COWS GHEE-GO GHRIT

Much has been discussed about Cows ghee by the western as well as Indian media. People are being advised not to take ghee in their diet as it leads to blocking of arteries. Is this right?? Or just being propagated by multinationals to sell their so called low cholesterol refined or vegetable oil?? Ghee means cows ghee in Ayurveda and so many references are available in our classical text about the properties of ghee. Were our saints on fault or the modern scientist are not able to analyse this cow ghee? The ghee they analysed is not the Ghee we people uses or Ayurveda recommended. Before proceeding further let us have the Ayurveda side of Go ghrit-. (For Ay. References please refer the image attached)

As per( API,Part-1Vol-IV) Ayurveda properties of ghee are as followsRasa : Madhura Guna : Guru, Snigdha, Mirdu Veerya : Seeta Vipaka : Madhura Karma : Agnideepana, Anubhisyyandi, Ayushya, Balya, Cakshushya, Deepana, Hidya,Kaantiprada, Medhya, Ojovardhaka, Rasayana, Rucya, Shleshmavardhana, Snehana, Shukravardhaka, Tejobalakara, Tvacya, Vatapittaprashamana, Vayaasthapna, Vishahara, Virsya

THERAPEUTIC USESHyperacidity , Otalgia , Debility due to chest injury, Intoxication, Syncope, Headache, Loss of memory, Emaciation, Mania / psychosis, Intermittent fever, Erysepales, Disorders due to poison , Pain in female genital tract. Cow ghee promotes memory, intellect, and power of digestion, semen, ojas, kapha and fat. It alleviates vata, pitta, toxic conditions, insanity, consumption and fever. It is the best of all the unctuous substances (Ch Su: 27/232).

Chemical composition and analysis of Cows ghee as per modern chemical parameter is also important to show the world about the utility of Ghee. Following tables shows the different analysis.

Deshi Ghee V/S Vegetable oil. Marketing strategies force common Indians for switching their cooking media from Ghee to refined hydrogenated vegetable oil. This creates the confusion of blocking of our arteries and called as THE FEAR OF CHOLESTEROL Cows ghee contains 62-67% saturated fat and a good amount of MUFA(Mono unsaturated fatty acids) which is most desirable for the health and this amount is more than that of vegetable oil. Cows ghee contains Linoleic acid which only found in cows ghee again a very essential fatty acid for proper growth of human body. Apart all of this cows ghee has some peculiar characteristics which are as follows-

During preparation of ghee, protein casein is removed. Animal studies shows that casein elevates cholesterol. (Butter oil- IJCP July 1990) It contains natural vit A which keeps the outer lining of eye ball moist and prevent blindnessChakusashy. Its melting point is 35 degree Celsius which is less than the normal human body temperature leading to its digestability coefficient rate 96% which highest among the all edible oils. As other ingredients mixed with ghee as a vehicle (Anupan) reaches up to the cellular level because of its lipophilic nature. Yogvahi. Contains beta-carotene and Vit E which are well-known antioxidants- Ayushya

Why western scientists were not able to know these facts earlier-

The main difference lies in the manufacturing process of ghee. One can see the difference in the following ????

In general Cows ghee which means ghrit in Ayurveda is one of the easily digestible and assimilable food which provides essential nutrients and critical anti-oxidants to the human body. It is the best vehicle for Ayurvedic medicines for proper circulation and penetrations to the desire level.
