Braising is the perfect way to turn larger,

inexpensive cuts of meat into delicious,
fork-tender meals that are great value
and will keep the family coming back for
more. Just follow these basic steps:
1. SEASON THE MEAT
Heat the pot medium-high to high

Dry the meat well.
Season with salt and pepper
Add a splash of oil to the pot.
4. SCRAPE UP THE FLAVOUR
As the veggies begin to release a bit of

liquid, use a wooden spoon to scrape
up the brown bits in the pot.

2. SEAR THE MEAT
Add the meat, leaving space around

each piece; it should sizzle.
Once a brown crust has formed, use
a spatula to turn it over.
5. DEGLAZE WITH WINE OR STOCK
Add liquid (eg. wine, cider, stock or water)

to help finish dissolving and scraping up
the brown bits. The liquid should cover at
least halfway up the side of the meat.
3. ADD THE AROMATICS
Reduce heat, then add cut veggies

and herbs for flavour such as onions,
shallots, leeks, carrots, celery, thyme,
bay leaf and parsley.
6. COVER AND SIMMER GENTLY
Cook the meat by simmering on the

stovetop over low heat or in the oven
between 120 and 150C until it is fork
tender. (Allow approx 1-2 hours depending
on the cut of meat or recipe.)

200g Perfect Italiano parmesan, grated
450g Perfect Italiano Perfect Bakes cheese

3 Combine the parmesan, 300g Perfect Bakes

cheese and cream in a medium saucepan.
Stir over medium heat for
5 mins or until the cheese has melted.
Add the chorizo and stir to combine.
Combine the macaroni and the cheese
mixture in a large bowl. Transfer to a 12-cup
(3-litre) capacity baking dish. Sprinkle with
the remaining cheese.
1 Preheat oven to 200C. Cook the macaroni

in a large saucepan of salted boiling water
according to packet directions. Drain.
4 Bake for 15 mins or until cheese is golden and

mixture is heated through. Serve with baby
rocket leaves.

stirring, for 3 mins or until browned.

1 onion, coarsely chopped

2 tsp dried chilli flakes

cup (160mL) pineapple juice
cup (55g) brown sugar
cup (170g) tomato puree
200g red cabbage, thinly sliced
200g white cabbage, thinly sliced
100g carrot, grated
2 spring onions, thinly sliced
cup whole egg mayonnaise
20g wholegrain mustard
1 lemon, juiced
1 Preheat oven to 140C.

Combine the pork ribs, onion,
star anise, chilli flakes and
cinnamon in a large roasting
pan. Add the Coca-Cola. Cover
with foil. Bake for 1 hours.
3 Meanwhile, combine the red

and white cabbage, carrot,
spring onion, mayonnaise,
mustard and lemon juice in a
large bowl. Season with salt
and pepper.
2 Transfer the pork to a plate.

Strain the cooking liquid into a
medium saucepan. Add the
pineapple juice, sugar and
tomato puree and bring to the
boil. Cook, stirring
occasionally, for 20 mins or
until sauce thickens slightly.
4 Preheat a barbecue or
chargrill pan over medium
heat. Brush the ribs with the
sauce to coat. Cook, turning
and basting with the sauce, for
5 mins or until sticky and
heated through. Divide ribs
among serving plates. Serve
with the slaw and the
remaining sauce on the side.

2 tsp baking powder
cup (30g) shredded coconut
cup (150g) Coles Brand White

1 cups ripe banana, lightly mashed
Method
1 Spread vegemite over the base of
two of the tortilla. Sprinkle with
cheese and top with the remaining
tortilla to form a quesadilla.
2 Heat a non-stick frying pan over a
medium heat. Lightly spray the
outside of one of the quesadillas
with olive oil. Cook for 2 minutes
each side, or until golden and crisp.
Cover to keep warm. Repeat with
remaining quesadilla.
3 Reheat the pan back over medium
heat and lightly spray with olive oil.
Add egg and cook for 2-3 minutes
or until yolk is just set.

mixture. Use a wooden spoon to
stir until just combined.
