atthetheatresomeonewouldhavetowashallofthedishesthatwereusedduringthedayina
bleach,soapandahotwatermixwithasponge,scouringpadandacleanragthismixthatwas

usedonthedisheswasalsousedonallsurfacesintheconcessionsstandareaincluding
microwaves,ovens,sodamachines,hotdogmachines,ICEEmachinesaswellasthepopcorn
machine.Thenextstepwasseparatewhichweactuallyhadlittleneedofatthemovietheatreasthe
serveditemsweresodifferentcommonsensetoldyoutokeepthingsseparateanyway.Likenacho
chips,hotdogs,cookies,churros,jalapeos,microwaveablepretzelsandmicrowaveable

hamburgers.WellIsupposewehadtouseseparateforthehamburgersandpretzelsbut
wehadtwomicrowavessonotreally.SeparatewasmostlyusedathomeIveseenmy
momwashacuttingboardandherhandsafterusingthemforrawchicken,thenaftera
sanitizeperiodusethecuttingboardforsausageorsalmonwithadifferentknifeor
whateverothermeatshewaspreparingathome.andsheneverusesameatcuttingboard
touseitincuttingvegetablesforfearofcrosscontamination.

Followingseparatewascook,weweretoldhowlongmicrowaveitemswhereto
goinforaswellastheheatandtimeforcookies,churrosandhotdogs.tomakesure
hotdogswerecookedtocompletiontherewasathermometerwewouldplaceinice
watertochillittozerodegreesthenuseittomakesurethehotdogshadreachedone
hundredandfiftydegreesfahrenheit.thentheywereplacedinthehotdogwarmerwhich
waskeptatonehundredfortydegreesthesameforchurrosandnachochipsintheir
individualdisplaycases.Alotofthefoodweprepareathomerequireseitherathree
hundredseventyfivedegreeorafourhundreddegreeoven.andwemostlycookonhigh
temperatureforthestovetopwiththeexceptionoffoodsthatrequirelowtemperatures
likeRiceroniforinstance.Ourcheckwasifitsstillbleedingkeepcookingorthe
temperaturecheckonturkey.
Aftercookcomesthelaststep,chill.Atthetheatreweweretoldwhat
temperaturestherefrigerator,freezerandminiaturefreezers(fridgeatfortydegrees
fahrenheitandfreezersatzerodegreesfahrenheit)weretobekeptat,atalltimesand
quizzedonitaswellasotherthingsforourcertification.Athomewenevertamperwith
therefrigeratortemperatureandwethawfoodincoldwater.

AlthoughIalreadyknewthefightbacstepsIdidntknowsomeoftheparticularsbehindit
hencewhyIscoredsolowonthefoodsafetysavvyquiz.InfutureIwillkeeptheansweersIgot
wronginremembranceandapplyittomyfoodsafetyprocedures.
