The Fortune Group of Hotels A Praveen Shetty Group.

Dubai is a region where visionary leaders continue to push the boundaries and every year, reach new
heights in their quest to transform it into global destinations with distinction. Leveraging its favourable
geographical location, Dubai brings the world to its doorsteps.

Fortune Group of Hotels a privately-owned entity is one of the emerging hotels in Dubai in
hospitality industry. It started the first hotel in 2001 under the enterprising leadership of Founder
Chairman Mr. Praveen Shetty, who is now spearheading the Groups unprecedented expansion plans.

Fortune Group of Hotels consists of 8 hotels and 2 of the projects are in development stage.

1. Fortune Park Hotel

A Boutique Hotel, designed by famous Reza Kabul an American Architecture is located in the
Dubai Investments Park (DIP) amid the bustling vicinity. Designed to instil a perfect balance of
rejuvenation and calm, the contemporary interiors of the boutique hotel set an exclusive
identity for the property. Having created a personal characteristic in lively ambiance of DIP
gives it a unique identity. Its proximity to the new Al Maktoum International Airport, the Jebel
Ali Free Zone Authority (JAFZA), and the Expo 2020 site makes it an ideal option for both
business and leisure-travellers.

This Boutique Hotel hosts a mix of Executive Suites, Junior Suites, Double Rooms (14 per floor),
Twin Rooms and special arrangements are also made for physically disabled guests are

It is the group`s signature restaurant. Catering variety of delicacies from India and China, this fine

2. Freddys-Restro Caf

Located at Fortune Park Hotel, Dubai Grand Hotel by Fortune, Fortune Karama Hotel & Fortune

place in Dubai. It offers both pub grubs and multi-cuisine main course. A 40 feet long bar is very

Objective

To identify the existing supply chain model of the Grand Fortune Group of Hotels. To learn about
the planning, operations and procurements strategies and procedures. To compare these existing
procedures with the best practices existing in the hotel industry and come out with the best and
cost-effective techniques that can be incorporated to the existing business model to enhance the
current performance and having a positive impact in the bottom line of the business.

Methodology

The project will commence with literature survey about the hotel industry round the globe and
about the hospitality industry in Dubai. Primary data related to operations, planning, material
procurement, planning and management will be collected from the concerned departments of
the Fortune Group. Marketing and Sales will be analysed by looking at the past financial
statements. The project will also focus on the current Vendor management practices.

The data collected from both primary and secondary research will be used to do a thorough
analysis using frameworks which are as follows: -

1. PESTEL Analysis

A concept in marketing principles used as a tool by organizations to track the environment theyre
operating in thus helping them to plan the launch of new project/product/service etc.

PESTLE is a abbreviation which expands to P for Political, E for Economic, S for Social, T for
Technological, L for Legal and E for Environmental. It gives a birds eye view of the whole
environment from many different angles that one wants to check and keep a track of while
contemplating on a certain idea/plan.

3. Kraljic Portfolio Purchasing Model

The purpose of this framework is to help purchasers to maximize supply security and reduce
costs, by making the most of their purchasing power. By having the upper hand ovr the
suppliers, procurement moves from being a transactional activity to a strategic activity
because, as Kraljic said, "purchasing must become supply management." The model involves
four steps:

Purchase classification.
Market analysis.
Strategic positioning.
Action planning.
Supply risk is high when the item is a scarce raw material, when its availability could be
affected by government instability or natural disasters, when delivery logistics are difficult
and could easily be disrupted, or when there are few suppliers.
Profit impact is high when the item adds significant value to the organization's output. This
could be because it makes up a high proportion of the output (for example, raw fruit for a
fruit juice maker) or because it has a high impact on quality (for example, the cloth used by a
high-end clothing manufacturer).

4. A.T. Kearney Purchasing Chessboard

5. Value Stream Mapping (VSM)

A special type of flow chart that uses symbols known as "the language of Lean" to depict and

lean.
