A lot has happened at PreciBake: The ambitious young company has been able to
welcome a range of cooperation partners consisting of renowned original equipment
manufacturers (OEMs) over the past year. As a result, PreciBake systems, such as the
Virtual Baker and the BakeIT Cloud are now available with even more ovens of different
manufacturers. In this context, the configuration for the BakeIT Cloud, a cloud system
with easy-to-understand display options and a comprehensive analysis tool for a wide
range of baking processes, was also expanded. The BakeIT Cloud can collect and
exchange data from different baking equipment and manufacturers across the entire
process chain. In the age of hypermobility, this unique service now makes managing
processes down to the last detail possible regardless of the location, explains Laura
Horstmann, who founded PreciBake at the end of 2012 with Dr.-Ing. Ingo Stork-Wers-
borg. This step was necessary, since bakeries usually work with many different ovens
at different locations. Now, theres nothing standing in the way of setting up an extensi-
ve network for ovens and baking lines, says Horstmann. In addition to the Virtual Baker
and the BakeIT Cloud, PreciBake has also started to offer the PB Connect and Virtual
Quality Officer this year. With the latter, PreciBake can now monitor the entire produc-
tion line and thus the pre- and post-production steps involved in the baking process.
The Virtual Quality Officer is a process computer that flexibly brings together diffe-
rent sensors with machine learning algorithms. In this respect, the user serves as an
instructor to the learning system that helps with conducting a range of analyses during
the dough-making process and recognizes fluctuations in quality ideally in advance,
explains Dr.-Ing. Ingo Stork-Wersborg, CTO and co-founder of PreciBake. The support
system can also be used with fermentation processes, conveyor belts, and robots while
also supporting producers in ensuring the desired quality. Launching a Virtual Quality
Officer is a multi-faceted solution that can be tailored to every customers individual
needs. That helps us to specifically address the customers challenges on-site and
optimally use the Virtual Quality Officer in a cost-saving manner to achieve individual
goals such as quality assurance, an increase in productivity, energy management, or a
reduction in workloads, adds Thomas Bone, Managing Director of PreciBake GmbH.
Processes can be continuously optimized and unnecessary costs avoided thanks to the
Virtual Quality Officer invented by PreciBake.

Virtual Baker:
The Virtual Baker is an additional option for ovens that lets cus-
tomers automate oven controls and bake products according to
their needs. Using Artificial Intelligence, the system recognizes
which baking goods are fed into the oven and in which quan-
tities, selects the right baking program, and can react to diffe-
rences in processes. The Virtual Baker learns the customers
desired baking process and then assists to ensure individual
quality standards and easy oven operation.
Virtual Quality Officer:
The Virtual Quality Officer is an intelligent process monitoring
and automation system for industrial customers that monitors
baking lines with respect to relevant parameters such as size,
shape, consistency, or color of baked goods. If an error occurs,
the system alerts the user, thus preventing wastage and mini-
mizing costs. In addition, the support system can also be used
with fermentation processes, conveyor belts, and robots.
PB Connect:
PB Connect is a data hub that connects baking equipment to
the BakeIT Cloud. As an add-on product, PB Connect can be
affixed to the oven and send relevant data such as temperature
curves or baking times to the BakeIT Cloud. Thus, PB Connect
lets bakers use the process monitoring and analysis features
of the BakeIT Cloud without the necessity of having PreciBake
sensors.
