GENERAL SEVICE PROCEDURE


1. Lay out has already set

TABLE SET UP

Sebuah meja diatur dengan benar adalah kanvas


untuk makanan yang indah. Karna itulah table set up
diperlukan dalam mensetting meja makan menjadi indah.
Hal hal yang perlu diperhatikan adalah sebagai berikut:
Spasi: saat mengatur meja makan , pengaturan
tempat harus merata spasinya dan sendok
garpu harus seimbang. Mulailah menaruh pirih
terlebih dahulu pastikan jarak yang cukup
dengan cover yang lain.
Mengatur dengan panduan peralatan yang lain:
setelah piring sudah siap, dapat digunakan
sebagai penyeimbang sisa pengaturan peralatan
yang lain seperti gelas di samping kanan piring,
mentega dan salad sebelah kiri
Dasar penempatan: tempatkan peralatan pada
urutan penggunaanya, dari luar ke dalam. Mulai

dari bagian luar untuk hidangan pembuka


sampai bagian dalam untuk hidangan utama
Sendok, garpu dan pisau: garpu ditempatkan
sebelahkiri piring , pisau dan sendok sebelah
kanan piring
Serbet (napkin): harus terbuat dari kain dan
ditaruh di atas dinner plate atau di sebelah kiri
garpu
B&B plate: ditaruh pali pojok kiri untuk tempat
roti dan diatasnya di taruh batterspider
