Hausa Recipes: Fankasau

“Little pan cake”

Ingredients:
1. 2 cups flour
2. 2 tablespoon yeast
3. 1 tablespoon salt

Method:
Put yeast in warm water to soak put flour in a wide bowl for easy mixing add
yeast-water and salt keep mixing (or massaging with your hand) while adding
water--little by little the mixture should be neither thin nor thick--but
something in between leave it in a warm place (room-temp.) To rise. *Note:
it’s best that if you want to cook it in the morning that you mix it and leave
it the night before.

When enough time has elapsed, beat the mixture (best with your hand) for
about 1 minute or until well beaten then take small portions of it and spread
them with your hand (one-by-one) over the back of a small wet plate or
round object----or you can just open it up with your hand then carefully put
it in the oil and cook till browned. Be careful because the oil is very hot and
it burns quickly!

Hausa Recipes: Waina
“Rice patties”

Ingredients:
 1 Cup Rice
 1 Cup Rice flour
 1 Cup yogurt or sour cream
 2 Teaspoons yeast
 ½ Cup water

Method:
Boil rice until fully cooked and sticky. Mix in rice flour, and
yogurt/sour cream. Mix yeast in a little hot water and add to
mixture. Make sure mixture is completely blended together and
not too watery. Cover and keep in a warm place for about 2 hours
or until mixture has risen. Pour pancake-sized amount into a
lightly glazed, heated griddle (or small frying pan) and cover. Flip
over after top has begun to bubble. Waina is done when nicely
browned.
