Protein Methods
1. Kjeldahl Nitrogen Method. Amino acids are
the building blocks of protein, and they contain
carbon, hydrogen, oxygen, sulfur and nitrogen
(Table 1). In the basic method for protein, nitro
gen is determined by a method of chemical anal
ysis known as the Kjeldahl procedure. The nitro-
