Bread Pizza

Ingredients
 4 pieces Bread
 1 Cup Malai
 ½ tsp Chilli Powder
 1 Onion
 Oil, salt
 1 Tomato
 2 pieces Mirchi
 Corriander Leaves

Directions
1. Take a bowl mix malai in it.
2. Mix grated onion, chilli powder, cut mirchi, fry tomato, salt, coriander leaves in it.
3. Make a thin paste of it.
4. Apply the paste on only one side of bread.
5. Put the bread on tava and put oil in it.
6. After 2 min,turn the bread,see that the paste do not remove from it.

Bread Poha

Ingredients
 1 Onion (medium sized)
 1 Tomato (medium sized)
 few kadi patta's (curry leaves)
 1 green chilli (medium)
 ½ tsp rai (mustard seeds)
 Cooking oil to fry
 4-5 pieces of sliced bread
 1 tsp salt
 ¼ tsp red chilli powder, amchur powder, jeera powder
 ½ tsp garam masala
 Coriander leaves to garnish

Directions
1. Finely chop onion, tomato & green chili.
2. Sprinkle bread pieces with water (do not soak in water as the breads should not be too wet) so
as to make the breads soft enough to be made pieces of.
3. Now rub each bread piece between your palms to make small flakes (chooraa) & keep aside.
4. Heat oil in a pan & add mustard seeds. When they start spluttering, add curry leaves, chopped
green chili & onion.
5. Fry till the onions are golden & then add chopped tomato & add all the spices.
6. When the masala is cooked add the bread to the pan & fry for about 5 minutes.
7. Garnish with coriander leaves & serve hot with tea.

Grilled bread pizza

Ingredients
 8 bread slices
 1 cup fine chopped onion
 1 cup fine chopped green Capsicum
 1 cup fine chopped Cabagge
 1 cup fine chopped carrot
 1 cup ripe tomato pulp
 1/2 tsp Green chilly sauce,
 1 tsp tomato sauce
 Ground black pepper to taste
 salt to taste
 1 tbsp refined oil
 1 cup grated cheese

Directions
1. Heat oil in a pan. Add onion and cook till it becomes brown.
2. Add all chopped vegetables and cook for 4-5 minutes.
3. Add tomato pulp and cook for 1 minutes.
4. Add salt and black pepper to taste.
5. Mix chilly and tomato sauce. Cook for 2-3 minutes till it gets mixed uniformly.
6. Cut the bread slice into two triangular shape. Top the bread pi eces with this Veg mixture.
7. Spread grated cheese on the pieces and grill to light brown.
Baking time 3 minutes, Baking temp 180° C

Macroni

Ingredients
 1 cup macroni
 1 tbsp oil
 3 big onion
 3-4 tomatoes
 ginger in slices
 salt to taste
 green chilli
 1 chopped capsicum
 2-3 cloves
 1 tsp garam masala
 1/2 tsp sugar
 coriander leaves
 1 tbsp tomatoes sauce

Directions
1. Boil the macroni for 5-10 mins.
2. Take a oil in a pan.heat it for 2-3 mins.add onion, half of ginger in it. add salt and green chilli
to taste. now mix tomatoes in it and stir it.
3. mix capsicum and fry it.
4. Add boiled macroni in it and mix it well for 5 mins.
5. Add cloves. garam masala and sause and sugar in it.
6. Now pour coriander leaves and rest of the ginger for garnish, and macroni is ready to eat.

Macroni la mexicana

Ingredients
1 cup Pasta(macroni style)
½ kg Tomato
1 no. Onion
1 no. Bell pepper(chopped)
¼ tsp. Oregano(or ajwain)
Salt to taste
Red Chili Powder to taste
150 gms. Indian Cottage Cheese
2 tbsps. All Purpose Flour
2 nos. Green Chilies(chopped)
1 tbsp. Coriander leaves(chopped)
1 pinch Baking Soda
2 tbsps. Raw Cream
2 tbsps. Cheese(grated)
1 tbsp. Lime juice

Directions
1. Wash and Blanch the tomatoes.
2. Remove skin and chop them.
3. Heat 3-4 tablespoon of oil. Fry onion and capsicum. Add tomatoes and other ingredients
except macroni.
4. Cook for 5 minutes. Add macroni. Again cook for a few minutes.
FOR PANEER BALLS
Mix paneer, maida,salt to taste, green chillies chopped, coriander, soda .Make small balls and deep fry in
oil.
FOR SOUR CREAM
Mix cream,grated cheese and 1 tbsp. lemon juice.

Finally, spread the macroni mixture in a greased baking dish. Layer with paneer balls. Spread the sour
cream. Sprinkle grated cheese and bake for 12-15 minutes at 180 degree centigrade.

Pau Bhaji

Ingredients
 Two cans of petit diced tomatoes (14 oz each)
 Two small boiled potatoes (mashed)
 One green bell pepper
 One big Onion (chopped)
 Three cloves of garlic ( minced)
 One cup of chopped carrots
 One cup of Peas
 4 tsp. of Pau Bhaji Masala (MDH recommended)
 1 tsp. of Red chili powder
 Salt to taste
 2 green chilies (chopped)
 3 tsp. Extra Virgin Olive Oil/Vegetable Oil
 2 tsp. butter
 2 cups of water.
 10 buns cut in half with butter on one side. (2 whole buns for family of four)

Directions
1. Puree Tomatoes and keep it aside.
2. Heat Oil in non stick pan and throw onions inside the pan.
3. When onions are golden brown add all the vegetables (Green Pepper, Peas, Carrots)
4. When veggies are turning light golden brown add tomato puree and stir till oil leaves sides of
the pan.
5. Simmer to medium low and add mashed Potatoes.
6. Stir and close the lid let it simmer for five minutes till we prepare the mas ala to go in this pan.
(You must close the lid, as soon as the potatoes are added tomatoes puree will be jumping and
dirty your stove top).
7. Take another small non stick skillet / pan and heat 2tsp. of butter or Oil
8. Add minced garlic and green chilies.
9. Add Salt, Red Chili Powder and add Paubhaji masala and add one tsp of Tomato puree from
another pan.
10. Now add this garlic masala to main pan.
11. Add two cups of water.
12. Let it simmer on low heat for 15-20 mins till color is red-orange.
13. Till the Bhaji is ready heat the bread buns and chop one onion.
14. Now serve it hot to your family their favorite dish from your kitchen. I am sure they will ask
for more.

Pav Bhaji

Ingredients
8 nos. Dinner Rolls
1 no. Tomato(chopped)
3 nos. Onion(chopped)
1 no. Bell pepper(chopped)
1 cup Potato(chopped)
1 cup Vegetables(cauliflower, carrots etc., chopped)
½ cup Peas
2 tsps. Spice Mix for Pav Bhaji
1 tsp. Chili(powder)
¼ tsp. Turmeric(powder)
½ tsp. Ginger(grated)
½ tsp. Garlic(crushed)
½ no. Lemon
pinch Cilantro(to garnish)
Salt to taste
pinch Vegetable Oil(to shallow fry)

Directions
Set aside 1 chopped onion for garnishing. Cook mixed vegetables, potatoes and peas in a pressure cooker. Don't
add too much water while cooking. After the vegetables are done, drain and mash them coarsely. Heat butter (or
oil) in a pan and fry onion and ginger/garlic. When onions turn translucent, add bell peppers and tomatoes.
Continue frying till it turns soft. Now add Pav Bhaji Masala, chili powder, turmeric powder, salt and fry for
another couple of minutes. Now you can add the mashed vegetables. Turn up the h eat and continue stirring till
everything is well incorporated. Take off the stove when the bhaji is thick. Cut Pavs in half horizontally and
lightly coat it with butter. Roast them on hot griddle just before serving. Garnish Bhaji with chopped coriander
leaves, chopped onions and a thin wedge of lemon.

Pizza - all home made

I get huge number of question from khanakhazana readers about making Pizza at home. Buying a pre -
fabricated pizza base from the market is not my idea of cooking either. Hey, if you w ant to get 1/2 of the
Pizza from outside, why all the fuss, go ahead and just order delivery.
But, if you are one of those who spends some quality time in your kitchen, this is for you! One more thing,
I think there are at least a million different varieties of pizza and pizza crust out there. So, it is an absolute
delight to personalize your pizza, just the way you want it. Be creative, let it flow
I will share a basic dough method. It is easiest to make in a food processor or bread maker. However, go
ahead and make it by hand. There's just a lot of mixing and kneading that way, but then you bond with
your food, don't you?. Feel free to add ingredients to the dough to make it more interesting. I've often
added chopped garlic, Dill (सोवा) and coriander leaves (ध नया).
What you need: Combine salt and flour. Dissolve the yeast in warm water; let sit for 10 minutes.
 3 cup flour Water should still be warm when you add the oil, honey, water, and yeast
 1 teaspoon salt mixture to the flour.
 1/4 cup warm The dough should turn into a ball. If the dough does not ball up because it's too
water dry, add water one tablespoon at a time until it does. If your mixture is more
 1 package dry like a batter, add flour one tablespoon at a time. Adding water or flour as
yeast needed to get the right consistency will assure you always get a perfect dough.
 2 tablespoons Just remember to do it in small amounts.
olive oil
 1 tablespoon
honey
 3/4 cup water

Place the dough ball on a floured board and knead for about a minute. This
builds the gluten which helps the dough to rise and become fluffy when cooked.
Put the dough in a plastic grocery bag or a covered bowl and store in a warm,
dry area to rise.

After about 45 minutes the dough should have about doubled in size. Show it
who's boss and punch it down. That's right, give it a good smack so it deflates.
Let it rise for another hour to an hour and a half. The dough is now ready to be
rolled out. You can punch the dough down one more time if you want and wait
another hour or two before rolling out. The choice is yours.

One mistake most people make when working with dough is not using enough
muscle. I tell people that is actually an opportunity for a nice exercise of your
hands. You can't really damage the dough so don't be afraid. When working
with dough, use plenty of flour, but don't let it get too dry. It should be fun to
work with, not too sticky and not too crumbly.

Using both hands, one on top of the other, press from the center outwards on it
to start stretching it out, turning the dough a bit on each push . You can also pick
up the dough and squeeze the edges of it while turning it like a steering wheel.
This allows the weight of the dough to stretch it. Once the dough is about 1/2"
thick all the way around, use a rolling pin to flatten it out to about 1/4" thick
and make it even.
Take a fork and put puncture holes all over the dough. This keeps it from
bubbling up while cooking and it also helps to hold the sauce on as well.
Phew! now you are almost there. All you need to do now is to spread the sauce,
add cheese and your choice of toppings, and bake at 400 F till the crust is
golden.

Poha

Ingredients
 Chiwra (Flat rice)
 1 Onion
 1 tbsp Coriander leaves (chopped)
 1 Tomato
 1 tsp Black Mustard Seeds
 6-7 leaves of Curry patta
 2 Green chillies
 ½ tbs Red chilli powder
 Salt to taste

Directions
1. Heat some oil in a Karahi and add black mustard seeds & chopped onions to it. Fry till the
onion turns pink
2. Add tomato to it & green chilly, red chilly powder mix it well. Add curry leaves
3. Wash Chiwra & soak it. Once the rice is puffed, drain all the water completely. You may
have to press it against a colander to drain it well.
4. Add Chiwra to the mixture. Continue folding it on high heat.
5. Garnish it with Coriander leaves

Potato Pizza with Green Onions

Ingredients
 6 large potatoes 6 large 2 ½ lb, 1 ½ kg
 75 gms Butter
 3 Onions (peeled and thinly sliced)
 50 gms Chicken (optional)
 Salt and pepper to taste
 Nutmeg or mace ground (a pinch)
 3-4 tbsp Spring onions (stalks and chopped)
Directions
1. Bake the potatoes in a hot oven at 425 f, gas mark 7 after prickling well, for 1 to 1¼ hours
until soft. Cool slightly.
2. Split the potatoes open and scoop out the flesh. Melt 2 tablespoons of butter in a frying pan
and fry the onions and chicken (if using) very gently and only until light brown.
3. Mash the potatoes adding seasonings, nutmeg and half the spring onions.
4. Add the remaining butter to the onions in the pan and when melted, add the mashed potatoes.
Stir thoroughly to combine then flatten out to form a cake
5. Cook the potatoes on a gentle heat for 5-6 minutes until brown underneath.
6. If you want to decorate it like a real pizza then put tomatoes onions or s pring onions and
capsicum sliced on top.
7. Sprinkle cheddar cheese on top, Now place under a moderate griller in the same pan until
browned on top.
8. Carefully slide on a serving dish.
9. Cut in to pieces and serve hot.

Tomato Poha

Ingredients
 2 large Onions
 1 large pataoes
 2 tamatoes
 2-3 green chillis
 1 small bunch of coriander leaves
 250 gms poha,
 1 small spoon chilli powder
 salt to taste
 1/2 lemon

Directions
1. Cut onions, patatoes, green chilli into fine pieces and fry in 3 table spoon of oil.
2. Stir for 2 minutes and add red chilli powder.
3. Stir some more for 1 minute
4. Add finely chopped tamatoes in the pan and stir till the gravy is free of all water.
5. Add poha( which had been soaked in water for 2 - 3 minutes and drained) )
6. Add salt and coriander( fienly chopped) and mix on low flame.
7. Close the pan for abt 2 minutes on low flame
8. open the lid.. add a dash of lemon as per your taste mix and serve
9. Please note that this dish cannot be kept for long since the lemon can make it bitter
Yet another Pizza

Ingredients
 1 pizza base (baked)
 1 onion (chopped)
 vegetables like (carrot, cauliflower, bean, capsicum, tomato chopped in small pieces.
 1 boil egg (cut into small pieces)
 Chicken pieces (quick sauteed)
 3 tbsp tomato sauce
 1 tbsp chilly sauce
 1 tbsp white sauce
 2 tbsp grated pizza cheese (mozzarella)
 1 tsp black pepper powder
 1 tsp coriander leaves (chopped)

Directions
1. Pour tomato sauce and chilly sauce together into the pizza base. Spread it all over.
2. Garnish with onion and vegetable slices followed by egg and chicken pieces
3. Top with coriander leaves
4. Pour white sauce and tomato sauce again on it
5. Then add grated cheese
6. Now put it in microwave oven at high temperature for 10 minutes. Even better, bake in a
regular oven for 10-20 minutes until the cheese is completely melted.
7. Cut into wedges and serve.
How to make pizza base at home?

1. Pizza base
Makes 12 slices
Preparation time: 2 1/2 hrs (for 2 pizzas of 30cm)

Ingredients :

1 1/4 cup warm water


1 packet yeast
3 1/2 cups plain flour
1 teaspoon salt
1/4 cup olive oil
1 pinch salt

Recipe :

Pour the warm water into a bowl, sprinkle the yeast on top and leave for 2 minutes. Add a
pinch of salt and cover bowl. Put in a warm place for 5 or 6 minutes, until mixture becomes
frothy.

Put flour and salt in a large bowl, make a well in the centre , then pour in the yeast. Add the
rest of the water and the oil, then mix until all ingredients are combined.
Knead until springy and elastic.
Roll the dough into a ball and put in a greased bowl. Cover bowl with clingfilm and leave in a
warm place for 2 hours, to rise.

Divide dough into two. Roll out each half onto a floured surface, until you have the desired
thickness.
Make sure pizza base is the same thickness all over by pressing with the flat of your hand
and mould it into shape.
Pinch up the edges, so the edge of your pizzas will be slightly raised.
Choose a topping (see other recipes) and cook in a moderately hot oven.

2. FOR THE QUICK PIZZA CRUST:


1 3/4 to 2 cups all-purpose flour, divided use
1 package (1/4 ounce) fast-rising dry yeast
2 teaspoons sugar
1/2 teaspoon salt
2/3 cup very warm water (125 to 130 degrees F)
1 1/2 teaspoons vegetable oil
Cornmeal

TO PREPARE THE PIZZA CRUST:


Combine 1 cup flour, yeast, sugar and salt in large bowl. Stir in water and oil. Mix in enough
remaining flour to form soft dough. Knead on lightly floured surface 5 minutes or until smooth
and elastic. Cover and let rest 10 minutes.

Sprinkle cornmeal on lightly greased 12-inch pizza pan or baking sheet. Roll dough to 12 -inch
circle; place on pan.

Bake in 350 degrees F oven 10 minutes. Remove from oven.


3. PIZZA BASE
4 cups White Flour (Maida)
1 1/2 cups Warm water.
1 1/2 tsp Dry Yeast
2 tbsp Vegetable Oil (for greasing)
1 tsp Sugar
Salt to taste
Directions
Add Dry yeast, salt & sugar to warm water & mix well.
In a large bowl, add the flour & make a well in the centre.
Add the water mixture in the centre & knead the dough well until it does not stick to the hand.
Lightly oil a bowl & place the dough in it. Cover it with a plastic & keep aside in a warm place
for 1 hr. The dough should double in its size.
Take a sheet pan & slightly oil it. Cut the dough into Quarters & place them on it. Cover the
pan with a plastic & refridgerator
