Tamarind Rice

Ingredients needed
Cooked Rice -1 1/4 - 1 1/2 cup
Tamarind - 70 grams
Oil - 50 ml
Cumin seeds-1 tsp
Fenugreek seeds - 1 tsp
Mustard seeds - 1 tsp
Urad dal - 1 tsp
Channa dal /Bengal gram - 1 tsp
Red chillies - 4 (break it into 2)
Turmeric powder - 1 tsp
Ginger garlic paste- 1 tb sp
Ground nuts handful
Red chilly powder- 1 tsp
Curry leaves few
Salt needed
Preparation
Cook rice in such a way that each grain are separate.
Soak tamarind in warm water (around 2 cups) and extract 2 cups of thick juice from it. Discard
the pulp.
Method
Heat oil and add the ingredients accordingly. Cumin seeds > mustard seeds> fenugreek seeds>
ground nuts>udad dal> chana dal> dry chillies> curry leaves.
When dals and groundnut turns golden brown, add the ginger garlic paste, red chilly powder and
turmeric powder. Now pour the thick tamarind extract, salt and let it boil on medium flame.
Switch off when it thickens and oil oozes out.
Now the tamarind paste is ready.
For mixing the rice
Spread the rice on a plate to cool. Mix it gently without breaking the rice.

Once it cools, add the rice into the tamarind paste. Mix well and keep it on low flame for
sometime. Serve.
You can as well store the tamarind paste for future use.
