Caesar Salad

Salad

Romaine Lettuce
Cherry Tomatoes (oven dried)
Brown Anchovy fillets (in oil canned)
Pecorino Cheese Shavings
Herb Focaccia

Focaccia Bread with herbs

Flour 400g
Yeast 1.5g
Salt 12g
Water(40C) 200g
Sugar 10g
Virgin Olive Oil check
Honey 4g
Poolish 400g

Method

1. Preheat your oven to 200C


2. Knead all ingredients for 8-10 in kitchen aid, remove and finish off on the bench.
3. Bulk Proofing for 3 hours bench fold after each hour.
4. Place in the baking tray with olive oil and final proof for 45 minutes
5. Place into oven and bake until golden brown

Caesar Dressing

Parmesan 250g
Whole egg 7
Sherry vinegar 20g
Red wine vinegar 20g
White balsamic dressing 30g
Mustard 25g
Anchovy fillets 50g
Garlic 10g
Parsley 25g
Lemon 40g
Vegetable oil 1.8L
Seasoning to taste
Boiling Water 200g
