Carrot Apple Breakfast


Bread
1 egg; cup maple syrup; 3 Tbsp. melted
butter
1 Tsp. cinnamon, tsp ginger & nutmeg
1 cup whole wheat flour
cup oats
Tsp. baking powder and baking soda
Apple, chopped
1 cup carrots, grated
1/3 cup dried cranberries
Directions:
1. Combine egg, maple syrup, butter &
spices in medium bowl
2. Stir together flour, oats, salt, baking
powder, and soda in small bowl
3. Combine wet & dry ingredients;

*Carrots
*Beets
*Sweet Potato
*Potatoes
*Onions
2 Tbsp. Olive Oil, 2 Tsp. Rosemary,
salt/pepper
Directions:
1. Dice vegetables
2. Toss all in a large bowl with olive
oil, rosemary
3. Add salt & pepper to taste
4. Roast at 400F until soft, about

Cream of Broccoli Soup


16 oz. frozen chopped broccoli
cup of water
1 can chicken broth
stick of butter
cup chopped onion
cup all-purpose flour
1 can evaporated milk
Directions:
1. Boil water in medium saucepan;
add broccoli and bring to boil
and cook until tender.
2. Combine half of broccoli and
chicken broth in food processor
until smooth.
