Optimal temperature is the temperature at which an enzyme exhibits its maximum

activity. Adding more heat does not only mean that it raises its maximum activity. It will
only work at a certain extent, thus the optimal temperature was established. Once the
sample exceeds its optimal temperature, denaturation will occur. Meanwhile, being too
cool will not allow the enzyme to react. The highest point at the graph will be interpreted
as its optimal temperature since it represents the highest absorbance that shows
maximum activity with a given temperature. With the graph erwerewrwerwerwerwerwer,
it is shown that the 90 degree Celsius temperature gave the highest activity for the
invertase.
