Upon receipt, inspect product for dehydration, and/or


thawing and refreezing.
White or gray areas indicate dehydration.
Excess ice crystals or frost buildup indicate thawing
and refreezing.
Unacceptable peach pies should be returned for credit.
Mark case with date received. Place into walk-in freezer
immediately.
Do not stack cases more than 6 high.

Frying and Packaging Peach Pies

Wash hands frequently when cooking product.

Remove enough frozen pies from freezer to meet


restaurant's needs for the next 2 hours.
Place frozen pies into the pie rack with the crimped end
facing up.
Place pie rack into the mild chicken fryer and press
timer.
Timer should be preset at 7 minutes.
When timer sounds, lift the pie rack out of the fryer.
Drain 30 seconds.

Wash hands and remove pies from pie rack.


Using tongs, carefully place each pie in a pie sleeve.
Continue until all pies are packaged.

Write 2 hour expiration time and P for peach on inside


bottom flap of pie sleeve.
Place under heat lights.
Keep peach pies separated from other pie flavors.
Do not place peach pies in CVap holding cabinet.
