ABSINTHE
Previously thought by most to be illegal in the UK and parts of Europe for many years.
The traditional method of diluting uses cold water, which is poured over a perforated spoonful of sugar
into a glass containing a shot of absinthe. The drink then turns into an opaque white as the essential oils
precipitate out of the alcoholic solution. Some people use it to stimulate creativity and to act as a
curative and aphrodisiac.
Dr. Pierre Ordinaire invented Absinthe in 1797 and Henri-Louis Pernod opened the first Absinthe
distillery in Switzerland and then moved to a larger one in Pontarlier, France in 1805. By the 1850s it
had become the favourite drink of the upper class. Originally wine based, this eventually changed due
to the blight in the 1870s on the vineyards, which forced manufacturers to base it with grain alcohol.
Everyone could now afford it.
The Bohemian lifestyle embraced it. La fe verte (the green fairy) as it became commonly known, was
most popular in France. Most days started with a drink and ended with lheure verte (the green hour)
as one or two or more were taken for its apritif properties.

ARMAGNAC
Armagnac is the oldest wine spirit produced in the southwest region of France in
Gascogny, distilled from grape brandy in a unique continuous single distillation process
in traditional copper stills known as Alembic Armagnacias.
The major difference between Armagnac and Cognac is the distillation process.
Armagnac is distilled once in a continuous copper still whilst Cognac is distilled twice.
Armagnac is often aged over 10 years, usually longer than Cognac.
Armagnac must be made from grapes and wines produced solely in the Armagnac
region of three districts: Bas-Armagnac, Tenareze and Haut-Armagnac. Most Armagnac
is produced by small estates which are run by families who pass along the artesian
secrets of distillation from generation to generation. The first production of Armagnac
goes back to the 14th Century according to the Armagnac National Association Bureau.
Distillation takes place during the winter season, often at the estate. It usually begins in
November and ends in February, it is then aged in oak barrels and stored in wineries, under
the supervision of the cellar master. Armagnac then gains its amber golden colour and
flavour from inside the barrel.

The gin and tonic is the quintessential mixed drink, the two liquids have
been perfect partners now for 150 years, when some enterprising Johnny
came up with a delicious way to ward off any deadly malarial mosquitoes
that may have been ruthlessly stalking him in the officers mess. And so the
G&T was born, in deepest, darkest sub tropical India, by mixing the barely
palatable quinine laced tonic waters with a healthy splash of mothers ruin.
Gin itself has been with us now for well over 800 years, when it started
life as a medicine in the Monasteries of Southern Europe, before
undergoing its long, and occasionally painful evolution to become the
much loved and highly regarded London Dry style we know today.
The monks had learned the art of distillation from the Moors during their
occupation of Southern Europe, and they thought of the process as 46
actual alchemy, that by reducing the liquid to its very purest form, they
were capturing the essence of nature itself. They called this distillate,
Aqua Vitae, meaning the water of life. And with this mysterious
potion, they combined their extensive knowledge of herbal medicine,
using natural plants and roots known to have beneficial and restorative
effects on the health to treat the ailments of the time. Juniper had long
been recognised as a diuretic, helping to cleanse the liver and blood. This
was why Aqua Vitae junipero was taken widely against the black death

during the 14th Century, and why the recipe spread throughout Europe.
It was also why the Dutch first started to imbibe Genever (after the
French for juniper). The story goes that in the 1600s, a Professor Sylvious
de la Boe wanted to help the Dutch settlers in the west Indies battle the
tropical fevers afflicting them. Whether it worked or not we don't know,
but they certainly got a taste for Genever, took it from the medicine chest
and put it into their drinks cabinet. The Netherlands was then an ideal
place for the spirit to blossom, as it was the epicentre of the worlds spice
trade, giving them ready access to all sorts of wonderful and exotic herbs
and spices to flavour their Genever.
And it was the Dutch too, who introduced gin to the English. When
English mercenaries fought alongside them in the 17th century, they took
great note of the courage the Dutch soldiers gained from drinking a
healthy measure of genever before going into battle with the French,
and so partook themselves of some Dutch Courage. So much did they
enjoy it, they took it home to Blightey with them, shortening genever to
plain and simple Gin.
So gin came to London, and found its future spiritual home. Gin caught
on really quite well, aided by some very liberal laws being passed about
distillation and distribution, at one point 1 in 4 houses in London selling
gin, and 1 in 10 actually making the stuff, production going from naught
to 20 million gallons a year by 1750, which was about enough for every
man, woman and child in London to enjoy 3 pints of cask strength
everyday. This massive consumption by the populace eventually led to the
government repealing the laws, in the cutely named, but extremely
unpopular Tippling Act, which drove up the duty on production. So as the
price went up on gin, consumption went down, though this was a good
thing in the long run, as the demand left behind was for a high quality
product. Enter stage left, London Dry Gin.

PRODUCTION : The two main classifications of gin are gin and distilled gin (or London Dry). If a label states the contents
of a bottle is gin, this means only that the liquid inside is a flavoured spirit of at least 37.5% ABV. But when it states distilled
or London Dry gin then the juniper and other botanicals have been distilled along with the spirit inside the still.
GIN : is produced by cold compounding or maceration. This means mixing neutral spirit with juniper and botanical flavourings,
essences or essential oils until the correct flavour profile is reached, then if necessary filtering and then bottling it.
DISTILLED GIN : There are a number of different methods of production, but they essentially entail the further distillation of
an already neutral spirit inside a pot still that now also contains the botanicals needed for that particular gin recipe. Most brands
will add the botanicals to the spirit in the main body of the still, so as the alcohol evaporates, it carries the desired flavours with
it, and they will be a part of the final liquid when caught and cooled outside of the still, though another way is to pass the alcohol
as a vapour through the botanical mix, which will give a much lighter, less complex flavour profile.

Steven Pattison, Craig Harper and Sean Muldoon have got together to
produce a gin of all gins. Although the process of ageing gin has
happened before, the decision to use a gin that is already in production
and a tokaji barrel is a first.

were tasted daily by both Sean and Steven. When the ageing process
was just right for the first batch the call was made to Craig to fly over
the following day to agree to the first bottling. Each bottle of Batch 1
was individually numbered and signed to guarantee authenticity.
After the first batch was bottled it was back to daily tasting for
both Sean and Steven to decide when the final batch was ready
to be bottled. Once again the call to Craig was made and his
arrival the following day completed the bottling of Batch 2.

Grappa is a fairly fragrant grape-based pomace brandy of between 40% and 60% alcohol by volume (80 to I Legni Aquavite Most de Fragolino
