Our team of professional chef tutors are amongst the best in the world. Not only have they achieved commercial success as head chefs, but they are qualified lecturers with years of experience teaching to the highest levels.

Darrin began his career at Gidleigh Park Hotel, working under the guidance of Michelin-starred chef Shaun Hill. He has worked in many acclaimed fine dining restaurants in the UK and also held positions as a Development Chef and College Lecturer before joining the Ashburton Cookery School in 2004. He is responsible for the development & delivery of the courses at the Chef Academy.
Chef Manager since 2005, Rob spent the previous two years as Chef Lecturer at Exeter College. He has also worked in several fine dining establishments including Sous-Chef at the RAC Club in Pall Mall and Head Chef at the Puffing Billy restaurant at Exmouth.

David chef career spans 25 years working in 5 star hotels both in the UK and Bermuda. He ran his own successful restaurant in Devon before selling it to take on the role of Executive Chef of the Brend Hotel Group before joining the Academy in 2011.
Robert has lead a distinguished career cooking in many fine-dining restaurants including sous chef at LOrtolan, head chef at the Michelin starred Rhodes in the Square, and the New Angel in Dartmouth.

With more than a decades experience in catering, Joe has worked at some of the Devons finest restaurants, and was most recently Head Chef at the Holne Chase Hotel, holding 2 AA Rosettes before joining the Cookery School in 2008.
Alan is a local chef who joins us as Chef Tutor - he has worked as Pastry Chef at Rick Steins Seafood Restaurant, and chef at luxury hotels and restaurants. Most recently he was the head chef of the New Walk Brasserie in Totnes.

Phils long career includes cooking at Londons Grosvenor House, the RAC Club, Pall Mall and Gidleigh Park under Michelin-starred chef, Michael Caines. He was also Development Chef at the Ark Chicken Company. Phil has extensive experience as Chef Lecturer at Exeter College teaching students to an advanced level, and joined us in 2009.

A Modern Approach
There are many routes to launching your career in catering. No course or qualification can replace years of experience in a professional catering environment, but the right training should lay the foundations for a fulfilling and a long-lasting career. At the Ashburton Chefs Academy our aim is to develop the next generation of inspirational chefs. We move beyond cookery training to develop a full range of skills and qualities required of a modern head chef, from business skills to leadership in the kitchen to food ethics. Whatever your ultimate goal for your cooking, when you graduate from the Ashburton Chefs Academy you will have the confidence, skills and direction you need to succeed.
Superb Facilities
The Ashburton Chefs Academy shares a new, purpose built facility with the Ashburton Cookery School. It has 3 training kitchens each equipped with the latest Siemens appliances featuring gas and induction hobs, steam ovens and 3D hot air ovens, and modern kitchen furniture. There is also a cookery theatre, dining rooms and theory rooms. Free wifi and a cookery library are also available to students. The Academy training kitchens are bright and spacious, fully air-conditioned with high ceilings and natural daylight, providing an enjoyable environment in which to work. Each student is assigned their own workstation, with chefs knives and all of the cooking equipment required.

With the fishing ports of Brixham and Looe on one side and Dartmoor National Park on our doorstep, we are able to source exceptional local, seasonal and organic produce. Professional Culinary Certificate
How do you learn to cook to a professional standard in a short amount of time? Our Professional Culinary Certificate offers the answer. Over 6 weeks you will receive intensive practical cookery training designed to help you master the fundamental culinary skills required when cooking professionally. This structured course incorporates a Level 2 Award in Culinary Skills accredited by the Confederation of Tourism & Hospitality that is a recognised culinary qualification, as well as a Level 3 Award in Food Safety that is highly valued in the industry. The aim of this qualification is to: provide an introduction to the core skills required in a professional kitchen; improve the skills of individuals and increase their chances of gaining employment; to support the skills required within the catering industry. Graduates of this course can expect to be considered seriously for junior chef positions in the catering industry, or to have developed the skills and confidence to start their own enterprise.
6 WEEKS
This is an intensive course designed to deliver as much practical cookery training as possible with around 35 hours a week training at the Academy, and you will be expected to undertake some project work outside of the classroom. During the course you will be assessed at various points to ensure you have reached the required level to earn the qualification.

The Professional Culinary Diploma is a prestigious training programme designed to launch your career as a professional chef of the highest calibre, ready to meet the demands of todays employers. Over the course of this 6 month programme we will: Develop your culinary skills to a professional level. Prepare you for a career as a head chef. Inspire you to become the best cook you can be. Graduating from the Professional Culinary Diploma sets you out as a committed professional, ahead of the competition, possessing not only excellent cooking skills, but also the managerial skills that employers are crying out for.

Course Content
We take a modern approach to chef development working to build the full range of skills and qualities required by todays chefs. Our Total Chef training is a holistic approach to chef development and is unique to the Ashburton Chefs Academy focussing on three areas of development which we call Hands, Head, Heart.
Hands
A chef is nothing without a mastery of the practical skills to create great food. We will teach you all of the core cookery skills required to enter a professional kitchen with confidence, ready to deal with any challenge. Around 70% of your course will be dedicated to developing your core cooking skills and a complete understanding of essential cookery concepts and classic skills. This will include theory sessions and chef demonstrations, but predominantly this will be hands on cookery training in the kitchen. Real World Experience Towards the end of your course, you will also experience the pressure and excitement of cooking for paying customers as you prepare and deliver a 5-course tasting menu to guests at the Ashburton Dining Club.

Head
A successful chef is a thinking chef, and we will expose you to concepts and ideas from the outset that will build your confidence as a chef. Kitchen Management Its one thing to cook a dish, but managing a professional kitchen requires specific organisational skills. We will prepare you for that role. Managing the supply chain To find the best flavours, you need to source great ingredients. We will show you how to develop a portfolio of food producers and nurture these relationships to give you the best results. Leadership in the Kitchen A professional 3 day leadership program on how best to manage, motivate and mentor a team in the kitchen. Business Skills in Catering Specialist business advice looking at the opportunities and pitfalls you can expect when you are responsible for building a profitable enterprise in catering, whether that is running your own restaurant or catering business, or simply being responsible for a kitchen budget. Service & Front of House To the Total Chef great food is only one part of the equation. We will show you the how to measure and inspire excellent service and how to build your relationship with front-of-house.
Wine & Food Matching Along with wine tasting we will teach you the art of wine and food matching to build confidence in this important area. Food Allergies A customer with a food intolerance or dietary requirement is just as valuable as any other. We teach you what you need to know to be able to accommodate a range of dietary requirements. Life Balance Skills A career in catering can be a demanding one, requiring long hours and dedication. Very few chefs are equipped with the skills to manage a work-life balance and promising careers can often be lost to burn-out. We will prepare you for the road ahead and give you the tools to maintain control throughout your career.

Heart
Great cooking comes from the heart! Students that are accepted on the Professional Culinary Diploma are committed, ambitious and are passionate about food and cooking. We will focus your passion to enrich and inspire your cooking. Inspiring Guest Lectures You will meet some of the most inspirational chefs in the region who have earned a reputation for excellence in their chosen area, along with artisans such as master butchers and fishmongers to give you greater depth to your knowledge. Field Trips & Visits You will meet some of the local food producers behind the exceptional ingredients you will be working with and we will help foster an interest and understanding of the importance of the path from land and sea to plate. Occasionally we will arrange to dine as a group in some of the regions most exciting restaurants. Ethics & Issues We will also explore some of the ethical choices to be made in catering today and some of the wider environmental issues that affect us all.

Halls of Residence
Halls of residence student accommodation is available at the Hannahs at Seale-Hayne campus less than 5 minutes drive from the Chefs Academy. Seale-Hayne is a beautiful setting for you to enjoy your time while at the Ashburton Chefs Academy. A vibrant space used for, and by the community and business, the Grade II listed buildings offer arts, sports, galleries, outdoor activities, cafes, restaurants and even live music events. As a former University Campus, the halls of residence offers Chef Academy students accommodation that is clean, comfortable and good value. You will have your own private room, use of shared kitchen, shower & laundry facilities as well as the grounds, cafs and music venues across the campus. Transport is available directly to and from the Ashburton Chefs Academy.

Easy to find, but a million miles away...
The town of Ashburton is just off the A38 equidistant between Exeter and Plymouth. Georgian and Medieval buildings line the main street and there are many antique shops and pretty cafs to explore and enjoy. By Train
The nearest train station is Newton Abbot which on all main train services. From London Paddington you can be at our doorstep in under 3 hours. Taxis are available outside the train station and it is a 15 minute taxi ride to our front door.
