Kulitis (Spinach) Pasta/ Noodle
Introduction
In a country wherein 95 million inhabits, a struggling government mired with inconsistencies with its
policies, the citizenry are left to fend for themselves. Having such moral and practical dilemmas, the
importance of nourishment and capability building is of use to the fulfillment and transcendence of their
basic needs towards the empowerment of the under privileged. The whole idea of starting the
production of the Saluyot- squash pasta/ noodle targets 2 basic needs of the community—nourishment
and capability in acquiring such need. It is thus stressed that the production of the pasta noodle should
be spear headed by the families themselves which will (latently) manifest improvement of their well
being.
This approach is a gambit for it realigns the traditional investigative project as another aspect is
added to the framework—that of the social impact which science could no longer ignore. Thus, another
area is addressed with this project which is of giving a different perspective to scientific investigative
projects. The proposal aims not just to affect lives of the immediate participants but also to experiment
on the formulations of solutions as guided by the scientific method. Such exploration would add to the
body of knowledge in terms of methodology and presentation of conclusions.
The project will use a multi sectoral approach—the stakeholders working towards the goal of
researching ways on combating malnourishment and the ways on uplifting the well being of every
individual guided by the family—and will work on various levels of knowledge—inputting the scientific
method of replicability and sustainability, social investigation and analysis, possible policy framing as
part of the proposals recommendations, and community development.
To complement the 2002 study of the FNRI (Canton Noodles with Saluyot), the group proposes
to use Saluyot- squash pasta/ noodle as a supplement for under nourished children. Veering away from
the ‘instant noodle’ proto type, the group will package the build on the noodles freshness, its nutritive
value and its taste. The proposal will also center on how the product would serve as a one of the
parents’ source of livelihood wherein they will be involved in the production process. This involvement
allows a number of engagements from multiple sectors—the group and the proposed program, the
children, the parents, the mentors, the schools.
