FRIED CHICKEN ala MAX's

Ingredients :
1 whole chicken (you can cut into 2 to 4 pcs for easy deep frying)
4 cloves garlic
Salt and pepper
Patis
2 stalks lemongrass
4 bay leaves
Peppercorns
Canola oil for deep frying
optional : celery,cilantro
Procedure :
1.Pound the lemongrass.Make sure to get the juices out.Rub it on the chicken.Mince
the garlic and mix it together with patis,salt and pepper.Rub it on the chicken.Slip
more of the mixture under the skin.
2.Throw in some bay leaves,peppercorns,lemongrass (or any herbs and spices to
add more flavor) in a steamer with water.Steam the chicken for 30 mins.Pat dry with
paper towels.
3.Deep fry the chicken until golden brown.
4.Serve hot with camote fries and Jufran banana catsup.
