Fluffy Vegan Banana Bread
Ingredients Preparation
● 3 medium bananas (very ripe) 1. Pre-heat oven to 350F
● 2 ½ cups oats 2. Combine ground flax or chia seeds with water and set
● ½ cup sugar (coconut, white, or brown) aside for 5-10min
● ¼ cup almond butter 3. Blend 2 cups oats until a fine flour is formed
● 2 tbsp ground flax or ground chia seeds 4. Mix oat flour, sugar, baking powder, remaining ½ cup
● 6 tbsp water oats, and salt in medium sized bowl
● 1 tbsp baking powder 5. In separate bowl, mash bananas and add almond
● 1 tsp apple cider vinegar butter, apple cider vinegar, vanilla extract, and flax or
● 1 tsp vanilla extract chia seed mixture
● ½ tsp salt 6. Incorporate dry flour mixture and stir well
7. Pour batter into greased bread pan or muffin tin
*May substitute almond butter with another 8. Bake for 60min or until an inserted toothpick is

Ingredients Preparation
➢ ¾ cup vegan butter or

● Boil in bag rice cooked place in bowl and set aside
● Corn ● In an oiled frying pan combine
● Cashews corn, bell peppers, and onions
● Bell Peppers ● Saute mixture until onions and

● Olive oil ● Add in cashews
● Chile and Garlic seasoning ● Season with chile and garlic

Banana Peanut Butter Overnight Oats
Ingredients Preparation
● ½ cup rolled or steel cut oats ● Combine mashed banana, non-dairy milk, and
● ½ cup almond milk (any non-dairy peanut butter in jar until blended
milk) ● Add oats, chia seeds, and brown sugar (optional
● 1 tbsp chia seeds for sweeter oats)
● ½ banana, mashed ● Mix thoroughly, cover, and refrigerate overnight
● 1 ½ tbsp peanut butter ● In the morning add toppings and enjoy!

Vegan Bean Chili

Vegan Bean Chili
Ingredients Preparation
● 1 bag red kidney beans ● Cook kidney beans and slice peppers and onions
● 1 red bell pepper ● Combine cooked beans, peppers, onions, chili ready
● 1 yellow bell pepper tomatoes, and diced tomatoes in crock pot
● 1 green bell pepper ● Add diluted tomato paste with enough water to create
● 2 small onions proper consistency of chili
● 2 cans chili ready tomatoes ● Allow to cook until peppers and onions are soft (few hours)
● 2 cans diced tomatoes adding chili powder to taste as it cooks
● chili powder (to taste)
● 1 can tomato paste
● water

Ingredients Preparation
● 1 ¼ cups brown rice (cooked) 1. Cook rice and lentils -- allow to cool
● 1 cup brown or green lentils (cooked) 2. Place rice, lentils, and beets into blender and pulse 15
● 1 cup shredded beets to 30 times or until having the appearance of ground
● 1 cup fine dry bread crumbs beef
● 3 tbsp finely chopped onion 3. Transfer into a bowl and add breadcrumbs, onion,
● 2 cloves garlic (minced) garlic, almond butter, thyme, fennel, mustard, salt and
● 2 tbsp smooth almond butter pepper
● 1 tsp dried thyme 4. Chill for 30 minutes
● ½ tsp ground fennel 5. Preheat oiled pan and form patties using ¾ cup of
● 1 tsp dry mustard mixture each
● ½ tsp salt and pepper 6. Cook patties for about 12 minutes, flipping
● Olive oil occasionally -- should be charred at the edges and
● 6 burger buns heated through
7. Add toppings and enjoy!

Creamy Garlic Pasta
Ingredients Preparation
● 3 cups grape tomatoes (halved) 1. Preheat oven to 400 degrees Fahrenheit
● 10 oz vegan pasta 2. Toss tomatoes in ½ tbsp olive oil and sea salt --
● 1 ½ tbsp olive oil bake for 20 minutes cut side up on
● 2 medium shallots (diced) parchment-lined baking sheet
● 8 large cloves garlic (minced) 3. Cook pasta according to package and drain
● Pinch of salt and pepper 4. In large skillet combine remaining olive oil, garlic,
● 3-4 tbsp vegan flour or thickener of choice shallots, salt and pepper over medium-low heat --
● 2 ½ cups unsweetened plain almond milk stir frequently for 3-4 minutes
5. Stir in flour and almond milk whisking out clumps
-- simmer 4-5 minutes or until thickened
6. Add roasted tomatoes and pasta to sauce and
enjoy!

Peanut Butter Cups
Ingredients Preparation
● ½ cup peanut butter 1. In a bowl, combine peanut butter, powdered sugar,
● ¼ cup powdered sugar vanilla extract, and salt to form a soft dough
● ½ tsp vanilla extract 2. Melt chocolate chips using double boiler method
● ¼ tsp salt 3. Using chocolate molds or cupcake liners, add
● 1 ¼ cups vegan chocolate chips enough chocolate to cover the bottom and sides
4. Form discs slightly smaller than molds out of
peanut butter mixture and cover over with more
chocolate
5. Refrigerate for 30 minutes and pop out of molds.
Store in an airtight container and enjoy!

Ingredients Preparation
● 1 cup rolled oats 1. In a large bowl, beginning with dry ingredients,
● ¼ cup unsweetened almond milk combine oats, milk, applesauce, baking powder,
● ½ cup unsweetened applesauce apple cider vinegar, maple syrup, cinnamon, and
● 1 tbsp baking powder nutmeg
● 1 tbsp apple cider vinegar 2. Let sit for 5 minutes to thicken
● 1 tbsp maple syrup 3. Using ¼ measuring cup, drop batter onto non-stick
● ½ tsp cinnamon pan, cooking 1-2 minutes on each side or until
● ½ tsp nutmeg golden and easily flipped
● 1 small apple with cinnamon 4. Dice a small apple and sprinkle with cinnamon as a
topping or simply enjoy plain pancakes

Vegan Baked Ziti
Ingredients Preparation

● 1 lb ziti, penne, or rigatoni 1. Cook pasta according to package in large pot


● 1 recipe Easy Quick Tofu Ricotta 2. Preheat oven to 375 degrees Fahrenheit
● 3-4 tbsp water 3. Add half of cooked pasta to 9x13 baking dish
● 3 tbsp Parmegan 4. Pour over half of tomato sauce and dollop on half of
● 1 recipe tomato sauce Tofu Ricotta
● 1 handful basil leaves (optional garnish) 5. Repeat with remaining sauce and pasta - stir water
into Ricotta and spread over top
6. Top with Parmegan and bake covered with foil for 15
minutes
7. Remove foil and cook additional 5-10 minutes or
until lightly browned
Tomato Sauce
Ingredients Preparation
● 1 tbsp olive oil 1. In a large skillet, heat oil and saute garlic
● 1 yellow onion (chopped) and onions for 5 minutes or until onions
● 3 cloves garlic (minced) become nearly translucent
● 1 can diced tomatoes (28oz) 2. Add diced tomatoes, crushed tomatoes,
● 1 ½ cups crushed tomatoes with basil (½ parsley, basil, oregano, salt, and pepper
28oz can) 3. Simmer for 20 minutes or until sauce has
● 1 tsp dried parsley thickened and tomatoes cook - stirring
● 1 tsp dried basil occasionally
● 1 tsp dried oregano
● ¼ tsp salt
● ¼ tsp black pepper
Quick Easy Tofu Ricotta
Ingredients Preparation
● 1 tbsp olive oil 1. Saute onions and garlic in olive oil until
● 1 yellow onion (chopped) onions become translucent
● 2 cloves garlic (minced) 2. Break tofu into 4 pieces
● 1 block extra-firm tofu (350g) drained 3. Add tofu, sauteed onions and garlic, and all
● ¼ cup lemon juice seasonings into blender and blend until
● 2 tbsp nutritional yeast smooth/creamy
● 1 tbsp white miso paste 4. If too thick, add 1-2 tbsp of water
● ½ tsp salt
Parmegan (Vegan Parmesan)

● ½ cup cashews 1. Add all ingredients to DRY blender and
● ½ cup macadamia nuts pulse several times until broken into
● ½ cup nutritional yeast crumbly texture
● ½ tsp salt
