I rarely eat out these
days, and its not the
only recession thats
driven me indoors, its

vegetarian, or a
fussy, awkward eater
as it still seems to be
viewed.
Vegetarian food, as with
all other food, comes in
waves and is driven by
trends, and in the case of
vegetarian food, the trends
are rarely good.
The first I remember back
in the 80s was the plate of
boiled vegetables,
sometimes with the
remnants of the recently
scraped-off meat still stuck
to the edges of the plate.
To hide the lack of
protein, and the fact that it
was just boiled vegetables,
it became known as a
medley of vegetables.
Next trend was the
vegetarian lasagne.
The only enticement in
this was guessing whether
it was going to be a hard
brick with curled up crispy
edges, or a slushy mess.
In the 1990s came the
vegetarian stir fry.
This again varies in style
from soup with some hard
vegetables floating in it to a
soggy unpalatable heap of
vegetables held together by
a sauce poured from a jar.
Today, its generally
something with goats
cheese in it, or wild
mushroom risotto.
As my wife is also
vegetarian, and likes
neither goats cheese nor

care if the mushrooms are
wild or tame, this is a major starter, my wife once got

Vegetarians rarely get a
choice in restaurants,
sometimes the person
taking the order will have to
check with the chef to see

too busy to cook.

A PROMINENT new-wave

tide of vegan shows
sweeping the UK and
hoping to boost his
business at the same time.
Gone are the days when large
operators like VegFestUK
cornered the market with huge
extravaganzas in London,
Bristol, Brighton and lately in
Glasgow. (See page 4)
Now a plethora of more modest
events have sprung up in Cardiff,
Sunderland, Walsall, Portsmouth
and Penarth - and that's just in
February.
There are a massive 78 more
planned all over the UK for the
rest of the year.
In an email to Friends'
Gazette, Aquapax boss, Neil
Tomlinson, who is pitched
daily, said: "For the ones I've
gone for, [Colchester and
Portsmouth], we're the exclusive
water provider and we're
supplying staff and volunteers to
keep them hydrated in style!"
AQUAPAX urges customers to
ditch the plastic in favour of its
individually packed paper
cartons.
At the London VegfestUK last
November the bright blue hand-
sized paper packs became

Marmite stays vegetarian
UNILEVER has snubbed
a bid to persuade it to
replace the words
100% vegetarian
with 100% vegan on
Marmite labels.
The petition launched
by food writer Tony
Bishop-Weston claimed
vegan has overtaken
vegetarian as a leading market trend.
But this month a spokesman for the food giant
confirmed Marmite was sticking by its vegetarian
credentials and the words 100% vegetarian
although disappearing would be replaced by the
European Vegetarian Union mark (see above).
As well as Marmite household favourites
such as Hellmanns, Flora and Knorr will bear
the Euro-veggie symbol.
A spokesman said: This is the first time
such a large collection of brands will be
covered by the EVUs scheme. The uniform
labelling means it will be easier and quicker
for consumers across the continent to identify
which of their much loved Unilever brands are
suitable for plant-based diets.
Biodegradable shoe hope
A PORTUGESE shoemaker who supplies
indie shops across Europe, including the
UK, is looking to make 100% bio-
degradable footwear.

relations despite a cooling
off in recent years.
Both leaders go under the
title Baba Ji, which in the
vernacular means

date back to the 1800s

up the Sant Mat system of

itself as a living faith and

Rosemarys

Marmalade
TRADITIONALLY a breakfast food,
marmalade can be eaten whenever
you like. A late night snack in front
of the tele, anytime on a digestive or
even in sandwiches to take to school
or on a picnick.
Usually made from strong Seville
oranges, orange marmalade, was
invented by the Scots by way of
Spain and Portugal. How come?
Well, according to legend a Spanish
ship was struck by a storm way back
in the 1700s and ended up in
Dundee harbour? What it was doing
there is anybodys guess.
The thing, though, is that it was
carrying a cargo of Seville oranges.
The cargo was sold off cheaply to
James Keiller, a down-on-his-luck
local merchant, whose thrifty wife
turned it into a preserve. Voila!
As to Portugal?
Well, there was already a
Portuguese desert made from quince.
These bitterish fruits were cooked
with honey and ended up as a sweet
pink paste, slices of which were
served after meals.
The Portuguese word for quince is
marmelo hence this sweet preserve
was, called, yes, youve got it
marmelada!

AN ELEPHANTS tusks
are both a blessing and
curse. Blessing because
they give a sense of
true majesty that lifts
these beasts above
other animals as well as
being of use for
everyday tasks.
A curse because mans
avarice for ivory has led to
the senseless slaughter of
hundreds of thousands of
these magnificent creatures.
One of the key differen-
ces between African and
Asian elephants is the tusks.
All African elephants,
male and female, have
tusks whereas only
some Asian males have
them. About 50% of Asian
females have short tusks
known as tushes which
have no pulp inside.
Usually in mammals
tusks are enlarged canine

are actually elongated
incisors and are essentially
no different from other
teeth.
One third of these incisors
is actually hidden from
view, embedded deep in the
elephants head.
This part is a pulp cavity
made up of tissue, blood
and nerves.

with an outer layer of
enamel.
Elephants tusks never
stop growing so some old
bulls display enormous
examples.
However, the average size
has decreased over the past
hundred years because
hunting elephants for their
ivory has resulted in the big
tusk gene becoming
increasingly rare.
