MANGO CHEESE CUSTARD

Sponge:
White egg 4 no
Sugar 200gr
Almond powder 260gr
Cook in oven 200C for 15 minutes
Mango cream:
Cream cheese 300g
Sugar 150g
Gelatin leaf 3 no
Lemon juice 2 no
Mango coulis 300g
White egg 300g
Sugar 100g

- Combine sugar & mango coulis in a bowl. Heat up & whisk until the
sugar is all dissolved.
- Add in to the mango coulis the gelatin & melt it
- Beat the cream cheese in a food processor
- Add mango coulis to the cream cheese & continuing beating until it
becomes a smooth puree
- Whip the white egg & sugar like Italian meringue
- Fold the meringue to mango
- Arrange mango custard in a mold & chill
