August 2 week Rotational Meal Plan

Saturday (S1)
Breakfast: Eggs
Dinner: Arrachera w/ roasted vegetables, Italian pasta salad.
Light meal: Quesadillas w/ green salad
After Mass Snack: Leftover Baked Goods from Week before. Milk.
*Reserve some roasted vegetables for Paninis on Sunday. Soak grains for coffee cake.

Sunday (Su1)
Breakfast: Coffee cake, Breakfast Casserole.
Dinner: Lasagna, salad, flan
Light meal: Roasted vegetable and cheese Paninis w/fruit.
After Mass Snack: Coffee Cake (leftover from breakfast).
*Make two lasagnas and freeze one for next week. Soak rice. Soak flours for baking.

Monday (M1)
Bake Blueberry Muffins, and Oatmeal Cookies.
Breakfast: Oatmeal.
Lemon Spice Chicken Breasts, Rice, Roasted Asparagus, Salad
Light meal: leftover lasagna w/fruit
After Mass Snack: Blueberry Muffins (6)
*Make chicken stock for Cream of Broccoli Soup and Mexican Soup, Soak beans. Soak flour for biscuits
(enough for the month)

Tuesday (T1)
Breakfast: Eggs.
Hamburgers, fries, watermelon.
Light meal: Cream of broccoli soup w/biscuits (12)
After Mass Snack: Oatmeal Cookies and Milk (12)
*Brown extra ground beef and spice it for taco salad later. Cook beans and freeze some for chilli next
week. Soak rice.

Wednesday (W1)
Breakfast: Smoothies and Peanut Butter French Toast.
Red Snapper w/ black beans and Mexican Rice Casserole, salad
Light meal: Taco salad.
After Mass Snack: Quesadillas.

Thursday (Th1)
Breakfast: Oatmeal.
Dinner: Enchiladas, refried beans, salad.
Light Meal: Vegetable Soup w/ cheese and biscuits.
After Mass Snack: Biscuits w/honey (6). Milk.
Friday (F1)
Breakfast: Eggs
Dinner: Salmon in Saffron Cream Sauce, mashed potatoes, spinach
Light meal: Tuna Sandwiches w/chips and salsa
After Mass Snack: Oatmeal Cookies (12), Milk.

Saturday (S2)
Breakfast: Blueberry Pancakes, Bacon.
Dinner: Arrachera, Salad, Leftover Soup, Chips w/bean dip.
Light Meal: Quesadillas w/ leftovers.
After Mass Snack: Zucchini Bread. Milk.
*Defrost Lasagna.

Sunday (Su2)
Breakfast: Coffee Cake, Breakfast Casserole.
Dinner: Lasagna, salad, flan.
Light meal: Leftovers.
After Mass Snack: Flan.

Monday (M2)
Breakfast: Eggs.
Dinner: Baked (or BBQ) breaded Chicken breasts w/stuffed potatoes, broccoli.
Light meal: Leftover lasagna, salad.
After Mass Snack: Blueberry muffins (6), and milk.
* Make Chicken Stock. Soak grains for yogurt herb bread. Make Oatmeal Cookies. Soak oatmeal for a.m.

Tuesday (T2)
Breakfast: Baked Oatmeal
Dinner: Burritos, fruit.
Light meal: Vegetable Chowder w/ Yogurt Herb Bread.
After Mass Snack: Zucchini Bread, Milk.
*Soak rice. Take Salmon out to defrost.

Wednesday (W2)
Breakfast: Eggs.
Dinner: Teriyaki Glazed Salmon, Rice, Ginger Stir-fry veggies.
Light meal: Special Rice
After Mass Snack: Quesadillas, Lemonade.
*Soak rice. Defrost beans and chicken stock.

Thursday (Th2)
Breakfast: Zucchini Bread, smoothies, hard-boiled eggs.
Dinner: Chicken Chilli w/rice and fixings. Ice cream for dessert.
Light meal: Quesadillas.
Snack: Oatmeal Raisin Cookies (12), Milk.

Friday (F2)
Breakfast: Oatmeal
Dinner: Pasta Primavera, Fried Panela Rounds w/marinara.
Light meal: Salad w/ leftover chilli.
Snack: Blueberry Muffins (6), Banana Smoothies.

Baked Goods
Blueberry Muffins (2 dozen)
Oatmeal Cookies (doubled 3 dozen recipe- to allow for larger cookies)
Zucchini Bread (2 loaves)
Biscuits (2 dozen)
Yogurt Herb Bread (2 loaves)
