Introduction
Introduction
Hello, my name is (Mr.) Lavern Gingerich. My brother Marlin and I run Yoders Smoky
Mountain Barbecue. We sell barbecue equipment for Melvin at Meadow Creek Welding.
Ive published lots of free information and recipes to help people improve their barbecue, but
I was always sensitive about blogging and emailing too much stuf that simply had to do with
buying Meadow Creek equipment, for fear my readers would get ticked of and leave.
Then I learned that a lot of my readers are actually looking for advice on which cooker to
choose. So once I woke up and smelled the smoke, I was inspired to write this guide to
help you choose the one that fts the chicken.

The Meadow Creek Culture
So, what is it about Meadow Creek that deserves your attention and respect? We could say
a lot, but here are a few things that stand out to me:
Integrity: Meadow Creek cookers are made in a culture of Godly ethicshonesty,
hard-working diligence, and fairness. Whether its a Shoo-fy pie or a barbecue
smoker, you will be treated right.
Awesomeness: Our cookers are designed by barbeque experts and hand-made
in the USA by talented
welders and craftsmen. Every
unit features outstanding
workmanship to give you
an amazing barbeque
experience.
Rock Solid Construction:
These cookers are
commercial grade and
heavy duty for many years
of dependable catering,
competing, or backyard
cookouts.
Unique: Designs and features, such as double-sided grates and stainless steel
grates that are unique to other cookers on the commercial market.
Stainless Steel Grates: Every Meadow Creek barbecue cooker comes standard
with non-rusting stainless steel grates. This eliminates the hassle of scrubbing rust
on the grates and the danger of possible rust contamination on your meat.
Value: Apples to apples, these Meadow Creek cookers give you outstanding value
for the price.
Melvin and the team at Meadow Creek are great people to work with. They really do care
and you can depend on them to keep their word.

Which Meats Do You Want to Cook?
The frst step in choosing your barbecue equipment is to know which meats you want to
cook and whether youll be grilling or smoking low and slow.
My guess is you might want to cook a variety of cuts. Sometimes this can be done with
one versatile cooker; other times, it takes more than one cooker.
There are 4 types of Meadow Creek cookers as follows:
Pig Roasters
Smokers
Chicken Cookers
Grills
Its important to choose the one that fts your menu plans.
On the next page is a handy chart for trying to decide which model you should
use. It includes a list of common meats/cuts along with primary and secondary
recommendations for each of the four types of Meadow Creek cookers.

The 4 Types of Meadow Creek Cookers
Pig Roasters
Dont let the name
fool you. Besides
whole pigs, you can
cook a huge variety of
foods on a Meadow
Creek pig roaster.
The drip pan creates
an indirect heat, and
the roasters design
makes it easy to
hold a consistent
temperature.
Use a charcoal-fred pig roaster to smoke anything you would
cook in a regular smoker. While an ofset smoker is a more
elite solution for all around smoking, this pig roaster is a
perfect solution if you need the space to cook a full-size pig
and dont want a second cooker to do your general smoking.
Add an optional grill pan and turn it into a grill. Then youve got one serious grill for
burgers, steaks, and that sort of thing.
Usage Summary: This pig roaster would be a great choice for you if you want to cook
large whole pigs, plus smoke about any cuts low and slow. And like I said, you can cook
grill foods if you add an optional grill pan.
Fuel Types: Pig roasters are available in either gas or charcoal/wood fred.
Sizes: We have highway trailer models and those you just move around by hand. Sizes
range from 36 long to 70. Great for backyarders and big-time caterers.

The 4 Types of Meadow Creek Cookers The 4 Types of Meadow Creek Cookers
Smokers
Its hard to fnd an ofset smoker that meets the standard of quality in a Meadow Creek
smoker. These are all about authentic, low and slow barbecue. They smoke your socks of,
period. And they do it in class.
Many people have
problems holding
a consistent
temperature in their
smoker for long
smokes. We have
personally cooked on
the SQ36, the TS60,
and the TS250, and
can testify that they
are a breeze to use.
Meadow Creeks tank smokers have a reverse fow
draft (see the illustration at right) and a rounded
tank end. Its no stretch at all to leave one of these
(especially the bigger models) for a couple hours
and come back to fnd it still on track.
Usage Summary: If you want to cook low and slow and roast small pigs, but still
occasionally cold smoke cheese and cook grill foods (with the optional grill pan), one of
these would be a good choice.
Fuel Types: All Meadow Creek smokers are available only in charcoal/wood fred models.
Sizes: The TS120, TS250, and TS500 models each come built on a highway trailer. The
other smokers are made to move around by hand. Sizes range from a small 36 backyard
model to the TS500, a 500 gallon smoker.

Chicken Cookers
If youve never seen a
Meadow Creek chicken
cooker, youre in for a nice
surprise. Meadow Creek
has set a new standard in
chicken cooking with their
revolutionary sandwich
grates. Load the grate,
close up the sandwich, and youre ready to roll.
Even a 5-year-old can easily fip an entire rack of
chicken with one hand.
With a Meadow Creek chicken cooker, you can easily grill large amounts of perfectly done
chicken, potatoes, onions, brats, and more without previous experience.
The Meadow Creek chicken cooker has plenty of space between the fre and the grate
(see the drawing above). May I say this again? Makes it easy to grill perfect food every time. I
cannot stress enough how amazing and efcient these machines are.
Usage Summary: A chicken cooker would be a good choice for you if you want to grill a
variety of foods, but do a lot of chicken grilling the easy way, for fund-raising or simply to
fll hungry bellies.
Fuel Types: All our chicken cookers are charcoal/wood fred.
Sizes: Sizes range from a custom order trailer
with 10 pits (or more) to the 26 back porch
model. The larger units (BBQ96 and BBQ144)
are built on a highway trailer.

Grills
These grills are like
traditional style grills, but
built to last for serious
grilling and consistent
results. Perfect for catering
and other commercial
events.
Usage Summary: If all you
need to do is grill foods, such
as burgers and steaks, then
one of these would do an
outstanding job for you.
Fuel Types: Choose either gas or charcoal/wood fred.
Sizes: There are two sizes, 36 and 60.

Methods of Cooking Barbecue
Before you can choose the perfect barbecue cooker, you need to understand the
diference between smoking low and slow (authentic southern-style que) and grilling.
You also need to know which meats and cuts to grill and which ones to do low and slow.
There are three popular methods of cooking barbecue:
1. Grilling
2. Low and Slow Smoking
3. Cold Smoking

The 4 Types of Meadow Creek Cookers Methods of Cooking Barbecue
Grilling
When we talk about grilling, we are talking about cooking over direct heat. Most grill
foods are fully cooked within about 520 minutes. Grills are commonly fred with either
gas or charcoal/wood.
Whether you cook with gas or charcoal, on some grills you can use wood or wood chips to
create a thin blue smoke, and even close the lid on the grill for a few minutes while youre
grilling to let the smoke penetrate your meat for a delicious smoke favor.
Here are some foods we recommend grilling:
Hot dogs
Burgers
Steaks
Chicken parts, such as
thighs and leg quarters
Skinless, boneless chicken
breasts
Sliced veggies, such as
potatoes and squash
Brats
Pork chops
Party wings
Grilling Challenges:
A common challenge in grilling is not drying out the meat. Especially, if you try to grill
chicken or veggies on a park grill or the average grill with the meat over and close to the
fre, it will be very hard to cook the food without drying it out.
Another challenge with grills is that they need to endure a lot of heat and many cheap
grills dont hold up very well to lots of use. Rust hurts a cheap grill more than a heavy duty
grill because the metal is usually thinner and rusts through quicker. Thats why we like
heavy-duty, USA-made stuf.

Chicken Cookers: A Meadow Creek Chicken Cooker with fipping grates is an outstanding
grill for cooking chicken (such as in perfect chicken every time).
Plus on the BBQ42 and BBQ26S, you can quickly raise the charcoal pan to convert it into a
grill for all grill foods that need to be closer to the fre, such as burgers and steaks. Or you
can add an optional griddle for frying eggs, pancakes, bacon, burgers, fries, and frog legs!
These chicken cookers are extremely versatile. The smaller units are a lot of fun to have on
the back porch and the trailer units cook for crowds like you wouldnt believe.

If you want to raise the fre close to the grate on the trailer model chicken cookers, youll
have to ask for the optional pan brackets and fat grates. Its the perfect solution if you
need to sometimes cook chicken halves and sometimes grill steaks over a very hot fre, for
example.
Remember, I mentioned its hard to cook chicken on a lot of regular grills without drying it
out? The secret with a Meadow Creek Chicken Cooker is that it has enough space between
the fre and the food, and youll fnd its easy to grill perfect chicken the frst time you try it.

Customer Testimonial:
Marlin,
I just wanted to let you know that the BBQ42 that I purchased from you this past Friday is
awesome!
The frst time I used it was the very next day, cooking chicken wings at Pops on The River
and they turned out great. It helped make our vending debut in Chattanooga a big
success. Within minutes of the wings placed on the cooker and the smell working its way
through the crowd, I booked an event in September and a private party in 2 weeks!
I was able to cook 75-80 lbs of wings per hour with ease and without getting Carpel
Tunnel in my wrist from turning each wing. The consistency with each batch was seamless
and they were cooked to perfection.
Today I grilled some burgers on the unit and was truly surprised with how juicy they came
out. I will be in touch with you soon about the griddle option for this unit to explore how
versatile it is. Again, thank you and I will send some photos of my BBQ42 in action at our
next event.

Grills: Our regular grills are rugged and made
to last for years. These are for straight grilling,
available in either gas or charcoal. So if all you
want to do is lots of meats like burgers, steaks,
and skinless chicken breasts, one of these
would really crank it.
You can choose between two diferent sizes
and gas versus charcoal. You can add lids if you
prefer.

Pig Roasters: The pig roasters are extremely versatile. You can add a grill pan to any of
the pig roasters to turn it into a big charcoal grill. Weve used a PR60T to cook hundreds of
burgers and hotdogs and it worked very well.

The tank smokers have at least two sliding cooking grates. You can remove the bottom
grate and slide in an optional grill pan for cooking grill foods with direct heat (photo

So if you want to smoke in style and convert it to a grill occasionally, one of these would
be a great choice for you.29B29B

Methods of Cooking Barbecue
Low and Slow Smoking
According to many people (including me), low and slow is barbecue at its bestauthentic
southern-style que. This kind of cooking requires indirect heat. Depending on the cut you
are cooking, it can take 46 hours or even 14+ hours to fnish your meat low and slow.
To smoke low and slow, you maintain a temperature around 225-250 degrees F in the
smoker until the meat is cooked. You can use charcoal and/or wood. Some smokers are
fred with gas or electric and they have a wood chip tray to get some smoke rolling.
You can cook low and slow with a variety of diferent types of cookers, including these:
Ofset smokers: These cookers have a cooking chamber with a frebox on the side.
The heat travels from the frebox into the cooking area.
Upright smokers: Everything is stacked with the fre in the bottom, grates above
the fre, and the vent in the top.
Regular grills: Build the fre on the end opposite the exhaust vent and put the
meat on the other side.

17
Methods of Cooking Barbecue Methods of Cooking Barbecue Methods of Cooking Barbecue
Heres a list of common low and slow meats:
Pork ribs
Beef brisket
Pork butts
Whole chickens and turkeys
Chicken breasts with skin
Pork bacon
Big cuts of beef or pork
Done right, low and slow barbecue is tender, juicy, and has an outrageous favor. We are
talking about something that is impossible to explain on paper!
Low and Slow Challenges:
A major challenge in low and slow is maintaining consistent temperature in your cooker
not only consistent from one hour to the next, but also fairly consistent from one end of the
smoker to the other. It helps a lot to have a quality smoker that is built to cook low and slow.
Plus a lot of smokers from the big box stores are made from thin metal that will rust
through a lot faster than a heavy duty one like a Meadow Creek, thats made to pass on to
your grandchildren. (Think investment, not disposable.)

Low and Slow Solutions
Ofset Smokers. Meadow Creeks ofset smokers do an excellent job of holding temperature
for long cooks. I have heard some people need to constantly tend their smokers or their
meat burns up. I guess I just cant
relate because Im used to cooking
on Meadow Creek smokers.
Especially the tank smokers, such
as the TS250, are great for holding
consistent temps for a long time. Its
kinda like you hop on the tug boat
and glide downstream. It will take
quite a current to move it of track.
Of course, the temperature will rise
some when you fll up with charcoal and if you let it run out of fuel, the temp will drop. But
then it will stabilize again and keep on rolling (or gliding down the river).

Customer Testimonial:
Marlin,
I received the trailer and have been working very hard to get everything up and running
for my BBQ business, Im really impressed with the quality of this equipment, and so is
everyone else who stops to look at it too. This past weekend I fred it up and cooked 4
pork butts, 8 racks of st. Lewis style ribs, and a case of whole chicken legs. They turned out
the best Ive ever made, no exaggeration!!! These cookers make a seasoned professional
out of an amateur. This was well worth the wait.
Thanks again,

Methods of Cooking Barbecue Methods of Cooking Barbecue
Pig Roasters. Meadow Creeks charcoal pig roasters are great for cooking low and slow. The
big advantage in a pig roaster is that you can cook a whole pig on it, plus use it for smoking
about any kind of meat you would smoke in an ofset smoker. A gas pig roaster with an
optional chip tray works too, but wont produce the favor that charcoal and wood will.
We consider an ofset smoker to be a more
elite choice for smoking low and slow, but if
you want to cook whole hogs and dont want
more than one cooker, this is an absolutely
great choice. It will crank out favor and
perfection consistently for crowds, mostly like
the ofset smokers. The only thing to keep in
mind is that a pig roaster has fre beneath the
grate/drip pan, so theres more direct heat
than in the smokers. For example, in the case of pork ribs, it is easier to mess up perfect ribs
in a PR because of how little meat is on the bone.

Last week I took our Meadow Creek cooker (PR72G) on its maiden voyage. I cooked a
230# hog for our Restaurant Managers Cookout and it was absolutely superb both
the result and the cooker.
I cant say enough about the cooker, which performed admirably. It is an exceptional
piece of equipment one that we will use again, soon and often. Its quality and
dependability throughout!
Many thanks.

Dear Lavern,
I just wanted to send you some pictures from a couple of the Pigroasts & Chicken
BBQs weve been having at our restaurant. As Ive told you, I own two restaurants and
have been in this business for over 25 years. Having PIG ROASTS is probably the most
popular thing weve done and the Meadow Creek Pig Roaster is an incredible piece of
equipment. We were very surprised to see the quality of the product, as well as how
easy it is to operate. Our customers love being part of the process and seeing the Pig
(and other items) cooking. The smell alone drives people crazy. I just wanted to say thank
you for your help and for providing me
with such a quality piece of equipment. It
has made us more proftable and more
unique.

Cold Smoking
Cold smoked cheese is simply delicious. Cold smoking does not need heat, but simply a
steady supply of smoke for favor.
You can control the favor and intensity of
the smoke favor with the following:
Type of wood
Length of time in smoke
Density (thickness) of the smoke
A common challenge in cold smoking is to
keep the smoking chamber from getting too
hot when you build a fre to create smoke.
Cold Smoking Solutions
You can certainly cold smoke cheese in Meadow Creeks ofset smokers, but you should
wait until the cooler part of the year. You will need to keep the smoker under 90 degrees
F or the cheese may melt. Either build a small frebox to constrain your fre or use a smoke
generator of some sort. Meadow Creeks smokers are a great solution if you do a lot of
meat, but occasionally want to smoke cheese with the same equipment.

The Perfect Size Cooker The Perfect Size Cooker
Okay, so far, weve covered the four types of Meadow Creek cookers and how they help
you cook the common methods of barbecue. Weve also learned how to choose the
perfect size for the amount you want to cook.
By now, you should have a good idea of what you need, but perhaps you still have some
unanswered questions. Hang in there. We still have a lot to cover.
Fuel Types: Gas or Charcoal?
This can be a controversial subject. Some people are sold on gas (propane) and others
would hardly cook with gas. Im going to share a few pros and cons and let you decide.
Advantages of Gas
Gas is quick. Turn it on and its on.
Gas takes less clean-up. There are no ashes to clean out.
Gas is easy to control and maintain. In a long burn, such as in the pig roaster, you
can basically set it and forget it until the pig is done.
Advantages of Charcoal
Charcoal is authentic barbecue. No explanations required.
Charcoal means favor. When you cook with charcoal and add a little wood, you
will end up with an amazing favor. Even without wood, a good quality hardwood
charcoal will make your burgers taste like they were, um, barbecued.
Charcoal is fun. It takes some fre management to cook with charcoal. Who doesnt
like to play with fre?
Gas Models
The Meadow Creek cookers with a G in the model name are gas models.
Pig roasters: PR42G, PR60G, PR60GT, PR72G, PR72GT. You can add a wood chip tray
to a gas pig roaster to give your meat some smoke favor. Otherwise, it will be a lot
like cooking meat in a regular oven.
Grills: BBQ36G and BBQ60G.

Trailer or Push-Around?
Our trailer models come permanently mounted onto a highway-ready trailer with road-
worthy tires, a lighting package, and a VIN number.
Our smaller units are made to push/pull around by hand.
The TS120P Smoker is similar to the TS120 Trailer Smoker, but its on casters for those that
simply need a patio model.
Of course, you can haul the smaller units on a trailer or the back of your truck if you strap
them down well. But if youre on the road a lot, you might want to invest in a trailer model
or a custom trailer with multiple cookers to suit your needs.

Making Sense of the Options
Meadow Creek ofers an impressive array of options (add-ons) for your cooker or trailer.
Im going to explain some of these options, so you can understand whether it makes
sense for you to invest in them.
Vinyl Cover. Our covers are Amish-made in
Lancaster County out of tough vinyl material.
If you will be storing it outside or even in a
covered area, a vinyl cover will help to keep it
clean and dry. Otherwise, it will rust sooner and
take more maintenance.
Griddle. Oh, boy. Now barbecue is seriously
an all-day option. Add a steel griddle to any
of the chicken cookers, grills, and charcoal
pig roasters, and youre ready to fry eggs,
pancakes, sausage, bacon, and hash browns.
Or have fun with burgers, fries, and anything
else you can imagine frying.
Chicken Cooker Options:
Flat Grate. Earlier we talked about raising the charcoal pan in a chicken cooker to
grill those meats that require more heat. The fat grate is made to use when the pan
is raised. It rests on the pit without fipping. When
you raise the pan, you can no longer fip the standard
sandwich grate. Plus these meats are usually too
thin to use with the fipping grates anyhow. On the
BBQ26S and BBQ42, you can get by without a fat
grate because you can hook the top part of the sandwich grate on the open lid,
but even then, the fat grate is a little handier and you can close the lid when youre
cooking to capture some smoke.

28
Making Sense of the Options Making Sense of the Options
Thermometer. You can add a thermometer to a chicken cooker lid to monitor the
temp in the grill. The only time this would be useful is when you have the lid closed.
Weve never needed one of these when cooking chicken, but I can see it might be
helpful if you really are determined to know the temp in the grill.
BBQ42 Options
Insulated. Insulation in the BBQ42 makes a
lot of sense if you can aford the up-front cost.
Insulation adds a sealed double wall to the
frebox. The lid wont be insulated.
o With insulation, you should be able to
cook three rounds of chicken with one
load of charcoal, instead of one round. This means serious charcoal savings if
you use it a lot.
o Plus your paint wont overheat and peel of, so it will take less repainting
and maintenance. I dont want to make it sound like the paint job on these
is junk. They use high heat paint from Sherwin-Williams, but you have to
realize these pits endure a lot of heat.
Charcoal Pullout. The pullout is a drawer in the bottom of the pit. You can pull it
out to add more charcoal or clean out the ashes. If youll be grilling all day long, this
option would be very useful, but normally, it works just as good with a standard
charcoal pan insert. You can add charcoal between batches and lift the pan out the
top to remove the ashes.
BBQ26S Options
Hitch-N-Grill Bracket. A cool little
gadget for mounting the grill to the
hitch of your truck or SUV. If doesnt
work well in a van loaded for a one-week vacation, or any vehicle with a low hitch.

Trailers Only
Slideout Grates. To load/unload the
grates, you would normally need a
person to lift the grate on each side and
walk it to the end of the trailer. You cant
do this if youre trailer has a roof on it.
The slideout grates option puts the grate
on a track that slides over the side of the
trailer. It was invented so you could remove the grates from one side.
Additional Pits. Pretty simple. Need more cooking space? We can add as many pits
to your trailer as you want.
Lids. Without lids, it takes a lot of fipping if youre fre
gets frisky. The lids really help control your fre and make
it less stressful to grill perfect chicken. Also a great option
if you are required to cook meat covered. The lids option
includes a double partition between the pits to make
room for the lids. We can make them removable. (Sorry,
the double wall partition is missing in the picture at right.)

Charcoal Pullout. The pullout is one of our
most popular options. Its a drawer in the
bottom of the roaster that slides out of the end.
Its great for adding more charcoal without
opening the roaster. Plus it helps protect the
bottom of your pig roaster from excessive heat.
Not available on gas models.
Charcoal Pan Insert. If you dont go for the pullout, consider the insert. To access
the pan, you will need to remove the cooking grate and the drip pan.
o This pan sits in the bottom of the roaster and holds the ashes. When youre
done cooking, simply lift it out the top.
o It also adds another layer of steel under your fre, increasing the life of your
pig roaster.
o The charcoal pan for gas models straddles the burner and converts it to a
charcoal model.

Stainless Steel Shelves. This
upgrade gives you solid stainless
steel covers (above) instead of
the expanded metal work shelves
on both sides of the smoker.
These shelves eliminate any food
drippings down into hard to reach
areas and make clean-up easier.
Insulated Firebox. A great investment if you can handle the initial cost. If youll be
using your smoker a lot, you can pay of the insulation in a short time by charcoal
savings alone.
o The amount of charcoal you save can vary, of course, but normally it will take
4050% less charcoal. This means less fre maintenance, with reflls spaced
up to 5 hours instead of 23 hours.
o You will have a little more consistent temp and it will be easier to cook year-
round in a cold climate.
o Even though Meadow Creek uses high-heat paint, the paint has a hard time
holding up where the heat is intense. With an insulated frebox, the frebox
paint will not peel of from the heat because the outside will not get as hot.
You will have a lot less maintenance to do.

Slideout Basket. This steel basket slides
in a track. It makes loading the frebox
easier and holds the coals away from the
frebox walls, which helps extend the life
of your frebox and the paint outside the

Warming Box With 3 Shelves. This
applies only to the TS60 and TS120P. This
adds the box above the frebox that comes standard on the other TS smokers, such
as the TS120.
Extra Shelves in Warming Box. The warming box comes with three stainless steel
racks. You can add more for more surface space.
Live Smoke in Warmer. The warming box and frebox are separated with a solid
piece of metal. Live smoke puts an adjustable vent from the frebox to the warming
box and a stack on top of the box, so you can cook meat with smoke in the
warming box. Without it, you can cook beans and keep your meat warm.
Extra Grate in Smoker. Add a third grate in the cooking chamber. Would be great
for cooking thin stuf like ribs. Take it out if you need more height.

7 Marks of a Smokin' Hot Smoker
Its really important to compare apples to apples and not apples to lemons. Here is some
stuf that can make a big diference in how long your smoker holds up and how fun and
easy it is to use.
Here are seven marks of a smoking hot smoker that will give you many years of
dependable service and keep a smile on your face (and the socks of your feet).
Stainless Steel Grates
Meadow Creek uses strictly food grade
stainless steel for their food grates. This
adds to the cost of your equipment
initially, but then you can rest assured that
the investment will pay of in the long run.
Stainless steel grates do not rust, so they
make clean-up easier and eliminate any
contamination from rusty grates. Regular steel grates will likely be rusty before you cook
on them once. You can clean these grates with a pressure washer or oven cleaner, and get
them perfectly clean for the next run without worrying about rust.
Double-Tiered Racks
Meadow Creeks tank smokers have at least two removable sliding grates. Some even slide
out on either side for easier access. In a large smoker, thats really nice compared to just
setting the top grate on top of the bottom one.
Door Latches
How many times have you seen smokers arriving at
competitions and barbecue events with bungee straps
on the doors? Meadow Creek uses positive lock latches
that close the doors tightly and keep them closed.

Warming Box
Meadow Creeks smoker trailers come standard
with a warming box. These are really handy
to keep your chicken warm while you fnish

it to a live smoke chamber for more space to

Removable Ash Pan
Meadow Creeks smokers have a
removable ash pan (drawer), which makes
it easy to remove the ashes during or after
your cook. There is a vent on each side of
the frebox below the fre grate. Your fre
will burn more efciently when the ashes
in the frebox can fall down through a
grate into an ash pan and the air can draft
up from beneath the fre grate.
Trailer License
Meadow Creek is a licensed trailer manufacturer, but not all BBQ trailer makers are. Your
Meadow Creek trailer will come with a certifcate of origin and VIN number, which makes
it easy to register. And you can rest assured its road-safe with a professional design, road-
worthy wheels, and lights.

Meadow Creek ofers quite a few options
such as insulated frebox, stainless steel

8 Diferences Between the SQ36 and the TS60 Smokers
If youre looking at our backyard smokers, maybe youve noticed the TS60 Smoker and the
SQ36 Smoker and wondered why the TS60 is about twice as expensive as the SQ36. Here
are the reasons. They are both great smokers, but they are diferent.
1. The TS60 smoker has a heavier smoke chamber than the SQ36 smoker. The TS60
smoke chamber is 3/16" thick and the SQ36 uses 13 gauge (3/32" thick) metal.
2. The TS60 smoker uses
reverse fow draft to
ensure that the heat
and smoke are evenly
distributed throughout
the smoking chamber.
Before entering the
smoking chamber, the
smoke and heat travel
through a channel below
the smoking chamber to
the far side of the tank.
Then the smoke reverses
its direction as it enters
the smoking chamber and
is pulled through the cooking area, and fnally, exits the smoke stack on the same
end as the frebox. The SQ36 has a distribution channel for the smoke in the bottom
and center of the smoking chamber, where the smoke goes from the frebox into
the smoke chamber and then out the stack on the end opposite the frebox.
3. The TS60 smoker has a built-in pan under the bottom grate for water smoking. The
pan can hold up to one gallon of liquid. You can use water or apple juice in this pan
to increase the moisture level in the smoke chamber. The SQ36 does not have this
pan so the drippings go to the bottom of the smoker.
4. The TS60 smoker is easier to clean up than the SQ36. The TS60's drip pan catches

the drippings and slants to the center
with a V groove running down the
center. This groove funnels liquid to
the drip stem at the one end. The drip
stem has a heavy duty valve on it,
conveniently located on the outside
of the smoker. The SQ36s smoking
chamber is not as easy to clean out
because it doesnt all funnel toward
the drain.
5. The grates slide out on the TS60. The
2nd Tier Grate adds more cooking
space to the SQ36, but the 2nd Tier
Grate sets on top of the bottom grate,
making it a little more inconvenient
for fipping your meat.
6. The TS60 comes standard with a work
shelf along the front side. The SQ36
doesn't have a shelf.
7. A standard TS60 smoker with two grates has 756 square inches of cooking area. The
SQ36 with the optional 2nd Tier Grate has 935 square inches of cooking area.
8. The TS60 weighs 425 pounds. The SQ36 weighs 300 pounds. The TS60 is a little top
heavy for moving on uneven surfaces; the SQ36 is easier to move.
I hope thats not confusing for you. Like I said earlier, both of these are fne smokers and
ready to give you outstanding results for years to come.

Caterers Delight Trailers Bonus: Meadow Creek Versus Lang
Bonus: Meadow Creek Versus Lang
First of all, my goal is not to disrespect any brand out there, but to help you choose the
smoker thats right for you.
Some people see the similarities between a Meadow Creek and a Lang and have a hard
time making up their mind. I am happy to share our perspective on the diferences
between Meadow Creek and Lang smokers.
There is a segment in the market that will go for a Lang and not a Meadow Creek because
of price. That is fne. We believe Meadow Creek is priced fairly, but it is a superior product,
and therefore, a higher priced rig.
Here are some of the diferences between a Meadow Creek tank smoker and a Lang:
Ash Pan: Meadow Creek Ofset Smokers have a
sliding ash pan in the frebox. The pan makes it easy
to remove the ashes while you are cooking or after
the burn. Lang doesnt use an ash pan.
Rounded Ends: A Lang smoker has fat ends on the
cooking chamber. We believe reverse fow draft isnt
made for fat ends. A Meadow Creek tank smoker is
made from a tank with rounded ends for better air circulation.
Latches: Meadow Creek smokers have adjustable, positive-lock latches on all the doors.
Your doors will never pop open while bouncing down the road (and thats without using a
bungee strap ;-). Lang uses a homemade lever-type latch on their smoker doors.
Questions? Call us: 877-248-7753. Email: sales@smokymtbarbecue.com. Website: SeriousBBQs.com.
43
Caterers Delight Trailers Bonus: Meadow Creek Versus Lang
Grates: All Meadow Creek
cooking grates are food-
grade stainless steel and have
a 25-year warranty against
rusting. Langs grates are
regular steel that will likely be
a little rusty the frst time you
open the door. Grates that
dont rust make clean-up a lot
easier and eliminate all rust
contamination on your food.
Whats really cool is when you can thoroughly clean the cooking grates with oven cleaner
or a pressure washer, ready for the next cook, and they will not rust.
Also, on a Meadow Creek tank smoker, the cooking grates slide out. The Lang grates do
not slide out. Sure is a nice thing when you need to pull it out for loading or working with
the meat.
VIN Number: If you buy a Meadow Creek trailer from us, we can give you the VIN number
for you to register it. If you want to register a Lang, you have to register it as a homemade
trailer, which is more of a hassle.
Options: Its fuzzy to me exactly what options Lang ofers. But with a Meadow Creek
smoker, you can add insulation to the frebox, stainless steel work shelves, and a bunch of
other stuf.
Warming Box: Meadow Creeks smoker trailer models come with a warming box that you
can use to cook beans and keep meat warm or upgrade with live smoke for more smoking
room. Lang also has warming boxes on some of their models.
Quality: One big deal for us is the major diference in quality. I have seen a brand new
Lang with a crooked cut in plain sight and rusting grates. You can tell Meadow Creek
gives a lot of attention to detail when it comes to cuts and welds. The folks at Meadow
Creek grind sharp corners and welds smooth and go the extra mile to achieve top-notch
quality.
Questions? Call us: 877-248-7753. Email: sales@smokymtbarbecue.com. Website: SeriousBBQs.com.
44
Bonus: Meadow Creek Versus Lang Bonus: Meadow Creek Versus Lang
Now, let me clarify here. Its very possible that Lang would give you sliding stainless steel
grates and some of the other stuf I mentioned for additional cost; but, I am just trying to
give you my honest comparison.
It really comes down to what is important to
you and what you can aford.
Do you want a smoker with grates that
get rusty when you clean them?
Do you want a lower quality smoker?
Do you want to spend less even though
some of the angles might be a little
crooked and some of the welds a little
crude?
If you dont mind that, then by all means go for a Lang.
Did you hear me say thatGo buy a Lang? And I assure you, I will probably lose some
money by saying that. But hey, I just dont see any point in you calling us on the phone
when Meadow Creek isnt even a good ft for you.
Or...
Do you want the Cadillac in the smoker industry?
Do you want grates that wont rust?
Do you want an elite cooking experience, attention to detail, and knock-your-
socks-of craftsmanship?
If that is you, then by all means, go for a Meadow Creek smoker.
The choice is yours.
It may be debatable whether the round ends in the smoking chamber make a diference,
but Melvin from Meadow Creek told me the story of a couple guys that were cooking side
by side. One had a Meadow Creek TS60 Smoker and the other had a Lang. The guy with
the Lang was getting annoyed because he needed to keep adjusting the cooker while the
TS60 was a breeze to maintain.

45
Bonus: Meadow Creek Versus Lang Bonus: Meadow Creek Versus Lang
I dont know if we can base anything on a single story. We have never cooked with a Lang.
But we have cooked with Meadow Creek smokers and can say they are a breeze to use. Of
course, the reverse fow rigs still take some occasional adjustments, but they are like tug
boats gliding down the river. I can say that from personal experience and observation.
Besides they are handsome and the welds are amazing.
Also, when you are checking out prices, make sure you compare apples to apples.
Stainless steel grates, warming boxes, and awesome craftsmanship do afect the price.
When it comes to Lang, I have read good testimonials and people love their Langs. I am
sure they do a good job of cooking. But when I see the quality of their cuts and welds
and look at the features lists, it makes me think that Meadow Creek could deserve more
recognition for introducing such an amazing revolution to the BBQ industry.
Bonus: Cooking for Crowds
Maybe youre wondering...
How much should I cook per person?
What should I charge per plate?
What size smoker or grill will cook for x people at one shot?
Which pit will make this whole project fun and easy?
These are important questions to think about. I really doubt you are looking for more
stress in your life, so your best option is to get your ducks (and pigs) all lined up before the
time comes, so you can proceed with confdence.
Imagine knowing up front...
I am cooking the right amount of food, just a little extra to be safe.
I know how much this event will cost me.
The equipment I am using can easily handle all this food and its going to be a
breeze.

Through the years, weve learned how to avoid some of the damage. If something does
happen, Melvin from Meadow Creek and Marlin are standing by to make it right.
You are welcome to arrange your own freight, but you will be on your own when it comes
to damages. If you or your carrier are not used to shipping this type of cargo, you run a
much higher risk of damage in transit and unexpected costs. When you ship with us, you
are covered.
