VARGABELES PUDDING WITH NOODLES AND COTTAGE CHEESE

It is a traditional dessert from the Romanian region of Transilvania, dating from the 18th century; its invention is attributed to a Hungarian innkeeper from the town of Cluj, called Varga. The pudding was named after its original producer and is known as Vargabeles in the region of Transilvania, being considered as a traditional Hungarian recipe. Originally, the ingredients used for this dessert were prepared in each household (both the noodles, and the cheese), being totally ecological food.

The pudding with noodles and cottage cheese is an archaic and at the same time a modern dessert, being very popular in the households around Transilvania, as well as in its restaurants. Simple to prepare, with a few ingredients which are easy to procure, this dessert has enjoyed much popularity in Romania and the neighbouring countries, too. Vargabeles is a pudding prepared with wide noodles, sprinkled with warm butter and mixed with cottage cheese thinned with sour cream, interlinked with eggs, sweetened with sugar, flavoured with vanilla and citron, and baked in the oven for its finishing.

INGREDIENTS
wide noodles cottage cheese sour cream sugar eggs butter raisins lemon vanilla sugar

Preparation Boil the noodles in salted water Drain the noodles, mix with warm butter and leave to cool

Separate the eggs; mix the yolks with sugar, cottage cheese, sour cream, citron, vanilla sugar and raisins.

Beat the egg whites together with the powder sugar Mix the noodles with the cheese cream Grease a heat-resistant pan with a little butter and powder it with bread crumbs

Pour the cheese and noodle mixture into the heat-resistant pan Spread over the white foam Bake the pudding in the oven for about 15-20 minutes, till the egg foam reaches a brown colour

Serve the pudding cooled, topped with fruit sauce The season fruit sauce is: - a very tasty product - sour-sweet - easy to prepare - rich in vitamins and minerals - a source of energy and a spot of color for our dish

By associating the pudding with season fruit sauces we have contributed to improving: - its aesthetic characteristics - its taste and flavor - its nutritional and energetic value Our aim was to make the pudding more attractive to the young consumers, and at the same time to promote a healthy lifestyle based on healthy food , trying to compete with the very popular fast food diet.

Other suggestions on how to prepare and serve the Vargabeles pudding: the pudding composition can be wrapped into two sheets of semi-prepared pie pastry , before cooking the pudding can be served powdered with sugar or topped with sweet cream and fruit
