Sprouted Moong Khichdi

Sprouted Green 1 1/2 cups

Rice,soaked--------------------- 1 cup

Cumin 1 teaspoon

Cinnamon----------------------- 1 inch stick

powder---------------------

Black 1/2 tablespoon

peppercorns,crushed--------

Green 3-4

chillies,slit---------------------

Carrots,1 inch 2 medium

pieces----------------

Cauliflower,cut into 1 small

Salt-------------------------------- to taste

Method
Heat ghee in a non stick pan and add cumin seeds. Stir-fry over high heat till
they change colour.

Add cinnamon, turmeric powder, crushed peppercorns and green chillies and
stir-fry for a while. Add the carrots and cauliflower and mix well.

Drain and add the soaked rice and salt to taste, stir briefly and add two and
half cups of water. Bring the rice to a rapid boil, add the sprouted moong,
reduce heat and simmer for fifteen to twenty minutes, stirring frequently or
until the rice is lightly mashed and completely cooked. Serve hot.
