Roast Chicken and Vegetables

2 medium chicken breasts, chopped


1 cup chopped capsicum
onion, diced
1 zucchini, chopped
1 cup broccoli florets
cup chopped tomato
2 tbs olive oil
tsp salt
tsp pepper
1 tsp Italian seasoning
Preheat oven to 250C
Chop all the vegetables into large pieces
On a separate board, chop the chicken into cubes
Place the chicken and vegetables onto a baking sheet and add the oil and
seasonings. Toss to combine
Bake for 15 minutes, or until the chicken is cooked and the vegetables are
charred. Serve with bread, rice, or pasta

Spaghetti Bolognese
500g mince 1 tin diced tomatoes
1 onion, diced 1 tin tomato soup
1 clove garlic, minced Large pinch Italian herb mix
Brown onion, then add mince and brown, breaking up as you go
Stir in garlic when mince if fairly brown
Stir in diced tomatoes and tomato soup, and add Italian herbs
Simmer 30 minutes, or until thickened
Serve with pasta and vegetables
Quick Lo Mein
Sauce Lo Mein
1 tbs soy sauce 150g uncooked ramen noodles
1 tbs sweet soy sauce 1 tbs sesame oil
1 tsp sesame oil 3 shallots
1 tsp sugar 2 3 cups chopped vegetables
1 1 tbs mirin
Sauce: Shake all the ingredients
together in a jar
Noodles: Cook according to
directions
Vegetables: Chop the shallots,
and separate the green parts
from the white parts. You can
use vegetables like carrots,
capsicum, bok choi, and broccoli.
Chop them in strips or thin discs.
To Cook: Heat the sesame oil in
a frying pan and fry the white
parts of the shallots, and the rest
of the vegetable until fork tender
(about 5 minutes.)
Remove from the frying pan and
add the mirin, stirring to remove
any brown bits
Return the vegetables, the
noodles, and half the sauce to
the frying pan, and stir to
combine. Add more sauce if you want.
Serve
Note: You can add cooked chicken to the meal if you want. Chop it up, and add
it to the frying pan with the noodles and sauce.

One Pan Chicken and Vegetables


1 head broccoli
3 carrots
3 tomatoes
8 small potatoes
1 tsp salt
1 tsp pepper
tsp minced garlic
tsp minced onion
2 3 tsp mixed herbs
1/3 cup olive oil
1 chicken breast, cut in half (or more)
Preheat oven to 200C
Cut the vegetables into small pieces, and put in a bowl with the chicken
Mix the seasonings and oil, then pour over the vegetables and chicken, and stir
to mix
Spread out on a baking tray, and bake for 35 40 minutes, or until the chicken
is cooked through

Savoury Mince
500g mince 250g frozen vegetables
1 onion, diced Several spoons of gravy mix
1 tsp minced garlic Water
Brown mince and onion in a frying pan
Add garlic, and cook for a few minutes more
Cook vegetables in a microwave (about 6 minutes) then add to the mince
Mix gravy mix in water, add to the frying pan, and cook until thickened
Serve with rice or mashed potato

One Pot Cream Chicken Bacon Pesto Pasta


6 strips bacon, chopped
2 chicken breasts, diced
2 tsp salt
1 tsp pepper
1 tsp minced garlic
2 onions
4 tsp minced garlic
150g spinach
1 litre milk
500g fettucine
cup pesto
1 cup parmesan
Fry the bacon in a large pot over medium-high heat until crispy, then remove.
You may need a little butter or oil to stop them from sticking too much.
Put chicken, salt, and pepper in a bowl, and toss to cover
Add chicken to the pot, and cook until you cant see any pink. Again, you may
need a little oil or butter.
Remove the chicken, and add the onion and garlic, and saute until soft (about 5
minutes)
Add spinach to the pot, and cook until wilted (shouldnt take too long)
Add milk, and bring to the boil
Add fettucine to the boiling milk, cover, and cook for about 7 minutes, or until
cooked
Return chicken and bacon to the pot, and stir in the pesto and parmesan
Chow Mein
500g mince 1 tbs minced garlic
2 rashers bacon, chopped 2 tsp curry powder
1 onion, diced cup water
cabbage, shredded 250g frozen vegetables
1 pkt chicken noodle soup
Brown mince, bacon, and onion in the frying pan
Add remaining ingredients, and cook on low for 1 hour, stirring frequently
Add water if required
Serve with cooked ramen or 2-minute noodles

Curry Sausages
1 cup rice Gravy mix
500g sausages Water
1 onion, diced 250g mixed vegetables
Curry powder
Boil water for rice, then add rice to boiling water
Cook the sausages, then remove the sausages
Brown the onion (add butter or oil if necessary)
Add a couple spoons of curry powder to the frying pan, and cook the spices for
a few minutes
Mix a few large spoons of gravy powder with water, then pour into the pan
with the curry powder
Cook the vegetables in the microwave (about 6 minutes)
Cut the sausages if you want, then add the sausages, onions, and vegetables to
the sauce
Drain and rinse the rice, and add to the curry
Bangers & Mash
500g sausages Milk
1 onion, diced Butter
Gravy powder & water Cheese
4 large potatoes 250g frozen vegetables
Peel and dice the potatoes, and cook in boiling water for 10 15 minutes
Cook sausages until brown, then remove
Saute onion until clear (add butter or oil if needed) then remove
Mix gravy powder in water, then cook in frying pan until thickened
Return sausages and onions to frying pan
Drain cooked potatoes, then return pan to hotplate and pour milk in
When milk is hot, remove from the hotplate and add butter
Mash the potatoes, then stir in cheese
Cook vegetables in the microwave (about 6 minutes)
