Consider the recipe for Annies Shells and White Cheddar:


Boil 8 cups of water in a medium saucepan. Stir in pasta; bring to a boil. Cook 8-10 minutes, stirring
occasionally. Drain and set aside. Melt 2 Tbsp. butter in a saucepan; add 1/4 cup milk and the
contents from the cheese packet. Stir until well mixed and then remove from heat; Add cooked pasta
back to saucepan and stir well. Enjoy. (Serves 4)

Draw a process flow diagram for a continuous process to prepare this pasta and cheese for your
residence hall. Label every unit and the qualitative contents of every stream. Where appropriate,
indicate the temperature and/or the residence time in a unit.

a. Write down a protocol (recipe) for making m&ms based on this video.
b. Sketch a process flow diagram for the process. Label all unit operations (boxes) in
general terms (such as mixer, filter). Include at least two steps that you think are
necessary but that werent mentioned in the video. Each unit on your flow sheet
should perform only one operation. Label all the components of each stream.
c. Estimate how many semi-trucks filled with bags of m&ms will leave the factory
shown in the video every hour. State your assumptions and cite sources if relevant.

In class we watched a video of a process to make fresh-squeezed orange juice. Based on the
information given below, decide if using this process is worth it, and explain your answer.

The machine processes 2 oranges every 3 seconds.


A half-gallon jug fills up with fresh juice in about 40 seconds.
Cost of gallon of OJ made using the machine: $6.99 + .05 deposit for the jug
(includes the cost of the oranges)
Cost of 1 bag containing 8 juice oranges: $5.99 (to juice at home)
Cost of gallon of in-house fresh OJ from the refrigerator section: $9.99
Cost of gallon of not-from-concentrate Florida OJ: $2.99

week (September 9 15). Prizes will be given for the best video(s) as selected by GSIs; those will
