Kuska Rice
Ingredients
Cinnamon - 3
Cloves - 3
Bay leaf - 1
Green chilly - 2
Preparation Method
1. In a pressure cooker with oil add Cinnamon, Cloves, Fennel seeds & Bay leaf.
2. Add the onion, green chilies saute it for some time. Then add ginger garlic paste,
mint leaves & coriander leaves.
3. The oil separates. Then add garam masala, salt, coconut milk and 1 cup of
water.
4. After water gets heated add rice and lemon juice.

5. Close the lid and keep for two whistles. First whistle in normal flame second in
full sim.
6. After cooking Leave it for few minutes.
7. Finally open the lid and add ghee.
8. Veg kuruma/mushroom/Egg/chicken/mutton any side dish will be great for this
dish.
9. Basmathi rice is also fine for kuska rice. For basmathi rice soak the rice for half
an hour and reduce 1/2 cup of water. keep it in dum that means full sim before
getting whistle switch off the stove.

Preparation method
1. In a pan heat oil. after it gets heated add onion and green chili saute it for
sometime. then add capsicum and saute it.
2. In a bowl add eggs, sauted onion, chili, capsicum, pepper, salt, and curry leaves.
3. Mix it well.
4. In a tawa make chapathi. after one side gets cooked, turn and spread mixed
eggs and vegetables on top.
5. Then slowly turn the chapathi and add little oil to it.
6. Finally roll it and serve.
7. Very easy and quick recipe.

Kothu Chapathi
Ingredients
Eggs - 2
Onion - 1
Tomato - 1
Green chilly - 1
Salt - as required
Oil - as required
Preparation Method
1. In a pan heat oil after its get heated add onion and chilly, saute this for sometime.
after it becomes golden colour add tomato, cook till tomato get smashed( u can
add little water also to cook tomato)
2. Now add chilli powder and salt.
3. Next add eggs and saute for sometime.
4. Then add chapathi and mix well.
5. Finally garnish with curry and coriander leaves.
6. Instead of eggs you can add vegetables also.

Method
1. In pressure cooker with vegetables add half glass water, cumin seeds, salt and
little turmeric powder then close the lid and keep it for three whistles.
2. The vegetables are completely cooked. Strain and reserve the liquid.
3. Cool the vegetables... finely grind it in mixie with water... then filter it and transfer
into a deep pan, add that reserved liquid and adjust consistency.
4. It should be little thick. Bring the soup to a boil. Adjust salt, add pepper and stir.
Serve hot.
5. If you like to add cream you can add.

Tomatoes Soup
Ingredients
Ripe Tomatoes - 4
Garlic cloves - 5
Bay leaf - 1
Butter - 1 tbsp
Salt - required
Instructions
1. In a bowl add tomato, garlic and microwave for 10 mins, otherwise put the tomato
in boiling water for 20 mins.
2. Grind the tomato and garlic in mixie with little water and filter it to remove the
seeds.
3. In a pan add butter, after it melts add the bay leaf and saute for 5 seconds, now
add the tomato puree.
4. Boil for 5 minutes. Remove the bay leaf, now add the corn flour mixed with 1
tblsp water and mix well.
5. Boil until thick consistency reaches. Season with black pepper, adjust salt and
garnish with coriander leaves.
6. Add cream in top if desired. If you like to add the toasted bread that is also fine.

1. In a Pressure cooker add chopped amaranth, Onion, Tomato, Garlic, cumin
seeds, turmeric powder, salt with that add more water then close the lid and keep
for 3 whistles.
2. The vegetables are completely cooked. Strain and reserve the liquid.
3. Take a pan add butter, add that reserved liquid. Bring the soup to a boil. Adjust
salt, add pepper and stir. Serve hot.
Tips : For kids we can add the corn flour mixed with 1 tblsp water and finaly add some
cream to taste Rich.

salt, turmeric powder and 3 cups of water then close the lid and keep it for three
whistles.
2. The vegetables are completely cooked, transfer the soup into a deep pan, Adjust
salt, add pepper and stir. Serve hot.

Egg Chapathi
Ingredients

1. In a pan heat oil then add onion, saute for sometime then add crushed garlic
after it becomes golden color add beans and carrot. with that add salt and little
water, cook for some time.
2. After vegetables get half cooked add cabbage and capsicum saute for few
minutes.
3. now add pepper and cooked rice, mix nicely.
4. Finally adjust salt.
5. This is very easy and healthy lunch box recipe.

Egg - 1
Milk - 4 tbsp
Preparation Method
1. In a bowl, combine milk and egg(slightly mix, Don't beat more)
2. In a another bowl, take all purpose flour. In that add chilli powder, pepper, salt
(Onion, Garlic powder is optional) and mix it well.
3. In a plate, take some bread crumbs.
4. First take one piece of chicken dip it in egg mix, then in all purpose flour, again
dip it in egg mix, finally roll it in bread crumbs and keep it in a plate.
5. Like this all the chicken pieces we have to do and keep it in a plate.
6. In a pan pour oil, after it gets heated, keep the stove in medium flame, now fry
the coated chicken. Cook until the coating is brown.
7. Drain on a paper towel-lined platter. Serve immediately.
8. It will be very tasty and crispy. Children Love this dish.
