Farewell to Paddy
There is movement within the Staff Ranks. Paddy, our favourite Irish Waiter
has headed home for Ireland for a family reunion. We wish him all the best
but will miss him terribly. It is never great when you lose one of the Pipi’s
Family members and Paddy will now & forever be a part of our Hot Pipis
Family. On the upside, we welcome Matt to the kitchen team. Matt brings a FAREWELL PADDY......

7.2 lt coconut cream 200gm red curry paste
100gm Garlic, crushed 200gm tomato paste
100gm Ginger, crushed 200ml of fish sauce
6 Lemon Grass Sprigs 200gm raw sugar
12 Kaffir Lime Leaves 3 large brown onions, diced
1 cup (250ml) Lime Juice 1 Bunch Coriander
½ cup Tamarind Paste Snow pea Sprouts for Garnish

Method...
Sauté off onions.
Add red curry paste and cook out until it splits.
Add tomato & tamarind paste and cook out until that also
splits.
Deglaze a pan with fish sauce, Garlic, Lime leaves & Ginger.
