There’s nothing better than a fluffy loaf of rich pumpkin bread

with all the flavors of the fall and winter seasons! I worked
yield: 1 (81/2-by-41/2-inch) loaf diligently to create this loaf especially for those who are sensitive
prep time: 10 minutes to nuts and coconut, and it has been a longtime favorite on my
cook time: 60minutes blog ever since. See my blog, againstallgrain.com, for an SCD-

• 2 large eggs

tidbits:
Hain baking powder contains potato starch but is grain-free and
does not use the standard cornstarch. To make a starch-free baking
powder, mix 1 teaspoon baking soda with 2 teaspoons cream of
tartar, then measure the 2 teaspoons called for. My purpose for
using baking powder here is to prevent the loaf from turning
green with the use of sunflower seed butter.
