Hong Kong Whole Wheat Egg Tarts

Ingredients
Whole Wheat Flour 1 cups
Salt 1/8 tsp.
Sugar cup
Unsalted Butter 16 Tbs.
Eggs 3 Large
Evaporated Milk cup
Vanilla tsp.
Hot Water 1 cup
Cold Water 2 Tbs.

Preparation:
1. In a large bowl, combine flour, salt, and one tablespoon of sugar. Mix.
2. Add the butter and break it up into chunks with your fingers. Make sure to leave some chunks in
the dough.
3. Add the cold water and fold the dough together. You can add more water if needed, but make
sure that the dough does not get watery.
4. Cover and refrigerate for 20 minutes.
5. Remove dough from refrigeration and knead it gently on a lightly floured surface.
6. Roll the dough out until you form a rectangle that is about 8X20 inches. (Dont over work the
buttery sections, they should still be visable in the dough)
7. Once the dough is rolled out, fold the top third of the dough to the center and then fold the
bottom third up. Refrigerate this for 30 minutes.
8. While the dough is chilling, dissolve the sugar in the hot water and allow it t cool to room
temperature.
9. Whisk the eggs, evaporated milk, and sugar water mixture together. Then mix the vanilla in.
10. Run this mixture through a very fine mesh to remove any bubbles.
11. Preheat the oven to 400 degrees F. Roll out the dough and cut circles in the size of your tins.
12. Fill each shell until the mixture is almost to the top of the shell.
13. Transfer the filled shells into the oven carefully, making sure not to spill the filling.
14. Bake for 10-12 minutes. To check if the tarts are done, stick a toothpick in and make sure it can
stand upright.
15. Allow the tarts to cool a couple of minutes and enjoy!
