Baking Beans

Ingredients:

2 cups dry beans

Salt pork

Rind

sugar cup

cup molasses

Onion

Dry mustard

Hot water

Instructions:

1. Soak beans: Soak overnight and get them on to boil early in the morning. Place beans in a
bottom of the pan or pot with tight-fitting cover.

2. Mix salt pork, rind slashed, sugar, molasses, onion and dry mustard: Mix a six by eight-inch
square of salt pork with the rind slashed every quarter of an inch, a quarter of a cup of sugar, half
a cup of molasses, a large onion chopped fairly fine, and heaping teaspoonful of dry mustard.

3. Bake,then check: Cover tightly and put into a medium oven-about 350 degrees is right. They
should be in the oven by half past noon in the morning at the latest, and they should stay there
until supper time, which in our family is at six.
