rather than eat to live. Aside from eating she also loves to write, travel, design and cook (although, admittedly that also involves eating.)

Dewi admits to falling in love with writing and photography. Her wandering feet have taken her travelling all around the archipelago before finally settling in Bali where she set to work capturing the authenticity of the island in words and images.

Nestled into the W.Barwa Gallery in Peliatan, Ubud, Guwung provides a tasty menu, with a mix of traditional Indonesian and French cuisine served in a charming, rustic setting
excellent and manages to be flavourful without being overbearing. This traditional Balinese dish is similar to gado gado with a fragrant peanut sauce coating tofu, green beans, bean sprouts and soft and fluffy slices of lontong (rice cake.) Two variations of Nasi Campur follow, one featuring chicken in the form of ayam cary, (chicken curry), ayam sambal mantah, shredded chicken with raw sambal, and ayam sambal pedas, chicken in hot spicy sambal, along with tempe manis (sweet spicy fried tempe), urap vegetables and rice.

Peach Tart Blueberry & Cranberry

The other features variations of pork, including crackling, and pork cooked in a rich sambal. Make sure to try some of the tasty krupuk (crackers) from the big glass jars, the talas pedas manis are sensational, super hot and spicy but so tasty that you just cant stop eating them even though they kind of set your mouth on fire, so make sure you have a glass of water handy. Alongside the Indonesian cuisine cooked by Pak Komang, there are tasty French dishes prepared by Pak Ivan founder of renowned White Box which specialises in French inspired desserts (with a new gourmet shop just opened in Jimbaran). We have a well dressed Caesar salad, and a hearty Spicy Tuna Jalapenos Pie encased in perfect short crust pastry and served with authentic thick-cut french fries. Ivan also provides our

dessert. The Peach Tart is lovely, with a crumbly case filled with peach and custard, finished with rum raisin ice cream, but it is the Tarte Tatin that is forever forged in my memory. Buttery, flaky pastry is filled with the softest slivers of warm apple and finished with glistening caramelised toffee. With such nice food on offer it is easy to over indulge, but you can walk off a generous lunch as you wander through the three separate pavilions of the gallery, filled with an impressive array of artwork from some of Balis most renowned artists. FLAVOUR
The heat level of the sambal is related to the type of chilli used.

Additional twist
Shallots, garlic, shrimp paste (terasi,) raw mango, candlenut (kemiri,) lemongrass, tamarind, lime, tomato, fried peanuts, salt, and sugar all make great additions to sambal.

DO YOU KNOW?
Sambal is used as an all-purpose condiment. Feel free to add sambal to some plain rice or a simply cooked piece of meat to add a dark, fiery flavour. Traditionally, sambal is made using a stone mortal and pestle to grind the chillies and other ingredients into a paste. Too hot? Your mouth is on fire? A glass of hot tea or anything hot enough to pass over your tongue without burning it will help wash away the effect of a super spicy chilli. For a quick, bright salad dressing, mix together 1/4 cup of mayonnaise, 2 tablespoons each of lemon juice and capers, and 1/4 teaspoon of sambal.

Sambal is a spicy sauce or relish that consists of ground chillies and various spices. It is actually a way to preserve chillies and is often used when fresh chillies are not available.

Chilli pepper (cabai merah) and birds eyes chilli (cabai rawit) are the most popular and can be found fresh from small traditional markets and modern supermarkets.

The ancient Romans regarded caviar as a delicacy so special that a chorus of trumpets heralded its arrival at the dining table, but it was the Russians that developed the trade in the 13th century and perfected the art of harvesting artisanal caviar.

Cooking with Love


Mothers day falls on different dates around the world, but, lets face it, who needs an official day to appreciate their mum. Of all the relationships we form in our lives, none come close to that of a mother and her child. At the heart of this very special bond is food: From breast feeding, to bottle feeding to our discovery of the joys of eating, there are few things in life that can beat the comfort of food prepared with love, by our mother.

Of all the traditions in the world, cooking is one of the oldest. Perhaps it was in the nature of mankind that when fire was invented, the first cook was born. There are pictures of people gathering together inside ancient caves, excavated together with the remnants of rudimentary cooking implements and bones, signs of well-devoured meals. As people evolved, so too did cooking techniques and in time the restaurant concept was born, but the simple age old tradition of people making time to sit, talk and share food with each other remains unchanged. Nowadays, people tend to eat out more often. Blame the convenient drive-thru or the thoroughly affordable and delicious street-style snacks that we have in Asia. Why bother to cook when you only need to call for a delivery service or wander out to the street for a delicious pad thai from the mobile stall?

But then there is the occasional pang of nostalgia that visits you in an unguarded moment. How you miss the classic thick pancakes topped with maple syrup and strawberries that your Mum used to make! How you are craving for the fragrant rice congee that Grandma loved to cook on Sundays! For each of us, mothers home cooking has a different meaning, but regardless of our childhood favourites, certain aromas and tastes will always open the flood gates of memory. No wonder the food industry is industriously boasting titles like authentic or home made or Mothers secret Recipe. After all is said, tried and done, it is universally acknowledged that mother cooks it best. Give me a bowl of sayur asem, fried tempeh and Mums spicy sambal anytime, a Sundanese friend said.

Ive been looking for homemade ravioli like my Nonna used to make, richly filled with spinach and cheese, claims an Italian friend, while a Japanese friend living in Bali told me that what she misses most from home is her mothers miso soup. For me, born and bred as Balinese, the wafting aroma of fragrant white rice and sambal embe, mixed by mothers hand means home. When I used to return home from college breaks itwas always the first thing I would ask her to make. Motherhood is something of a mystery. All those hours, dedicated to making ones family blissfully happy. Unpaid, no cash bonus, no time off. We might reward them with occassional gifts and kisses, but really, it is never enough. It is very much like cooking. All those back breaking hours, sweating profusely in the kitchen, creating the very best. The reward, like most chefs say, are the compliments and the knowledge that you made someone else happy. An American columnist, Harriet van Horn, says it best: Cooking is a lot like love. while comfortably ensconced in an arm chair, or lounging about in one of the cushion-filled alcoves. Indonesian-born Ayu, who grew up in Europe, and Luca who is Roman born and bred, initially started the restaurant as a hobby wanting to create a relaxed and friendly place where they could hang out with Spaghetti al Tonno friends, and enjoy simple Italian style cuisine. A wood fired pizza oven was built and a menu designed in Kuta is always a fun place to head for those in search of cheap eats and a lively vibe. Amidst the plethora of warungs are a scattering of decent, great value restaurants, such as Roma. With a spacious setting just back from the busy sidewalk (and with ample parking an absolute rarity in this neck of the wood,) Roma has always stood out from the crowd, which is why back in the days when I lived in Kuta, I was a regular visitor. A laid back vibe, good quality comfort food, pool table, and hi speed wi fi creates quite the chill out zone, (with sound track to match) perfect for watching all the action on the side walk, collaboration with an Italian chef who trained the staff in the subtleties of Mediterranean flavours. Prices were set low enough to ensure a high turnover of food and a steady crowd of diners. Even though I have moved from Kuta, I often drop by Roma when I am in the neighbourhood. Old habits die hard, and I still enjoy the traditional Roman-style pizza, which is so light and crispy I can easily eat a whole one by myself without ever feeling greedy. My favourite is the Pizza alla Greca topped with a light tomato sauce, sharp, salty feta and fresh rucola always a sublime combination.

Wiener Schnitzel Brownie with Ice Cream For the size and quality it is one of the best value pizzas on the island, and special promos include, All pizza at RP 35,000 from 1 4 Monday to Saturday. Bruschetta, Focacce and Panini are also on the menu, as are grills, and salads, including Greek, Mediterranean and Chicken. Pasta is (of course) prepared al dente, with a choice of sauces like Bolognaise, Pollo, Crema di Fungi, (chicken, mushroom and French cream sauce,) and our choice, a tasty Spaghetti al Tonno tossed with tuna, garlic, olive oil, pepper and fresh tomato. A range of international favourites includes a good, thoughtfully prepared Wiener Schnitzel fried to golden crunchiness in toasted breadcrumbs, served with a generous portion of french fries, and a cucumber salad. The comfort theme continues into the dessert menu which includes Crepes alla Roma with banana, nutella and ice cream and a homemade Brownie with ice cream, perfectly matched with a well executed Espresso. As you enter Teatro Gastroteque for dinner, you are welcomed by a dynamic kitchen scene on the left and sexy velvet sofas and rustic tables on the right. Low ceilings, warm lighting and soft colours create a homey and cosy atmosphere. Situated in the hip Seminyak area, with seating for just 22, reservations are definitely recommended. This gastronomic restaurant is ideal for those in search of quality cuisine, which is prepared under the supervision of Executive Chef, manager, and owner, Mandif Warokka. Well known for his talent, and achievements in international culinary events, Warokka has also appeared as guest chef in several restaurants worldwide. His latest celebrity chef act was in the premier season of Master Chef Indonesia. When asked what Teatro is all about, Warokka replies, Teatro is a gastronomique bibliotheque, a library for people who adore fine food, people who expect gastronomic dishes from prime quality ingredients but without the formality of a fine dining restaurant. He adds, I want people to experience the best food but with a less formal ambience its funky fine dining.

Double Chocolate Mousse

Set menus range from Chef Degustation to the Prestige Menu, or you can choose from an la carte selection. There is something new on the menu each month and every dish represents years of experience and passion from each of the talented chefs in the kitchen, who are closely supervised by Warokka, to guarantee finely crafted dishes. Warokka promotes Indonesian food that is rich in taste and beautiful in presentation, as showcased in the Regional Degustation set menu. Straight to the point, the plates coming from the kitchen are good looking, like the Seafod Caramcam, or the Gulai Kambing that has an authentic Indonesian Gulai (rich curry) sauce poured over lamb shank and lamb rack,

then topped with jackfruit and rolled Nasi Uduk. Other favourite items include Lighly Steamed Grouper or Red Grouper with curry, sambal matah, pumpkin, fern leaves, and garlic mousseline. Of course, vegetarian option are available upon request and personally tailored according to the available ingredients of the day, to keep things healthy and spontaneous. An aperitif and cocktail menu is available and the wine list is extensive, as Warokka is a wine lover himself. For dessert, the Double Chocolate Mousse is divine with an exotic touch of jackfruit. Lumpia Bebek Jamur makes a tasty starter deep fried duck and shitake spring rolls, uniquely presented in a crunchy birds nest-style basket of fried noodles, with a colourful array of julienned vegetables on the side. The Chinese Chicken Salad follows, a light, but substantial mix of springy greens, shredded chicken, dainty quail eggs, potato and beans. A scattering of olives, cherry tomatoes, and raisins and a mild and creamy honey and rice vinegar dressing brings the salad alive. The Tandoori Snapper Fillet combines a myriad of flavours and textures. The fish is baked in aromatic spices and served on a luscious yoghurt and coriander sauce, and sits alongside a mini tower of fragrant,

buttery herbed rice packed with dried fruit. My favourite aspect of this dish is the stack of tender grilled baby eggplant layered with a divine mango mint chutney. The Rijstafel is a feast for two, comprised of an array of dishes. Highlights include the Daging Sapi grilled wagyu sirloin in a rich spicy sauce, Tahu Dan Tempe Goreng deep fried fermented soy bean and bean curd, and the Bebek Betutu traditional Balinese smoked duck. Caprese Vegetariana Pizza Lasagne With a sweet and charming nature, Luigina welcomes us like family and in true Italian style treats us to a luncheon feast. Antipasti includes Carpaccio, (a choice of Bresaola or Mahi Mahi, Prosciutto e Melone, Rustica Salad, and a wonderfully authentic Caprese with thick slices of milky mozzarella layered with plump juicy tomatoes and scattered with basil. The Olive Ripiene also deserve a special mention tasty pan fried delights of green olives stuffed with cheese or seafood. Moving on to main courses, the golden-topped Lasagne has a hearty filling of bolognaise, and manages to be rich and fully flavoured without being at all heavy. The pasta in the Cavatelli Arrabiata has been freshly made and is served perfectly al dente with a simple, smooth sauce that balances just the right amount of tomato, garlic and a dash of chilli. Homemade ravioli, tortellini and spaghetti can be accompanied by a myriad of sauces, including Zucchini & Gamberi, Vongole, (clams,) and Carbonara, while there is also a good choice of meat, chicken and fish dishes to choose from. There is nothing quite like the aroma of fresh baked pizza delivered straight from the oven to the table, and the thin crispy Vegetariana scattered with mozzarella, premium quality zucchini, red and green peppers is everything you could want in a pizza. We finish with thick slices of the Torta alla Fruta with layers of apple on wonderfully crumbly sweet pastry, and soft, spongy wedges of Tiramisu which leave us sighing with pleasure, and barely even room for a Cappuccino, but somehow we manage. In true mama style, Luigina nevertheless seems disappointed that we havent eaten more and elicits a promise from us to return for the Saturday night buffet (she shows us pictures it looks epic!) when she plans to spoil us with more of her home cooking. A potpourrie bath awaits, and we float amidst fresh roses petals, tuberose and cempaka, scented with bursts of freshly squeezed lemon. The divine massage that follows is preceded by a surprise showering of rose petals (for positive energy) and ends with a nourishing traditional rice face mask. We emerge glowing, and so deliciously relaxed that its a struggle to get our legs up the stairs. Luckily, cocoon like tall-backed chairs await us at a table overlooking the forest and we rehydrate with The Detox a wonderful elixir combining the natural goodness of young coconut, with perfectly ripe pineapple and just a hint of lemongrass. The spa menu is available from 11am 9pm and designed to nourish, with organic ingredients that are fresh, healthy and nutrient rich. DaLas Salad is a colourful concoction of springy greens, beetroot, mandarin, parsley and basil creating a pleasant contrast of tastes and textures. The Prawn Duvets are fresh and juicy steamed prawns subtly infused with garlic and ginger and decoratively arranged on a bed of greens with a tomato salsa. Other options include Lentil Soup, Tuna Tataki and Lobster Risotto. For dessert, opt for a fresh fruit platter, or some traditional Indonesian delicacies, like sweet Klepon, Bubuh Injin, black rice pudding, and Pisang Kipas poached bananas in rice batter served with fresh grated coconut. Should you prefer a more traditional Indonesian feast, head up to the stunning Petani restaurant at the front of the resort. Welcoming us with a big smile is Chef Desak, or Chef Dee, as she is fondly known by her guests. This Singarajaborn wife and mother kicked off her career in 1997. I worked in restaurants and a boutique resort in Ubud before joining Kamuela, she says while skilfully flipping a fresh baby lobster in a pan. Her passion for experimenting with eastern and western food can be seen in the menu, which provides a fusion of flavours. Ive had a lot of support from hotel management and my family, to keep pursuing my career. Ultimately, you have to know what your priorities are to make it work. I let everything happen in its own time and course, she concludes as she proudly presents us with her most popular dish Seafood Emulsion, a plateful of baby lobster, prawn, fish and squid in cream dressing and pesto basil. I have been cooking since I was old enough to hold a whisk, and started out by helping my parents with their catering business, explains Chef Rina, in her industrious kitchen that smells like vanilla. Ever since graduating from a tourism college in Bali, she has been in a committed relationship with pastry and everything sweet. She joined Nikko in December 1996 as the third cook in the bakery section and learned all there is to know about dessertmaking. Her creations, which she proudly presents to us are inspired by French pastry techniques and offer guests a special experience. We cater to all sorts of nationalities and cultures, hence I create flavours to suit all sorts of tastes, says Chef Rina while urging us to try her creation of Tamarind Parfait with caramel, raspberry ptes de fruit and a dome made of coconut, pineapple mousse, caramelised pineapple and dacquoise.

As we celebrate mothers day we track down two inspiring female chefs in Bali. Women are still vastly outnumbered by men when it comes to sweating it out in a professional kitchen, but as Chef Rina says, Women can be anything right now, so dream big and go for it!

Q: In a nutshell, how do you feel about Bali?


CHEF DEE: Id like to see more Balinese women becoming chefs in the future. CHEF RINA: Bali is perfect, dynamic but relaxed.

Q: As a chef you obviously like to eat.. but what


is your favourite drink?
CHEF DEE: Coffee before anything! CHEF RINA: Definitely coffee to start the day, then beer to end the day.

Q: What did you dream of as a kid?


CHEF DEE: I used to dream of becoming a policewoman. CHEF RINA: I wanted to be a flight attendant because I love to travel.

Q: What do you usually cook at home?


CHEF DEE: My family likes simple Indonesian dishes so thats what I cook. CHEF RINA: Chinese food and Manadonese rice porridge.

Q: What are the highlights of being a chef?


CHEF DEE: I love the challenge, and receiving positive feedback from guests definitely makes my day! CHEF RINA: To make the guests happy and to successfully cater to all their tastes.

President of ISA (Indonesian Sommelier Association) Bali Chapter sits with us by the pool, sharing her her thoughts on women in the industry, and why ladies need their own Champagne Club.

Q: Describe your typical day. A: I drive my daughter to school every morning


and start work by 8 am. I make the usual rounds, coordinating with staff, checking supplies and attend the scheduled meeting at noon. After work, I usually dedicate an hour or more to deal with my responsibilites as the ISA Bali Chapter, and secretary at IFBEC (Indonesian Food and Beverage Executive Association) Bali. Attending functions and events, are also a priority, as of course, is going back home to spend quality time with my family.

Q: Was it easy to break into the industry in Bali? A: Not at all. You have to own a strong will,
unbridled passion and perseverance to make it in this male dominated industry. You have to do better, work twice as hard as the men and prove to them that you are more than capable. Its a good thing, we as women, own this very special talent: multi tasking!

Q: Please share with us how your love affair with wine started. A: I firmly believe in making a personal connection
with my guests. I always greet my customers and give recommendations if needed, according to their tastes, especially if they are regular customers.

Q: What led you to the F & B industry? A: I initially studied at a tourism college in Bandung,
West Java. Ive always been very fond of hotels and always wanted to become a hotelier. I ended up at Mandarin Oriental Jakarta in 2004 before joining Aston Beach Resort & Spa on 2008. And yes, Ive been here ever since.

Q: Any advise for another woman who would like follow your footsteps? A: Be passionate about what you do. You will invest
plenty of time at work and you have to love it so that you can enjoy it. Its not easy but if you love it than it will become easier. Id like to see more women in this business and its always been fun working or socialising with them, as I have been doing lately with the women of Bali Ladies Champagne Club: We have long bubbly lunches. Thinking about having an Indonesian-themed meal today? Why not pair sambal (see article p 20) with Sayur Asam, a renowned fresh soup originally from Java. It has everything you could ever want in a soup like vegetables and spices, and can be made with or without meat. Asam means tamarind in Indonesian and we use a little to add a spark of tangy fruity freshness to this fragrant soup which combines sweet, salty and sour flavours, and is best accompanied with white rice and of course sambal on the side. To make it easier when shopping in a traditional Indonesian market, we have put the Indonesian translation for each ingredient in this recipe, which serves four.

Ingredients:
2 litres water 3 cm of smashed galangal lengkuas 100 grams of peanuts (kacang tanah) 2 corn cobs cut into 5 cm pieces (jagung) 1 peeled and diced chayote (labu siam) 5 long beans (kacang panjang), cut into 5 cm pieces 250 grams of beef (daging sapi) (optional)

Ground these spices:


10 peeled shallots (bawang merah) 5 peeled garlic cloves (bawang putih) 7 roasted candlenuts (kemiri) 3 red chili peppers, deseed first if you prefer mild taste (cabai merah) 1 teaspoon of Javanese tamarind (asam jawa), 2 tablespoons of Javanese palm sugar (gula jawa) 1 teaspoon of roasted shrimp paste (terasi udang) 2 tablespoons salt (garam)

Step by Step:

Cook the water with beef (or without beef for vegetarian version) until boiling. Put the ground spices and smashed galangal in the water, and put the pan on a low heat. Add peanuts and let them cook. Add corns, chayote, long beans and simmer until tender. Sayur Asam is ready to be served!

The key to this chilled out caf is owner/chef Made, who learned the tricks of the trade in her familys warung in Denpasar, cooking up spicy rendangs and other classic Indonesian favourites. After marrying an

English surfer named Dave, Made went on to work in an eco lodge/organic pub in Suffolk, expanding her culinary repertoire to include healthy western style food. Returning to Bali in 2012, the couple opened Canteen with a menu that combines casual international food and tasty Asian cuisine.
