Basic Ingredients: Salt Red chili powder Black pepper powder Turmeric powder Coriander powder Cumin powder

Soya sauce Red chili sauce Woostershire sauce (optional) The first three are the basic ingredients that are used in every recipe but if you find others tou thats even better Chinese Rice: Vegetables: Green onion/ regular onion- diced/ chopped: one small Carrot chopped: one Capsicum (1 small) and cabbage (optional) - half cup shredded Boiled Chicken- Boiled and shredded (one or two pieces) First of all chop all vegetables separately and then put one tablespoon oil in the pan. Saut the onions first and the add carrots cook for one or two minutes and then add chicken plus black pepper, salt, a little bit of soya sauce and cook for one minute. Then add capsicum, and cabbage/ green part of green onion (all of these are optional) stir quickly and turn off the flame. Boil the rice separately (one cup) with salt Half tea spoon), drain and then mix the rice with the vegetables. Then put it on the flame (if the rice is half boiled) for dam lagana. Otherwise they would be done at this step

Chicken shahlik/ Manchurian: Ingredients: Chicken boiled (two pieces) Carrot (one cut in cubes) Capsicum (one small cut in cubes) Onion (same) Soya sauce (one tablespoon) Tomato ketchup (4-5 table spoons) Salt and black pepper (half tea spoon) Corn flour (optional) Cut the boiled chicken into cubes and then saut the onion in oil and then add chicken into it, then carrots then ad one cup water and bring it to boil. Then add tomato ketchup, soya sauce , salt and black pepper and cook for a while then add capsicum. If possible and you want a thick gravy then dissolve one tablespoon of corn flour in one or two tablespoon water and add into it before turning off the flame. Cook for one minute and then turn off the flame. Spaghetti: Follow the same recipe as with Chinese rice, just instead of rice add the spaghettis and season with soya sauce and chilli sauce as per taste. You can add green mirch too. Chicken Karahi: Chicken (half) (raw) Green chilies (one or two) Onion (one small/ chopped) Tomatoes (3-4, chopped) Ginger (one inch piece finely chopped)/ if ginger paste is available then take one tablespoon of ginger paste Garlic (4-5 cloves finely chopped and if paste is available then one tablespoon)

In the pan put the raw chicken in along with ginger and garlic and half teaspoon salt and one tablespoon oil; fry the chicken in oil till the color changes. Then add onion and tomatoes (chopped) along with one or two green chillies and quarter or half teaspoon of red chilli powder and cook on low flame till the meat is tender. If boiled chicken is available then in the oil first add the onion and fry it for some time when the color of onion changes then add tomatoes, salt, red chilli powder, ginger and garlic and cook for 4-5 minutes. When the tomatoes get soft then usko thora bhoon lou then add boiled chicken pieces then add green chilli, mix well cook for 2-3 minutes on low flame if required add two to three tablespoon of water too and then fill your mota pait with it :p Chickpeas (channay): In one tablespoon oil add one small onion chopped, one teaspoon cumin seeds, one tomato chopped (if tomatoes arent available and yogurt is then add two to three tablespoons of yogurt), quarter to half teaspoon of red chili, half teaspoon of salt, if possible one tea spoon of ginger and garlic powder or finely chopped ginger/ garlic and quarter cup of water into it half tea spoon coriander powder (if available). Cover it and cook till very little water remains, achi trah bhoon lou and then add chickpeas into it. Then again add a quarter cup of water then cook for 3-4 minutes till tender and according to the amount of gravy required. Dish done Potatoes: Potatoes (2 medium-cut in cubes) (if raw available) If raw potatoes are available then keep the cubes small. Cumin seeds (one teaspoon) Red chili (1/4 teaspoon) Salt (half teaspoon) One tablespoon oil Put the cumin seeds in oil then add potatoes, salt, red chili powder then half cup of water. Cover and cook till the tomatoes are soft and water dries up. If the potatoes are boiled, toss them in oil with all these ingredients. Green Pea rice/ chickpea rice: Take two tablespoon oil, and then add half teaspoon cumin seeds. if available one teaspoon ginger garlic, One teaspoon salt then add half cup green pea then 3-4 tablespoon of water. Cook for one or two minutes then add one cup of boiled rice. Mix well and leave on low flame for 1-2 minutes. You can make chickpea rice with the same recipe.

Green peas fried: You can make green peas fried with same recipe as mentioned in the potatoes part. Dahi walay aalu: Cut potatoes in thin slices (round), deep fry them. Meanwhile beat the yogurt, add in salt, red chili and cumin seeds then put in fried potatoes. If possible, in one tablespoon oil fry one chopped clove of garlic, add quarter teaspoon of cumin seeds, fry for one minute till garlic becomes golden and then turn off the flame and pour it on the yogurt and potatoes mixture. Chicken with sauce: Egg (one) One tablespoon/ two cornflour Chicken boiled Beat the egg, add in the cornflour and add 4-5 tablespoons of water a pinch of salt and black pepper and the consistency of batter should be running so that we can put the boiled chicken in and deep fry it. Fry the chicken till golden. For sauce: Two cloves of finely chopped garlic, two teaspoon of soya sauce, two teaspoon of chili sauce (if not available then half teaspoon of red chili powder) half teaspoon of salt, half teaspoon of black pepper, two teaspoon of sugar, 2-3 tablespoon of tomato ketchup. Cook with one to two tablespoon of water in a pan for one minute and the sauce will be ready.
