VEGETABLE BIRYANI

Ingredients
2 cups rice
cup lentils
1 onion sliced
2 potatoes halved
1 tomato chopped
2 tbsp masala
2 tsp biryani masala
2 tsp garlic and ginger paste
1 green chilli
2 cinnamon sticks
2 bay leaves
1 cups mixed vegetables
2 tbsp butter or ghee

Method
1. Add 2 tbsp. and butter in a pot then put in onions to fry until light brown.
2. Add in cinnamon sticks bay leaf and saut
3. Add ginger garlic paste and green chilli.
4. Add masala and allow to fry for 1 minute, add in tomato, mixed vegetable, potatoes and
salt to taste
5. Stir well and add in water little at a time until potato and vegetables are cooked
6. Boil rice and lentils together and when rice is cooked and strained, add 1 tsp egg yellow
colouring
7. Add the cooked rice to the pot of cooked biryani mixture and garnish with fried onions
chopped mint and coriander leaves
8. Cover and steam for 15 minutes.
9. Serve with raita sambals and carrot salad
