Sweet Potato “Fries” –Healthier version

3 unpeeled sweet potatoes or yams, sliced into strips

1 teaspoon olive oil


Sea salt and pepper to taste


Dash of thyme


Dash of nutmeg

Preheat oven to 400° F.

Toss olive oil, sweet potatoes, sea salt, and pepper in a large bowl.

Transfer to a baking pan, sprinkle with nutmeg and thyme, and bake for 30–35
minutes or until tender.

Serves 4.

Substitutions

Many different seasonings will work with sweet potatoes. Experiment with allspice,
rosemary, or grated orange zest.

Healthy Tidbit

Fries from fast-food restaurants are cooked in oils at high temperatures, which
means the oils have been converted to trans fatty acids and thus should be avoided.
Furthermore, the familiar taste of fast-food fries is usually created by the addition of
sugar, salt, and chemical flavorings. Sweet potato “fries” offer a much healthier
alternative.
