P&D: Margarine and butter.
Both can be used as spreads on breads or biscuits or even in cooking to improve flavour. In this
modern age where obesity and terms such as good cholesterol and bad cholesterol are hot
topics, the question is margarine or butter, which is better for your health? was given as an
assignment to CAPE chemistry students. Through research, the students determined that the
degree of unsaturation in these products plays a role in the health consequences of using these
products. Plan and design an experiment to determine the degree of unsaturation in samples
of margarine and butter.
