client / customer complaints.
• Daily test and process both raw and cooked meat, as well as spices, peppers,
sauces and some dairy.
• Daily compliance of SOPs, FDA and USDA regulations as well as the A2LA
methods Manual, Quality Manual, Safety Manual and client specifications.
• Prepare and approve nearly 100 Certifcates of Analysis weekly.
• Perform quarterly equipment calibration.
• Testing and data entry for various shelf life testing of meat samples.
• Proficient use of Microsoft Word, Microsoft Excel, Power Point, Outlook
Express and the Internet
• Approximately 10 hrs weekly of document analysis for preparation of both
internal and external audits.
