STEP ONE

1 Pineapple
1 lbs Demerara Sugar
12 oz. Fresh Lemon Juice
Zest of two lemons
5 Star Anise Pods
2 Cinnamon Sticks
32 oz. Boiling Water
12 oz. Strong Lapsang Souchong Tea

20 oz. Ron Zacapa 23 yr
20 oz. Wild Turkey 101
6 oz. Pedro Ximenez Sherry
STEP THREE
4 oz. Fresh Lemon Juice
32 oz. Hot Milk
PREPARATION
STEP ONE
Remove skin from pineapple and slice into rings or chunks.
Add to a large container and muddle.
Add sugar, lemon juice, lemon zest, and spices.
Bring water to a boil and add to mix.
Stir mixture to ensure all sugar will dissolve (important).
Bring 16 oz. water to a boil, add tea (approx. two heaping
spoonfuls), let steep for ten minutes, strain and add to
mixture.
Cover container and refrigerate.
STEP TWO
Once the mixture has cooled to room temperature (from step
one), add all liquor and stir.
Place lid on container return to fridge. Refrigeration is
not necessary after alcohol has been added so if you are
batching a lot or if there are issues with fridge space,
you can leave the mixture out so long as it is covered
tightly.
Let mixture sit at least 24 hours.
STEP THREE
Using a large filter (china cap, ideally), strain out all
solids from mixture.
Bring milk to a simmer (do not boil).
Add 4 oz. of fresh lemon juice to mixture immediately
before adding milk.

Stir mixture and let sit for fifteen minutes to allow curds
to form.
Line your large filter with cheese cloth that has been
saturated in water. Make sure the cloth reaches the bottom
of the cap. Secure the edges with binder clips.
Rest cap inside a large container - container should
ideally be clear to monitor filtration.
Slowly pour mixture into cap - it will take a few minutes
to empty the container.
Wrap container with filter in plastic and begin monitoring
filtration. BE PATIENT! Eventually, solids inside the cap
should form a nest and funnel mixture through a single,
clarified stream, ie: neither liquid or solids should sneak
through the wall of the filter. Once this has happened, you
can move to the next step, regardless of whether the entire
mixture has filtered through.
Carefully transfer cap into a new container. Do your best
to not agitate the nest youve created.
Slowly pour mixture from the first container back through
the cap to filter a second time into the second container.
Once you have emptied the first container, wrap the cap
again in plastic and leave to filter completely, which may
take hours.
Carefully remove filter and pour clarified mixture into
quart containers or bottles.
Refrigerate.
Invite friends over to your place for a party and show off.
