1 cup frozen peas, thawed
COURGETTI WITH PESTO AND CALAMARI
(soak in 1 to 2 cups just-boiled
water for a few minutes and
then drain)
1 tbsp chopped fresh mint
2 tbspraw almonds,
roughly chopped
2 tbsp freshly grated
Parmesan cheese
3 to 4 tbsp extra-virgin
olive oil
Zest of lemon
Juice of 1 lemon
1 clove garlic, chopped
tsp natural sweetener
(honey or agave)

CALAMARI
500g fresh calamari rings
1 tsp dried chilli flakes
Salt and freshly ground
black pepper
1 tbsp extra-virgin olive oil
500g courgette noodles
(or wholewheat or gluten-
free linguine)
Shavings of Parmesan,

by blitzing together all
ingredients and check for
seasoning. Loosen with

tablespoons hot water, if
