Without it we are doomed; with it, clarity and the restoration of human and ecological health can blossom forth, creating a world wherein future generations can thrive. In his book, How to Practice The Way to a Meaningful Life, the Dalai Lama wrote: Spend more on health and education for poor people. This is not forced socialism but voluntary compassion. Id like to extend that sublime thought, bringing materially welloff people into the health education fold, for everything depends on a wise, healthy and unified humanity. If we unite we can cocreate a renaissance of ecological harmony. As I write these words, I am surely not alone in seriously wondering what 2009 will bring. The immediate future hasnt seemed so uncertain and scary since I was a child and the United States was facing a Russian nuclear missile threat. The scenario looming ahead may not be so potentially cataclysmic, but the big picture is nonetheless hugely troubling. One thing is certain: if we prepare to live more simply and naturally, well be in a good position to cope well with whatever lies ahead. Are you hopeful that humanity will correct its misguided ways? I am. Hopeful intention may be the right fuel for global transformation. President-elect Barack Obama no doubt had his finger on the pulse of our times when he wrote his book The Audacity of Hope and ran his campaign on that theme. We know that our thoughts shape our reality. I hope and pray that Barack Obama does deliver on his audaciously sensible promises and lead the world toward harmony, equality, prosperity, health and sustainability. Yes, it seems incredibly daunting, but, coming back to the power of our minds, lets do the best we can to actualize the changes we want to see in the world via visualization and intention. Its possible and its imperative, so lets set our minds to it and take action! Surely, big challenges lie ahead of us and many will likely meet with turmoil and hardship, compelling us to try to find meaning and make sense of our lives. Maintaining a hopeful, positive frame of mind can and will help us cope, but to create lives that make sense and support health we must turn to Nature. We cannot find real meaning in any of the unnatural sociological systems of modern humanitythe struggle to create a healthful and harmonious lifestyle within them only wears us down, leading to unhappiness and disease. Only by honoring our senses and aligning with Nature will we be able to move forward and thrive in the midst of chaos. Lets keep healthy, mentally, physically and spiritually, with the help of the greatest teacher of all: Mother Nature. She will lead us toward sanity and eco-health restoration if we abide by her wisdom. If you are seeking inspiration for shifting to a more natural lifestyle, as I suggested in my previous Thoughts From The Orchard essay, spend as much time as possible in Naturego for walks, take time to relax in natural settings, reflect on how you can claim your place in the natural world, and follow the inspirations leading you to make changes in that direction. Nature has an uncanny way of refreshing our common sense and leading us in a healthful direction. I have found that I make my best life decisions when immersed in reflective thought in a lush forest or under the sun on a quiet beach. As Henry David Thoreau journaled in December of 1856: We must go out and re-ally ourselves to Nature every day. We must take root, send out some little fibre at least, even every winter day. I am sensible that I am imbibing health when I open my mouth to the wind. Staying

in the house breeds a sort of insanity always. Every house is in this sense a hospital. Ill add that workplaces and cities are also in a sense hospitals, or graveyards. We do need to live closer to Nature, learn her lessons and disengage from the stressful trappings of modern living. The day is winding down in the back hills of Vista, California, about one hundred miles south of Los Angeles. In the gathering twilight, I survey the

silhouetted view from the hilltop home of Barry Koral, an entrepreneur who has created a spacious retreat on the site of his nearly two-acre subtropical orchard.
Soon, a flurry of guests arrive, and a party complete with reggae music unfolds in full swing. Later, all are treated to a sumptuous live raw food buffet. The fresh dishes are quite imaginative: organic garden salads galore and tasty dips, nicely complemented by exotic fruit entrees. Among the sumptuous offerings are white and chocolate sapotes, three varieties of cherimoyas, plus Mexican and Brazilian guavas, all recently gathered from Barrys orchard. Thai coconut milk and raw food desserts garnished with nasturtium flowers round out the repast. After dinner, in a corner wing of the building, the various guests introduce themselves to the group. Barry reads an assortment of his poetry, the talented artists in the group showcase portions of their work, and the event turns out to be a rousing success. I discover that there is a penchant for this sort of gathering within this loose-knit circle, with more similar events planned in the not-too-distant future. Here in California, live food lifestyles are very popular. There are so many choices of incredible organic foods, especially in this region, with the perfect climate for growing the most abundant variety of crops.

Barry is ecstatic at any hint of interest in natural living. Framed by his huge, broad-brimmed hat, beaming with enthusiasm, he confides: The vegan raw food lifestyle is a way of thinking; a credo for living and making a difference in ones health. From this, my attitude and philosophy about life evolved. The process has changed me tremendously. This is my passionate vision, the journey of a lifetime. There is a cutting edge movement for health consciousness here, and this has been very important for optimizing my own health. By solely eating live food, I have elevated my well-being, vitality and productivity. Also, I have eliminated a lot of the symptoms associated with aging, allowing me to evolve more gracefully. When you elevate your health, you gain greater clarity and purity in the expressions of your being.

The vegan raw food lifestyle is a way of thinking; a credo for living and making a difference in ones health... By solely eating live food, I have elevated my well-being, vitality and productivity. Barry likes to express himself through drawing and poetry. I mention to him that Im fond of his musings and wish to include some samples on my community service website, www. sacredimagery.com. He happily responds by saying, You rock my world. Its a nice compliment, and it sets me wondering about his way of moving through his world. Barry has a wealth of timely information to share about life, especially concerning his passion for what he terms the art of living. In a few days Im invited back, in the company of a close woman friend. This interview is the result. Making Waves for Gender Equality in Womens Paddle Sports & Spreading the Raw Health Message With Grace

Pam Boteler is a top-ranked, world-class athlete, activist and raw vegan who has been making
waves in her sport, Sprint Canoe, for the last eight years. Pam made USA Canoe/Kayak history at the 2000 National Championships when she became the first woman to compete in sprint canoe against men. Not only did she compete, she won the gold medal! Up until the year 2000, women were prohibited from racing canoes at the US Nationals (and in almost every other country around the world). She competed again against the men in 2001, and again won gold medals. Heavily influenced by Pams success and lobbying, in 2002 the national governing body, USA Canoe/Kayak, changed its bylaws to allow women to compete in the National Championships in events of their choosing, and in all categories. For the last eight years, Pam has been undefeated in the U.S in singles competition (C1), until this past August when she finished second for the first time ever in the 500m and 200m events. She lost the C1 500m by a mere 0.2 seconds to a woman 20 years her junior. Pam remains undefeated in the 1000m event in the U.S., and continues to hold the American records, both in all three singles distances and as part of two team boats: the 4-person C4 1000 and 500m events. Her performances at the 2008 Nationals (2 gold and 4 silver, and 6 Golds at the Masters Nationals, including two races against the men) were all the more remarkable considering that she had dislocated her shoulder a few months prior to the event. Pam competes in what has long been considered a mans canoe, which is so designated because of the long-held belief that the kneeling position and one-sided stroke mechanics required for this sport are injurious to womens internal organs. However, Pam and other women have proven this to be unfounded, and women are gaining greater acceptance in

Olympic and non-Olympic paddling sports. Still, there is much progress to be made toward full equality in opportunities, resources and competitions. Pam works tirelessly with women and men from around the world to correct the continued injustice of gender discrimination. She is paving the way for women of all ages to follow and pursue their dream of training and competing in local clubs, national teams and, ultimately, the Olympic Games. Pam is Executive Director of USA WomenCan, which is dedicated to creating racing and training opportunities for women in Olympic-style canoeing (both flatwater sprint and whitewater slalom). She also created www.JustCanoeIt.com both to shed light on inequities in Olympic-style canoeing and to promote paddle sports of all kinds for competition and as a way of life. Several years ago Pam began a vegetarian diet, then transsitioned in 2006 to veganism. Lately, with the guidance of renowned high-performance coach, rawfood sports nutritionist and Vibrance staff writer Dr. Douglas Graham, she has progressed onto Dr. Grahams 80/10/10 raw vegan diet plan. At age 40, Pam is competing against women half her age. As well, she still occasionally competes against men and is the winner at least half the time! Her enthusiasm and commitment to athletic excellence and gender equality for her beloved sport has impacted people in many spheres. mentioned last year that I was looking for a cover girl for the next magazine. Lets begin with what your life was like growing up. I guess you were the best in your class in sports. What kind of sports were you into and when did the paddle sports bug bite? PB: I think I came out of the womb as a tomboy! (Laughs.) I grew up in the Washington, DC area. I played basketball and soccer as a kid, then in high school and college I competed in cross-country, basketball and track. I didnt get into paddle sports until 1992. DK: Did you get interested after you saw people rowing in Chesapeake Bay? PB: I never took notice until 1992 when I was working at the Naval Hospital in Bethesda, Maryland. I was in great shape and heard about tryouts for the womens national dragon boating team aiming to compete in Thailand at the World Championships. The boats in Thailand are actually called swan boats, a slight variation on the dragon boats found in China. I had never heard of the sport before. As a religion/philosophy major in college, I was intrigued by Eastern culture, so I inquired about it. Like me, the coach was employed at the hospital, making our connection easy and successful.

weigh 2,000 pounds, seating 10 right-side paddlers, 10 left-side paddlers, a drummer (or whistler) and a steersperson. Todays dragon boats are made of carbon fiber or fiberglass and weigh only about 600 pounds. Swanboats are still made of traditional teak. I was on the U.S. National team which won a silver medal at the Swanboat World Championships in Thailand in 1992. That was the Year of the Woman in Thailand and was the first year women were allowed to race in these boats. Thailand won the gold medal and the women on their team became national heroines. In 1994 I raced for the National Dragon boat team in Hong Kong at the World Dragon Boat Championships; we finished sixth. In 2001 I went to Thailand again for the World Swanboat Championships; we raced with the mixed-gender crew, and we won Gold. As a result of this, I was recruited to race in the mens boat as well with three other women and we won the Silver medal. Since then, despite the invitations to race at both of these World Championship events, I have focused on sprint canoe. Its an amazing sport! I would encourage anyone who wants to get into paddle sports to try it. There are a lot of corporate teams you can check out. Nonetheless, I am seriously considering an invitation to race with Team USA at the World Dragon Boat Championships in the Czech Republic next August. That

I ended up spending the next three years traveling to Thailand, Hong Kong, Singapore and Canada as part of the U.S. National team. It was through dragon boat competition that I was introduced to the Washington Canoe Club (www.washingtoncanoeclub.org), the Home of Olympic canoe and kayak champions. I quit dragon boat competition in 1995 and began sprint kayaking (which is sit-down/double-blade paddling) in 1996. In 2000, I took up the single blade/high-kneel canoe full-time. DK: Dragon boat racing conjures an interesting image! Please describe it. Why have I never heard of this? PB: Dragon boats originated in China and swanboats in Thailand. Both types are made of teak wood, are 45 feet long and

will be the week after the sprint canoe/kayak World Championships in Nova Scotia. I was also invited to help at a paddling camp in the Czech Republic the week after the Dragon Boat World competitions, so I have lots of opportunities coming up! DK: Dragon boat racing sounds really intriguing! After seeing your photos, readers are probably wondering how this young lady could really be 40 and racing against people, especially men, half her age. You look twentyish. Please tell us about your health habits and your journey into raw food eating. PB: Thank you! Im blushing. I see many women in the rawfood movement in their fifties, sixties and seventies who look amazing. My health transformation began only six years ago; prior

Our planetary soils have become severely eroded and thus demineralized over thousands of years. Plants require a continuous intake of minerals, just as we do; they need calcium to build structural support, iron to carry oxygen, zinc for reproductive health, etc. Plants growing on mineral-depleted soil do not get enough nourishment and, thus, are to some degree devitalized and more vulnerable to their insect, worm and fungi predators.
Remineralization encourages greatly increased growth of soil microorganisms and the assimilation of nutrients, leading to high quality, flavorful crops. It also counteracts acidity and erosion, increasing the storage capacity of the soil, contributing to the building of humus complexes and, when sprayed on plants, repels both fungi and insects. As well, plants and trees become highly resistant to frost, drought and all devitalizing influences. Adding rock dust to your compost pile also enhances composting benefits and is another excellent way to remineralize soils. Reviving Dying Forests There have been stunning results from the remineralization of forests suffering from acid rain, soil erosion and general disease. Here are some examples from the Research section at http://remineralize.org: A 1986 report on long-term experiments in central Europe by

the Bavarian Research and Experimental Institute of Forestry in Munich, Germany showed that in one forest, 24 years after pine seedlings were remineralized, the wood volume was four times higher than in the untreated area. The results of Dr. Robert Brucks experimental remineralization trials of a dying forest on Mt. Mitchell near Asheville, North Carolina showed that 12 weeks after the application of rock dust, the height of red spruce was increased by 27% over nontreated controls, and the height of Fraser fir was 19% greater than the untreated controls. The Men of Trees organization in Australia http://www. menofthetrees.com.au performed remineralization trials on many species of trees in Australia with phenomenal results. For example, compared to untreated controls, trees grown from eucalyptus seedlings in remineralized soil grew five times faster. The Sudden Oak Life organization website (http://www.suddenoaklife.org) displays photos of some of the thousands of fatally sick trees that have recovered through remineralization. Orthodox forestry still appears to be stuck on no cureuse chemicals in treating such disease. Enhancing Agriculture The best source of soil minerals is the fine powder of common crushed gravel (mixed rock). In 1976 John Hamaker (19141984) spread gravel crusher screenings on part of his ten-acre farm in Michigan in an area of sparse rainfalls and dry summers, with no irrigation. The following year, his corn produced 65 bushels per acre. In comparison, neighboring farms yielded less than 25 bushes of corn per acre. Moreover, independent analyses showed that Hamakers corn contained 28% more protein, 47% more calcium, 57% more phosphorus, 60% more magnesium and 90% more potassium than the same type of corn grown with chemical fertilizers nearby. Over thirty years ago, published studies by the USDA showed that the application of cement kiln dust (a less satisfactory source of minerals) also produced better crops, but the researchers did not follow up on this, as they could not ascertain

Fignatics Unite!
When I first set out to find the best fig varieties for Hawaiian growers, I had little idea of how far this would take me. I knew there were more types of figs than we currently had in Hawaii (Brown Turkey and White Kadota), but the varieties far exceed my expectations. A year and a-half into this projected threeyear exploration, Im still planting different types obtained from other fignatics around the world.

The term fignatic is appropriate for us fig addicts, although Im not sure of its origin.

It seems figs will take on different characteristics, and cuttings from the same tree will grow differently in different locations. I thought a fig I first tried in Davis called Rattlesnake Island had little flavor, but in Hawaii it was twice the size and twice as sweet. Conversely, figs like Black Maderia, Ischia Black and Santa Cruz Dark, which are fantastic in California, arent so great in Hawaii. To me, Hawaiian-grown Brown Turkey figs are far preferable to those grown in California. Of course, its a good idea to grow your own figs, even if it means growing them in pots. At the agriculture research center near Nagoya, Japan, they test trees growing in pots that are pruned in order to produce 120 figs each year. These trees are given to elderly care centers and the seniors look after them; they can eat the figs or even sell them back to the cooperative. By the way, Aichi Prefecture markets itself as Kingdom of Figs. Japans most popular fig, Masui Dolphin, which comprises 98% of its commercial production, came to that country in 1904 with Mr. Masui, whose family still runs the nursery.

Great resources for learning about the hundreds of fig types are Jon Verdicks site at http://figs4fun.com and his forum at http://www.websitetoolbox.com/mb/figs4funforum, which brings together fignatics from around the world. It was at the center of some 300 different fig trees that I first met Jon, along with Dr. Ed Stover, the former curator of the USDA fig collection near Davis, California. Along with fignatic Howard Garrison, the farm manager, we were there to work on various projects, but as our mouths were busy with the figs, communication was a challenge! Each one I ate seemed better than the last. Going from some that tasted like raspberry jam to others that were like pure honey, I was in fignatic heaven! We each had our favorites. I wished I could take them all to Hawaii so that I could live on figs darn near forever! In fact, I managed to get about 50 types growing in Hawaii; we are currently testing to ascertain which types do best at various elevations, and which types are chefs favorites. In testing the Brown Turkey fig, we found that fig growing is more profitable than most crops in Hawaii, including the famed Kona coffee. This helps to keep small family farms sustainable.

Creamy Curry Dressing 3/4 cup chopped Gala apple 2 TBSP tahini 1 TSP curry 1/2 TSP cumin 1/4 TSP coriander 1/4 cup red bell pepper 1/4 cup Napa cabbage 2 sun-dried tomatoes, rehydrated and chopped optional: 1 clove garlic optional: ginger Place all ingredients in a high powered blender. Blend until smooth, using a celery stick or tamper to keep mixture moving. Last, but not least, we feel and look younger! You can purchase pH paper online, at a pharmacy, or at a medical/dental supply store, to test your morning saliva and urine. Conformity vs.Truth
Ralph Waldo Emerson saw conformity as the worst of vices in his famous essay Self Reliance: Whoso would be a man, must be a nonconformist. Nothing is at last sacred but the integrity of your own mind. Humans have always faced tremendous pressure to be like everyone else and deny their individuality. We are often considered eccentric and odd if we have the courage to follow our inner wisdom, wherever it leads us. We are born connected to truth; it is our birthright. Watch children who are allowed to flourish as nature intends. They glow with a natural radiance and often astound us with their unearthly wisdom. Few parents or teachers honor the natural blossoming of a child. Most children are taught to fit in, obey rules and respect authority. They are rarely encouraged to develop naturally as unique human beings and live from inner guidance. Their innate curiosity and intuition are often discouraged; they are told how to think, what to believe and how to act. Conformity serves societypeople become like sheep, easier to control, following the herd. When one strays from the clan culture, punitive measures (being ignored, shamed, or punished by family, friends, boss or co-workers) are designed to bring the black sheep back to the flock, head bowed in remorse. Most people are cut off from their truth and live a life of conformity rather than as inner-directed spiritual beings. They dont question this way of life. Over time, physical or emotional symptoms surface which are alarm signals from a life out of whack. This feedback, initially a whisper and ultimately a sledgehammer, is intended to get us back on track. But instead of heeding these warnings, many people numb the wakeup calls from the body/mind with prescription medications, alcohol, cigarettes or drugs. They try to distract themselves through TV, the internet, overwork, food, shopping, talking on their cell phones constantly, and rushing around to and fro. Depression is a common result of not living personal truth. A recent study by the Centers for Disease Control and Prevention found that anti-depressant use in America has nearly tripled in the past decade. According to some estimates, 30 million Americans take anti-depressants. Depression is rarely seen by Lack of truth has consequences. Each time you dont act or speak truthfully, you are impeding the flow of energy within you. It is as if you are adding another stick to a dam in a river every time you withhold. Energetic blocks form in the body, eventually manifesting in physical or emotional dysfunction. Even if you eat 100% raw, organic food, exercise and sleep well, but live or work in a situation that is discordant with your higher truth and well being, your health suffers. As you shift to a life of greater personal integrity, the dam begins to fall away and vitality flows again. Lets explore the effects on your health when youre not living your truth. How do you feel when you lie to someone? Unless you are a sociopath, it is difficult to maintain eye contact, your heart beats faster, you feel anxious, you begin to sweat and your muscles tighten. You feel guilty afterwards and have the ongoing tension of having to keep your story straight to avoid being caught in the lie. A polygraph or lie detector test measures and records how physiological variables such as blood pressure, pulse, respiration, and perspiration change in comparison to normal levels while the subject is asked a series of questions. Fluctuations or spikes on the graph are seen as indicators of anxiety that accompany the telling of lies. If lying causes such measurable stress on the body, what is the long-term effect of not living your truth? You are in a constant state of mental conflict, with the organs of your body reacting with symptoms declaring something is wrong here! If you stay in a bad marriage or work at a job that you dislike for years, the chronic tension fatigues the body and depletes the immune system. Over time, the weakest link in your body or mind will show symptoms of deterioration or disease.

olitis and Crohns inflammatory bowel diseases (IBD) are debilitating afflictions which ruin the lives of millions of people worldwide. The medical consensus is that there is no cure for these conditions and, at best, they can only be managed via a lifetime of detrimental drugging. The majority of sufferers place themselves under medical care, only to be told that: diet is not a causative factor; no specific diet will result in lasting healing; lifelong drug therapy is the only sensible course to follow; and if, in chronic cases, this is unsuccessful, surgical removal of the colon is generally the prudent course to eliminate the symptoms and avoid impending cancer. None of these common medical assumptions are true and, tragically, millions of lives are wrecked year after year by this stance which is based upon ignorance of human physiology. While the attending gastroenterologist means well, he unfortunately does not know anything outside of the realm of drug and surgery treatment and possesses no knowledge of the cause and purpose of disease or of the conditions required by the body for healing. Few gastroenterologists are sanctioned to provide or even recommend non-pharmacological healing approaches to IBD. Medicine never results in health. Happily, when we care for ourselves properly, removing the causes of disease and supplying the requisites for good health, the body invariably works its wonders of healing, and is restored to good health. A close study of physiology in the context of health science, such as taught by Natural Hygiene educators, reveals this self-healing power. Under proper care, the body will heal inflammatory bowel diseases, even advanced cases, as I did 24 years ago after severe ulcerative colitis. Since 1993, more than 1,000 of my clients have experienced similar success. And, there are several thousand who can also vouch for this natural healing approach to IBD. In a nutshell, stress on four fronts: 1. lifestyle stress, the foremost factor of which is dietary: eating foods incompatible with our biology, causing toxicity and indigestion; 2. mental/emotional stress (which includes the impact of incorrect, disempowering beliefs about health and disease); 3. societal stress (such as working too-long hours); and 4. environmental stress (pollution). Genetics and germs do not cause IBD; rather, IBD is caused by lifestyle choices and lack of proper education about the factors which determine disease and health. In other words, we need to learn how to restore health by healthful living and eating. And we can! For almost 200 years, Natural Hygiene teachers have taught that unhealthful habits (which include ingesting and injecting poisons into the body) cause illness, and that the body is a self-healing organism which expresses distressing symptoms when its vital domain is threatened. In cases of IBD, the biggest culprit is acid-forming diets, including indigestible, cooked, fatty foodsprimarily animal meats, dairy products and fried oils. Cooked meat provides little if any usable protein or fiber and it putrefies in the gut. Meanwhile, cooked oils are carcinogenic, plain and simple. Both irritate and ravage the bowel, causing inflammation, diarrhea and other distressful symptoms. Irritants (toxic matter and gases) cause bowel inflammation when toxins have built up to a life-threatening level. The body does its best to expel the irritating substances, but in cases of IBD, it is overwhelmed by the magnitude of the task. Diarrhea and the inflammation response are self-purifying, self-healing actions intelligently enacted by the body for the restoration of health. Inflammation is the bodys protective immune systemour guardian angelhard at work, preserving its vital domain. Remove the causes of the disease response, get plenty of rest, allow the inflammation process to complete its job and the body will become purified, the inflammation will cease and health will be restored. Inflammation is not something to be suppressed under any condition. When we do, we suppress healing. Only the body can heal itself and it will under the proper conditions. In general, during the healing phase, for those whose diet was primarily cooked, its best to partake of a simple, low-residue, low-fat vegan diet of certain sweet fruits and lightly cooked vegetables, potatoes and squashes with fresh juices. This is to be followed by a post-healing diet with more fruits plus raw salads, lightly cooked plant foods and moderate amounts of fatty vegan protein foods such as raw avocados, nuts and seeds for health maintenance. DK: How do you recommend that people approach the dietary transition process? RG: For some people, discontinuing the consumption of all cooked foods is best achieved all at once. For others, gradual transitioning over several years serves them well, while many fall somewhere in between. It all depends upon each individual persons unique life experience and disposition. Regardless of how long it takes a person to make the transition, I strongly advise them first to obtain proper education and guidance. The vast majority of those who fail at this dietary change do so as a result of misinformation and/or a lack of understanding. It is essential to access proper education and support from someone who is authentically qualified on the subject of raw nutritional science. DK: Indeed, that is vital! How does one integrate the new eating habits into our modern lifestyle? RG: This is actually much easier than is generally assumed. A healthy raw vegan diet is not based on complicated recipes requiring lots of expensive equipment and hours of labor in the kitchen. A healthy diet requires no more than a chopping board and a sharp knife or two, although a blender and a simple food processor are valuable additions. Whole and simple are the two basic requisites for food shopping. A packed lunch, for example, could consist of a bag of ripe bananas or other fruit. With such a meal, there is virtually zero prep time, zero cleanup and digestion is so fast and simple. Most restaurants these days stock salad vegetables and some fresh fruit in the kitchen. If a dressing is required, simply bring your own and add it at the table. If they are approached in the appropriate way, friends and other private hosts will delight in the ease and simplicity of this diet, and theyll likely be inclined to accommodate your health needs. DK: If a person believes the process is very difficult, what do you say to him or her?

RG: I would ask two questions, in this order: 1. In what ways are your lifes needs so inadequately met that you believe you must cling to unhealthy foods for emotional comfort? 2. To what degree are you willing to sacrifice your well-being in order to obtain the approval of your friends, families and co-workers by eating to please them? DK: Please mention a few daily practices to help the process. RG: 1. Do not plan your diet for the rest of your life. Plan your diet only for this week. 2. Think and shop ahead. If the foods you intend to eat are not available in your kitchen or not ripe enough to eat, then you are likely to return to old familiar items. 3. Do not shop for food when hungry. 4. As you eat, focus your thoughts on all the benefits of making dietary change. 5. Ensure that each day you engage in pleasurable activities aside from eating. 6. Develop the habit of exercising before each meal. 7. Make sure you obtain sufficient sleep. If tired, you are likely to crave unhealthful, stimulating foods. 8. Every day, seek spiritual nourishment in whatever way that brings you greater inner peace. 9. Create and use daily affirmations to help you let go of needing others approval, and become self-approving. 10. Regularly practice letting go of needing others to behave as you would prefer. DK: Family dynamics are a challenge. How does one handle differences in diet preferences within a family household? RG: An effective approach for everyone is to acknowledge and accept each others dietary differences, and agree that no attempts will be made to criticize or coerce anyone to make a change. Each person can be invited to share his/her views on the subject with the rest of the familybut not at mealtime. At meals, it is best to focus on the joys of nourishing each other, togetherness and enriching conversation.

NATURE AND HER LAWS ARE THE DICTATOR! Nature strives for perfection, and requires your dedication to the pursuit of health perfection. Unless you meet your physical and mental needs, some part of yourself will suffer and Nature will alert you. Pain, both physical and mental, is Natures way of telling you something is wrong. Pain is both a warning and our benefactor. It is meant to jar us into thinking and questioning: Whats wrong?... Why is this happening?... Why cant I get well? When your doctor/teacher is well-versed in Natural Hygiene and advises you to do something or avoid doing something, it is because he or she has learned the Laws of Life, and knows what Nature is demanding. This doctor/teacher is telling you what Nature demands, not what he or she feels you should do; he or she is trying to help you understand and correct your errors so you get in harmony with the Natural Laws that govern your being. These may change as health is regained, and as called for, sometimes from day to day. Put yourself in the hands of Mother Nature and do as she dictates rather than follow the whims of your mind. Previous conditioning, erroneous teachings and ideas obstruct and prevent sick people from putting themselves on the true healing path. Their instincts have been subverted by wrong teachings. People often pursue such cures as diet, herbs, medications, supplements, adjustments, osteopathic manipulations, acupuncture and so forth. These approaches only obstruct the way to healing.

Seek the Laws of Life as taught by Drs. Sylvester Graham and Herbert M. Shelton. Study them well. Then and only then will you realize what is the right action to take in all circumstances. In following Mother Nature, you will be on the path to recovery. The most difficult part of getting well the natural way is discipline. Discipline is the foremost challenge on this natural healing path. Health seekers must employ discipline in their way of life. This takes passionate desire, determination to succeed, strength of will and patience. Nature is like the tortoise, slow but sure. So keep on making right choices in accordance with Natural Law and you will soon find yourself feeling incredibly well. I have finally experienced for myself the benefits of eating a plant-based vegan diet about 30 years after my husband recovered from epilepsy through this approach. In my transition to raw eating, I kept adding more live food, and sometimes stayed 100% raw for a whole day, a week, a month or more. I always loved raw plant-based vegan foods and enjoyed expanding into what to me was foreign food territory, such as avocados, broccoli or cauliflower, which I had never eaten growing up. However, missing the old unhealthful treats, I resorted to daily vegan ice cream bars, sometimes two or three daily. I also developed a love affair with whole grain breads. Both of these caused havoc in my body. At night while sleeping, I began experiencing sudden attacks of acid reflux that caused me to jump up out of bed. This was diagnosed by the chiropractor who tried some adjustments, without success. I had a burning feeling in my chest or my mouth. I had some early evening attacks as well, where I would suddenly have to run to the bathroom and heave violently nonstop for a minute. This was such a strain on my vocal cords that my voice became very hoarse for about 12 hours before it returned. I also experienced trouble breathing. I finally discovered the culprits: the ingredients in the vegan ice cream and the yeasted bread. I had to make a choice: continue the detrimental foods and get sicker, or toss those culprits out on my path to health. I have since given up those foods. I am back to my pure and simple lifestyle with plant-based, raw vegan foods. I am grateful to Dave Klein for being there with his wisdom and support on the www.livingnutrition.com forum, and for other online support. I am no longer fighting this thunder in the night experience or signs of acid reflux and can sleep peacefully once again. My current diet includes mostly raw foods: fresh fruits and veggies; little, if any, nuts; a little avocado; some oil for fresh salad and, occasionally, a homemade cooked veggie or soup. Goodbye to those dietary culprits that caused the acid reflux! I embrace this simple lifestyle; it takes very little time in the kitchen and there are no greasy pots and pans to scrub. A typical fresh salad could be spring greens, fresh tomatoes and cukes, with some fresh or dried herbs, garlic and olive oil on occasion. Im not one for fancy dressings, so plain and simple has always worked for me. I was out of control with the quantity of nuts I was eating, so I decided less is best. I seldom enjoy pats, as I find many are very high in fats. I do not miss them. If I eat a few, its easy to go off the deep end. Its easier to limit my buying power when shopping at the health food store where I can weigh out what I wish. Now I buy a few nuts as desired from the bulk bins and thats enough for me. My gym workouts are finally showing my desired results. I am regaining the slim body I once had and wearing mostly small-size clothes. At our last rawluck the other night, a friend of about seven years told me how great I look, and that I am looking younger. Being part of the AARP generation (over 50), Im running with those compliments! The mainstream thinking is that older people cant lose weight, but this is a myth and for many, probably just an excuse. How often are you exercising your body? Invest in great health and reap the rewards! In truth, I still feel like a teen or no older than 21. Ill continue making positive dietary as well as physical and emotional choices, embracing wellness until my last breath. My health choices are working for me. I am now in better control of those choices and embracing my freedom from both acid reflux attacks and disturbed sleep. For me, my health is wealth. Ultimately, I think a diet of 100% living foods is best, but I believe people should first find the plateau of their comfort zone before they climb higher. I hope this encourages others to embrace the simplicity of eating a plant-based vegan diet. I have experienced at first hand the benefits of this lifestyle: great health and pain-free living. Q: Why does drinking wheatgrass juice make me and many others gag and become disoriented or weak after drinking? Dr. Paul Fannys response: Wheatgrass juice evokes this response because it is concentrated and toxic. Here are several reasons why we Natural Hygienists do not recommend it: 1. It contains small amounts of toxic compounds known as alkaloids. 2. The unsprouted seeds grow toxic molds which can trigger allergic reactions. I personally experienced these poisonous reactions as headaches and loose stools minutes after drinking the juice. (Editors note: For me, the aroma and taste of wheatgrass juice cause a convulsive reaction. After forcing down my very first small sip of straight wheatgrass juice years after I began rawfood eating, I became weak and disoriented for one-half hour. I do tolerate it better mixed in orange juice, but choose to avoid it altogether; tasty salad greens are my preferred green foods. Some people do tolerate and claim they enjoy wheatgrass juice.) 3. It is a diuretic. (Source: Grant & Hackhs Chemical Dictionary, Fifth Edition.) 4. Its high simple sugar content overstimulates the body, giving it a burst of energy and, in some cases, unpleasant detoxification reactions. As such, we do not recommend it as a health restoration therapy. 5. Although some proponents tout wheatgrass juice for its alkalizing effect, if taken in excessive quantity its concentrated simple sugars can cause two major problems: 1. the rush of sugar into the bloodstream will greatly elevate insulin production, overworking the pancreas; and 2. the excess sugars metabolize to acid end-products, imparting acidity rather than alkalinity. Furthermore, claims of the beneficence of wheatgrass juices high chlorophyll content are misleading. Chlorophyll is highly unstable; after juicing, it breaks down after five minutes of exposure to oxygen, rendering it unavailable to the body. Even if the juice is drunk immediately after juicing, oxidation will occur in the alimentary canal. For further information, see http://www.cityfarmer.org/wheatgrass. html. Q: Are any of these foods edible in the raw state: chestnuts, plantains, eggplants, artichokes? Dr. David Kleins response: Raw chestnuts are edible and quite delicious. First, remove the outer shells with your fingernails or a knife. The nut meat is covered with an unpalatable, thin, light brown membrane which contains astringent tannins; it can be removed with a knife. This procedure is facilitated by first soaking the nuts in water. Removal of the membrane reveals the yellowish nut. If the nut is hard, soaking will have a softening action. Plantains are traditionally cooked in their unripened, hard, starchy state by natives of their tropical habitats. However, plantains will ripen and become sweet like bananas. The trick is to allow approximately two weeks for ripening. When the skin is black and the fruit is soft, it is edible. Eggplant flesh contains the toxic, bitter alkaloid chemical called solasonine. Because neither the ripening process nor soaking will remove the bitter chemical, we cannot say that raw eggplant has a place in a rawfood diet. Artichokes are edible in the raw state, but only after a fair amount of tedious yet rewarding preparation work. The outer leaves and thick skin covering the stems must be removed; a large serrated knife works best on the leaves. The remaining inner portion will have a T-shaped profile resembling a toadstool mushroom, topped with downy thistle. After scraping off the soft thistle you may laugh at how much work you exerted to extract so little food; however, you may find the nutty, mildly starchy, herbal flavor of your treat so delicious that after the last bite youll find yourself immediately hacking away at the next artichoke. Q: Is it a good idea to strain nut and seed milks? Dr. David Kleins response: Raw or live vegan milks can be especially nourishing for infants, children and those whose health condition calls for a boost from easily-digested fatty acids, amino acids and bonebuilding elements. The key is to prepare and ingest them in a manner which does not result in incomplete digestion. Provided that one is not ill with internal inflammation and is able to handle these fatty drinks, straining nut and seed milks is a good idea. The solid particles captured by straining would not digest completely or at all in most people (as explained below). Furthermore, in large quantities the solids can cause constipation and irritation as the grit scrapes along the colon wall. Our acidic stomach digestive juices can only act on (break down for digestion) the outer surface of hard nut and seed particles in the stomach. (Our stomachs are not grinding chambers.) If we drink several ounces of undiluted protein-rich nut milk, the watery mixture will likely be too diluted and will pass too quickly through the stomach for acid enzyme secretions to completely break down the particles. Consequently, the undigested proteins in the particles can putrefy as they pass through the bowel. The quantity of nut or seed milks we can digest completely depends upon several factors: the dilution factor; proper food sequencing (drink them only on an empty stomach and not within several hours of eating foods that combine poorly with them); and our digestive health condition. In general, depending on the concentration, two to four ounces of these milks is the digestive limit for most. Here are general guidelines for making one serving of milk: 1. Soak 1 to 2 ounces of non-rancid, unheated, raw, organic nuts or seeds for 2 to 12 hours in water, rinse, blend with water at high speed and strain, pouring more water over the nut blend as needed to release more milk. (Soaking can be considered optional, except for almonds and pecans, the skins of which contain toxic yet leachable alkaloids.) Sip the milk slowly, mixing it with your salivary juices.
