Sea Salt Edamame

Bring a pot of lightly salted water to a boil, add edamame and cook for 4-6 minutes to heat the beans through. Drain pods and put in a serving bowl, sprinkle with sea salt and snack!

Asian Inspired Soba Noodle Salad*

Bring a pot of salted water to a boil. Add the soba noodles and cook unAl al dente (about 6 minutes). Drain, rinse and set aside. Prep the veggies by rinsing two handfuls of spinach, slicing the white and light green parts scallion, slicing thin strips of bell pepper, roughly chopping the herbs and serrano pepper (if using).

Ginger Sesame Dressing

In a small bowl combine the juice of half a lime, soy sauce, brown sugar, one clove of garlic (grated or minced), approximately one tbsp (minced or grated) fresh, peeled ginger, and a small pinch of salt. SAr unAl sugar dissolves then begin to slowly whisk in 4 tbsp of olive oil, and 1 tbsp sesame oil unAl completely incorporated. In a large bowl combine vegetables, basil, mint and cilantro and toss with dressing. Coat a porAon of the soba noodles with the dressing for each plate and top with salad mixture and chicken.
