Chocolate Chip Cake

Ingredients
240ml (1cup) butter/margarine at room temperature
240ml sugar (1cup) (Sucre roux)
2 tbsp vanilla essence
4 eggs
120ml (½ cup) milk powder
1 tbsp vinegar or lemon juice
240 ml (1 cup) water approximately, may be more or less
720ml (3 cups) self-raising flour
1 tsp baking powder
1 tsp bicarbonate of soda
½ tsp salt
200ml chopped chocolate or chocolate chip

Recipe
1. Preheat oven at 175°C
2. In a large mixing bowl cream butter and sugar thoroughly for about 5-10 minutes until the
mixture looks pale and creamy
3. Mix in vanilla extract
4. Add the eggs one at a time and mix thoroughly in between eggs
5. Add the milk powder, vinegar and water until combined.
6. In a small bowl, add a tsp of the flour you've measured with the chopped chocolate or
chocolate chips. This will prevent the choco chunks/chips from sinking to the bottom of
the pan when it's cooking.
7. In a separate bowl combine the flour, baking powder, bicarbonate of soda and the salt.
Add this mixture in the bowl of wet ingredients and combine with a spatula. DO NOT
OVERMIX!
8. Then add the choco chips and combine with the spatula. DO NOT OVERMIX!
9. Pour mixture in any baking pan of your choice and bake for about 30-40 minutes or until
a toothpick inserted in the middle comes out clean.
