Collagen Casing

FIBRAN NF is the ideal casing for cooked sausages or those subject to prolonged cooking processes.

NF

Characteristics: thicker and tougher than the S1 quality, with a slightly lower elasticity and porosity. Applications: cooked products of all kinds such as fleischwurst, falukorv, sucuk, lenkkimakkara... It may also be used for cured sausages such as salami, cured Iberian loin, fuet and others.

INSTRUCTIONS AND RECOMMENDATIONS FOR USE Casing pre-treatment To obtain the optimum performance from the Fibran casing for your sausage filling, pre-treat in brine prior to use. Preparation of the brine: mix water at 20-25 C with fine salt at a concentration of 12.5 to 17.5% (w/w). Shake the mixture well until the salt has dissolved completely. The use of some type of stirring system to accelerate the process is recommendable. If the use of an antifungal agent is required to prevent the growth of yeast on the sausage, a second bath is recommended, after sausage filling, with Pimaricin-type antibiotics (the use of potassium sorbate weakens the collagens physical properties). To maintain Pimaricin operating, the bath must be buffered with sodium citrate (11 g per litre). Casing immersion time Sticks: at least 20 minutes. Pieces: 20-30 minutes. Bundles: over 30 minutes. Reels: at least 30 minutes (unroll before using). Sausage filling Fibran NF casing allows for over-filling of up to 2-3 mm above nominal caliber. Other considerations Keep the pre-treatment salt concentration. Make the brine each day the casing is used. Do not allow the casing to dry outside the brine. Protect Fibran casing from impact and objects that may cut and/or perforate it. FIBRAN casing applications Suitable for cured and cooked products. Allows for cooking temperatures of no higher than 78C.

Conservation

Store in a cool, dry place (ideally between 10-15C and 60-70% RH), away from sunlight. Once the FIBRAN casing has been opened, store it as hermetically as possible. Under proper storage conditions, FIBRAN casing keeps its physical properties for long periods of time. FIBRAN NF casing is supplied in palleted, stretch-wrapped cardboard boxes.
