Moist Banana Bread with Raisins

This is a recipe for moist banana bread with raisins

Ingredients
2 large ripe bananas (or 3 medium bananas) , mashed
1 ¼ cups all-purpose flour
¾ cup cooking oil
½ teaspoon salt
2 ounces raisins
¾ cup granulated white sugar
1 teaspoon vanilla extract
2 eggs
1 teaspoon baking soda

Instructions
1. Preheat oven to 340F
2. Beat eggs in a mixing bowl
3. Add the bananas and oil. Continue to mix until the ingredients are well blended. Set aside.
4. On a separate bowl, combine flour, sugar, baking soda, salt, and raisins. Mix well.
5. Gradually add the flour mixture to the banana mixture. Continue to fold until all the ingredients are well
incorporated.
6. Add the vanilla extract. Mix.
7. Grease a loaf pan and then pour the mixture on it.
8. Bake for 50 minutes or until it passes the toothpick test
9. Remove from the oven and let it cool down. Refrigerate for 2 hours.
10. Slice the banana bread with raisins and arrange in a serving plate.
11. Serve. Share and enjoy with a cup of coffee or tea.
