As a young boy, i was completely obsessed with tractors.

I had
pictures of tractors all over my bedroom walls; I had tractor toys,
tractor T-shirts, a tractor carpet, and duvet cover, the whole
works. I ate, drank and slept tractors. On my 17th birthday, I was
thrilled to get an invitation to go to a tractor factory nearby and
test-drive a brand new tractor.

My excitement was incredible as i told my family and friends. The


great day came and I went to the factory for a test-drive.
Unfortunately, something went terribly wrong with the tractor
when I was driving it and it flipped over, trapping and breaking my
leg and knocking a tooth out.

I was so upset and tried to sue the tractor company for


negligence. However, the company would have none of it and told
there was no liability and that I could get lost!

You can imagine I was very annoyed with this and somehow after a
while lost all the love I had had for tractors and soon vowed to
shed them from my life completely and forever.

All the posters came down, the toys were given away - tractors
were GONE.

Many years later, I went into a bar for a drink. Inside, the
cigarette and cigar smoke was terrible but through it I saw a
beautiful girl seated at the bar on her own. Tears were streaming
down her face.

I asked her what was wrong and she said that the smoke was
making her eyes sting and stream with tears.

With that, I looked around and then took a huge breath, sucking in
all the smoke. I then walked outside into the car park and blew all
the smoke out again. I went back into the bar where the air is now
clear and sweet and sat down next to the girl.

" That was amazing!" she said, "How did you do that?"
" No problem", I said

" I'm an ex-tractor fan"


THE BARTENDER
A bartender, as a rule, is a person who enjoys the company of
others, endeavours to solve problems, listens to the woes of the
world, sympathises with the mistreated, laughs with the comedians,
cheers up the down-at-heart and generally controls the
atmosphere at his or her bar. A bartender is the manager of
moods, the master of mixology.
THE COCKTAIL
It is strange that the origin of the famous and mysterious word
‘cocktail’ as a term for mixed drinks cannot be precisely
established. In an American magazine in 1806 the word ‘cocktail’ was
first defined in print as a mixture of spirits, sugar, water and
bitters. The term was certainly not then in common use. Nor does
the reference preclude its prior regional usage.

One popular notion is that during the American war of


independence, a tavern keeper called Betsy Flanagan, whose
premises were frequented by Lafayette’s as well as Washington’s
officers, once prepared a meal of chickens she filched from a
pro-British neighbour. To celebrate this victory she decorated
glasses used at the feast with bird feathers. Her French
customers toasted her with cries of “Vive Le Cocktail”.

The Rolls Royce of Mojitos - hazelnut and vanilla liqueur muddled
with Pampero rum, mounds of fresh mint, lime and white sugar,
spiked with champagne.

THE MAN FROM UNCLE — €7.50


Smashed fresh mint leaves and pineapple wedges, muddled with
half a lime and sugar, lengthened with Pampero rum and fresh
pineapple juice, served in a tall glass over crushed ice.

JULES — €7.50
Pampero rum, fresh mint, lime and sugar muddled with raspberries
and charged with soda.
MAISIAAC — €8.50
One of the most refreshing cocktails on our menu comprising
Element 8 rum, fresh lemon juice, sugar syrup and fresh coriander
stalks, muddled and served in a tall glass, topped with soda and a
lemon zest.

UTTERLY BUTTERLY — €8.50


Fresh nutmeg, butter, apple, cloves, lemon, all spice and Element 8
rum heated up with pressed apple juice.

CHARLIE BROWN — €9.00


Appleton VX rum, Grand Marnier Louis Alexander and lemon juice
shaken and balanced with gomme, touched up with a orange zest.

LEMON TREE — €8.00


Myers Jamaican rum, juicy pineapple wedges muddled together with
lemon, lengthened with pineapple juice, served straight up.

Pass your car keys to the bartender or simply take a taxi after
this one, Wray and Nephews Famous Over proof Rum with Jamaican
ginger beer, lemon and sugar to balance.

JINGLE BELLS BATMAN SMELLS — €9.50


Wray and Nephew rum, cognac and black raspberry liquor, flamed
with slightly caramelized pineapple wedges, served in a brandy
balloon.
BLACK PEPPER AND BASIL — €7.00
Ripped basil leaves, freshly squeezed lemon juice and a touch of
black pepper lengthened with Tanqueray gin, sugar syrup, and a
splash of soda, sprayed with an orange zest.

Fresh grapefruit juice mixed with a large measure of Tanqueray gin
lengthened with ginger beer, sprayed with a lemon twist.

MORNING GLORY MARTINI — €7.00


A tangy mix of fresh marmalade, Tanqueray gin, Grand Marnier and
lemon juice, spiked with sugar to sweeten, shaken and poured into
a martini glass.

Tanqueray gin shaken with melon, balanced with fresh lime, sugar,
then charged with soda.

GIN GARDEN — €7.00


A thirst-quenching mix of Tanqueray gin, fresh mint leaves, lime
juice and sugar syrup, shaken and served long over cubed ice, and
topped with sparkling water.

Freshly squeezed grapefruit, orange, and lemon juice, spiced up
with Tabasco and a large measure of Tanqueray gin.
RAMOS GIN FIZZ — €12.00
Also called the New Orleans Fizz, this drink, created in 1888 by
Henry Ramos is a grandfather of classic cocktails, Tanqueray 10
gin, lemon juice, orange flower water, cream, egg white and then
charged with soda.

QT — €9.00
Muddled cucumber, mint, and freshly squeezed lemon juice, doused in
floraison G vine, homemade mint sugar shaken and double strained.

THE BEST HELLO EVER — €8.50


G’ Vine Nouaison apricot brandy, lychee puree and fresh lemon juice
dry shaken and double strained into a large martini.

SUMMERSET — €8.50
Pomegranate Malaises flamed in a brandy balloon with Pama and
Bombay gin to make a very distinctive rich flavor.

VESPER — €12.50
The Martini as Ordered by James Bond:
Bond's meeting with CIA contact Felix Leitner is the occasion for his
detailed drink order.
"A dry martini," he said. "One. In a deep champagne goblet."
"Oui, monsieur."
Just a moment. Three measure of Gordon's, one of vodka, half a
measure of Kina Lillet. Shake it very well until it's ice-cold, then add a
large, thin slice of lemon peel. Got it?"
"Certainly, monsieur." The barman seemed pleased with the idea.
"Gosh, that's certainly a drink," said Leiter.
Bond laughed.
"When I'm..er..concentrating," he explained, "I never have more than one
drink before dinner. But I do like that one to be large and very strong
and very cold and very well-made. I hate small portions of anything,
particularly when they taste bad. This drink's my own invention. I'm go-
ing to patent it when I can think of a good name."
ZESTY MARTINI — €7.50
Juicy fresh pineapple, a slither of ginger, coriander sticks and
Ketel One vodka shaken and sweetened with pineapple and sugar.
Fine strained.

PRINCESS SCARLET — €7.50


Sweet lychee puree, Ketel One vodka, limoncello, and bitter tasting
Campari. A hint of sugar syrup, shaken and served up in a large
martini glass. An exceptional combination.

LEMONBERRY — €7.50
Smirnoff citron vodka shaken delicately with mixed berries, vanilla,
sugar, and lemon, double strained into a cocktail glass.

CINCO ESPRESSO MARTINI — €7.50


For coffee lovers! A sophisticated, smooth flavor of plain
chocolate liqueur, a hint of hazelnut, dark cacao and sugar shaken
vigorously with a shot of coffee. Double strained into a martini
glass and finished with a trio of fresh coffee beans.

HAKKA — €7.50
A seductive combination of Ketel One vodka, coconut, passion fruit
and lime, balanced and topped up with lychee juice, served long.
BITTERSWEET — €7.50
A cocktail to tingle the taste buds with the diverse flavors of
apricot brandy and trip sec with fresh lime and grapefruit juices,
charged with Ketel One vodka. Shaken and double strained.

My version of the Appletini, granny smiths muddled with Bison
Grass vodka balanced with freshly squeezed lemon juice and apple
infused sugar.

MADAGASCAR BOURBON — €7.50


Smirnoff vanilla vodka fresh pineapple wedges shaken with vanilla
lemon and sugar, straight up in a large martini.

MADELINE HAYS — €7.50


Absolut pepper, Tabasco, orange, and lemon combined to make a
spice little number.

GREEN DESTINY — €7.50


A tantalizing combination of muddled fresh kiwi, cucumber, and
bison grass vodka lengthened with apple juice.
CARLITA’S WAY — €7.50
Juicy fresh strawberries, a dash of balsamic vinegar, fragrant
basil leaves and a good dose of Tequila José Cuervo Especial
Reposado, shaken and double strained into a large martini glass,
served with a cracked black pepper rim. Perfect for lovers of the
margarita cocktail.

A lengthy and flavorsome concoction of José Cuervo tequila,
cranberry juice, mint, lime and brown sugar.

A unique twist to a classic margarita, adding fresh beetroot to
the mix of José Cuervo tequila, fresh lime and sugar, served in a
martini glass.

The drink was created and given its name by Alabama restaurant
and lounge owner Tony Mason in 1980. Jack Daniels, triple sec,
fresh lemon juice lengthened with lemonade, served long over cubed
ice.

A majestic fusion of Makers Mark bourbon, Grand Marnier and
Liquor 43 shaken with Angostura Bitters, fine strained into a
chilled martini glass.

KENTUCKY KEN — €8.50


A smooth blend of Woodford reserved bourbon, crème de peche and
a dash of Pimms no.1, built and poured into a sling glass, topped
with ginger ale.

Laphroaig 10yrs lemon and a hint of vanilla whisked up shaken and
double strained into an old-fashioned glass.

THE DURHAM — €40.00
Appleton 21 yrs, a rare and splendid rum from Jamaica, blended
with Grand Marnier Louis Alexander, a special edition blended by
the company’s master distiller in honor of the inventor of the li-
queur, flamed in a brandy balloon glass with orange zests.
Appleton 21 sports a coppery/tawny hue and perfect purity; the
alluring aroma is floral with a mixture of vanilla, orange peel, musk
and coca. Grand Marnier Louis Alexander blends the subtle
fragrances of tropical oranges with a selection of the finest
cognacs.

TANQUERAY 10 GIN MARTINI — €12.50

Thanks to its base distillate, which is made of Wheat, Rye and
Potato and low number of distillations (3), Ultimat provides us with

potato and it has the smoothness and elegance of the cereals.

This tequila has been aged for 24 months in French Oak barrels. It
gives us a very smooth and mellow taste in the mouth that
reminds us of honey. We can feel a soft essence of citrus and
vanilla but it also gives us a complex aftertaste thanks to the
balance between notes of agave and wood.

GIN MARE MARTINI — €10.00


We find ourselves with a very different gin thanks to its
Mediterranean botanicals. Arbequina Olive gives us a very pleasing
“oily” flavour in the mouth that is in harmony with other dry
notes from thyme and rosemary. It’s well rounded with basil in the
final blend.

JOHNNY WALKER BLUE LABEL WHISKY OLD FASHIONED — €35.00


A classic old fashioned, made with the extremely respected Johnny
Walker Blue Label scotch whisky, angostura bitters and sugar.
Blue Label is specially blended to recreate the authentic character
and flavour of some of the earliest whisky blends created in the
19th century, giving it a rich, peaty taste combined with a smooth,
distinctly malty flavour.

G ‘VINE NOUAISON MARTINI — €12.50


Amplifies the aromas of the spices, yet retains the sensual and
silky grape base as well as the subtle floral note. Superb in a dry
martini.

Central Aotearoa, in New Zealand, is 42 degrees below the equator,
which is where Below 42 was conceived. An exceptional vodka,
international judges have applauded Below 42 for the controlled
flavour that produces flavour rather than heat.

THE MARTINI — €7.00/€20.00
“Get me out of this wet coat and into a dry martini” – an
interesting and appropriate quote by Mae West, regarding this
classic cocktail. Opt between Tanqueray gin or Ketel One. Olives,
green or black? With a twist? How about a Gibson with pearl
onions? A Franklin with 2 olives? A Gimlet with Roses Lime
Cordial? Or a Number 1 with an onion and an olive? Be
adventurous, try a Dirty Martini (with olive brine), or perhaps a
Smoky Martini with a rinse of scotch. For a refreshing change try
an ‘in season’ fresh fruit martini – watermelon, passion fruit,
raspberry, apple – the list goes on…. For a touch of spice, try a
Cajun Cucumber Martini or go the extra mile with a superior martini
using Belvedere, or Grey Goose Vodka, alternatively Tanqueray 10
premium gin. How about a Bradford, shaken not stirred, just the
way 007 likes it. Fancy both Tanqueray gin and Ketel One? Ask for
a Vespa. Whatever you like!

MARGARITA — €8.00
The classic margarita with José Cuervo tequila, Cointreau and
fresh lime juice, straight up or on the rocks, with or without a
salt rim. Just please, please don’t murder a great drink by asking
for it blended.

MAI TAI — €8.00


Trader Vic’s original blend of aged Jamaican rum, orange curacao,
fresh lime, orgeat (almond) syrup and rock candy, shaken and
served short on cubed ice.
CAIPIRINHA — €7.00
Originally a peasant’s drink whose popularity has seen it top the
lists of leading cocktail bars around the world. Simply made with
Cachaca Sagatiba, fresh lime and sugar. Substituting Cachaca
Sagatiba for Ketel One equals a Capriovska. If you prefer
Tanqueray gin, ask for a Crushed Gimlet. Why not try the national
drink of Cuba, a Mojito made with Pampero Rum and mint,
alternatively try a Mint Julep using Makers Mark.

MANHATTAN — €8.00
Amazingly, in New York they still serve this timeless classic on the
rocks. Originally made with Canadian Club Rye Whisky, Angostura
bitters and sweet vermouth. These days the rye whisky can be
substituted for Bourbon, Scottish (Rob Roy) or Irish whiskey, and
the Martini Rosso for Martini Bianco. If you can’t make up your
mind, why not try a Perfect (both sweet and dry vermouth).

RAFFLES SINGAPORE SLING — €8.00


The only raffles recipe – Tanqueray gin, Benedictine, orange and
apricot shaken with lime juice, Angostura bitters and pomegranate
syrup, strained over cubed ice then crowned with cherry liqueur.
Accept no substitute.
COSMOPOLITAN — €8.00/€10,00
Popularized by the series ‘Sex & the City’, the Cosmopolitan is a
combination of citrus vodka, Cointreau, cranberry juice and a
squeeze of fresh lime. Try a Hudson Cosmopolitan made with Stoli
Orange, a Rude Cosmo with Cuervo traditional tequila, or a Cinco
Cosmo made from lemon and orange infused Ketel One. All come
with a flamed orange zest.

MULES—
MULES— €8.50
The Moscow Mule has spawned a whole family of imitators of the
original recipe – Ketel One, lime and ginger beer. Variations include
the Jamaican Mule with rum, Irish Mule with whiskey, Mexican Mule
with tequila or Kentucky Mule with bourbon. Or try our Honey Dew
Mule, made with honey vodka. If you prefer a spicy drink, try a
Dark n Stormy, the national drink of Bermuda. Not served in
copper mugs here though!

OLD FASHIONED — €8.50


Like the Martini, the glass this cocktail is served in has taken the
name of the drink. A labor-intensive procedure is absolutely
essential to perfect the taste of this drink. A good Old Fashioned
will take 10 minutes to perfect as the blending of the makers
mark, Angostura bitters and sugar requires gradual build and stir.
Please be patient, trust us – it’s worth the wait. The
experimental person might like a Sazerac rinsed with absinthe.
BLOODY MARY — €7.50
Bloody Mary recipes are as personal as Martinis. Variations on the
theme use everything from Tanqueray Gin (Red Snapper), tequila
(Bloody Maria), or whisky (Bloody Joseph) as a base. Purists will
only use tabasco, Worcestershire sauce, salt and pepper, and lemon
as spices – but everything from oysters, horseradish, dry sherry,
red wine, cucumber, garlic, onions, V8 and even ketchup can be
added. If you’re feeling a little hung-over, the B vitamins in the
tomato will certainly be helpful, although it ‘works’ like most
pick-me-ups by getting you drunk. If you can’t hack the pace, try a
Bloody Shame (virgin).

MILANO-
MILANO-TORINO — €7.00
A classic aperitif of Campari and Rosso Vermouth, renamed by the
Italians during prohibition as an Americano – an ambiguous
compliment to the huge amount of Americans who enjoyed the drink.
Poured over mounds of ice and finished with a citrus duet, soda is
optional. For an Americano with more of a kick, try a Negroni, just
adding Tanqueray Gin to the combination.

COLLINS — €7.50
A classic combination of spirit, lemon and sugar that has been

WHISKY

From its earliest days, whisky has been known for its curative and
creative properties. It evolved into a unique cultural icon of the
people who savoured it. It has charmed the saints and tormented
sinners. Each country, each distiller and blender has made a
distinct interpretation of this drink. Today, whisky is enjoying yet
another revival as a cultural icon.

The name ‘Bourbon’ comes from Bourbon County, Kentucky, which, in


the 1700’s covered a large portion of Kentucky and was a point of
departure for whisky moving down the Ohio River to the West and
New Orleans.

That area originally got its name from France. The French
supported the Americans during the Revolutionary War and the
ruling family at the time was called Bourbon, so, in gratitude, that
area was named after them.

But it was not until 1964 that Bourbon got a serious legal seal of
approval when the US Congress declared Bourbon “a distinct
product of the United States”.

RUM

The Caribbean region is the traditional home of rum. It is widely


believed that Christopher Columbus, on his second voyage of
discovery, brought cane cuttings with him to this area. It was soon
discovered that the islands’ conditions were so suited to cane
growing that it flourished immediately. However, it wasn’t until the
arrival of the Spanish explorers, who were experienced in the art
of distillation, that productions became more advanced. This laid
the foundations for the industry in the decades that followed.

GIN

While it was the English who perfected the gin we know today, the
original recipe was, in fact, based on a juniper-flavoured concoction
created in Holland during the 14th century. This early drink was
given the name ‘jenever’ or ‘genever’, the Dutch word for juniper.
However, when a Dutchman by the name of William of Orange was
crowned King of England in 1689, this name soon became ‘gin’ and
he was largely responsible for bringing the spirit to his new
homeland.

TEQUILA

Contrary to popular belief, tequila is not made from the cactus.


Rather, it is produced from the blue agave (pronounced
UH-gar-vay) plant, a succulent relation of the lily, of which there
are over 200 different species.

COGNAC

Cognac is situated on the river Carente between the towns of


Agouleme and Saintes. The majority of the town has been built on
the river's left bank, with the smaller right bank area known as
the Saint Jacques district.

The town is situated on one of the pilgrimage routes to Santiago


de Compostela.

The town gives its name to one of the world's best-known types
of brandy or eau de vie. Drinks that bear this name must be made
in certain areas around the town of Cognac and must be made
according to strictly-defined regulations in order to be granted
the name Cognac.

40% of the wine was fermented in stone lagares and foot
trodden. The remaining 60% was fermented in temperature-
controlled stainless steel wine vats for 10 days.

Dona Berta, Reserva Rabigato 2008 — €26.00 bt


It has a lemony colour and a shiny appearance. The aroma is
delicate, with floral and fruity notes, reminiscent of green apple
and honeysuckle. Thanks to the noble caste of Rabigato, this wine
is singular, rare, great to drink, because of the delicacy of its
flavour.

GREEN WINE

Muros Melgaço, Alvarinho 2005 — €24.00 bt


Intense aroma with hints of the variety of wooden, fruit and
floral. Soft flavour, full-bodied, with good acidity and a long
complex fruity end.
ROSÉ WINE

Valle do Nídeo Rosé, 2007 — €18.00 bt


Red closed colour, dominated by ripe red fruit in harmony with
resulting aromas from aging in oak barrels. Tannins in balance with
acidity and a persistence end.

This wine is made with grapes from vines aged between 20 and 50
years old and includes among other Códega do Larinho, Rabigato and
Viosinho varieties.

This was fermented in stainless steel vats with temperature
control. 6500 bottles were produced.

Quinta das Marias “Reserva Cuvée TT”, 2007 — €26.00 bt


Manual harvesting in boxes of 20kg, stalking of the grapes.
Fermentation and maceration in a granite mill with steps process.
Malolactic fermentation and aging of 12 months in French oak
barrels (Allier) and American. On third of the barrels are new, one
third in the second and a third in the third year.

infusion and water temperature, which could take from 4-10
minutes depending on the type of tea or infusion you have

Genmaicha
It means “natural rice”. A Bancha with a low caffeine content. The
addition of roasted wholemeal rice makes it pleasantly bitter and
fragrant and gives it a taste that is complemented by a slightly
sweet and nutty caramel note. This is sushi’s traditional drink.

Flores de Jasmim
This flavour is practically the Chinese National Drink. A very
delicate half-fermented tea where the fresh jasmine blossoms are
added during the drying period. This classic flavouring technique
has been known in China for more than 1000 years. This sweet
blend will leave an intense, flowery jasmine taste and scent.
