Vinification: Maceration of 8 days in stainless steel tank with daily pumping over. The juice
then ferments its alcohol at regulated temperature and the malolactic fermentation is then
followed to completion. Ageing in 225L-MT+ (50% new) oak barrels of Balkan origin for 18
months. Unfiltered and unfined wine.
Tasting: This wine has a deep red color with violet reflects. Its intense aromas include
myrtles and red fruits, as well as spices like white pepper. With some aeration we can also
find the aromas of dark chocolate and vanilla. The mouth is full and tasty, with round tannins
and balanced with good acidity. The aromas return and its taste stays for a long time on our
pallet.
Food pairing/serving : This wine can match dishes with red meat, like beef, as well as spicy
sauces. It can also be appreciated with cheeses of intense flavor. Decanting the wine will be
preferable an hour before the meal. Drink at a temperature of 16-18C.
