Abstract

OREGANO Oreganum vulgare AND GARLIC Allium sativum AS

FRUIT PRESERVATIVE

The study aimed to determine the effectiveness of Oregano

(Oreganum vulgare) and Garlic (Allium sativum) as fruit preservative in

ripe and unripe banana.

Specifically, this study sought answers to the following questions:

(1) What is the effect of oregano (Origanum vulgare) leaves and garlic (Allium

sativum) cloves extracts on ripe and unripe silk banana (Musa Acuminata)? And

(2). Is there a significant difference in the shelf life of ripe and unripe silk

banana (Musa acuminata) with and without application of oregano (Origanum

vulgare) and garlic (Allium sativum) extract?

The data gathering was conducted March 2017. The data

gathering instrument used to obtain data was experimental method.

The shelf-life or number of days of the banana was rotten in 8 days

for ripe with and without preservative and 12 days for unripe with and

without preservative. It was used to determine the effect of the

intervention as fruit preservative. The data gathered from the study were

analyzed using the mean, standard deviation, t-test and One-way

Analysis of Variance (ANOVA) at 0.05 alpha level.

The results of the study showed that oregano and garlic extracts

has no effect on the shelf-life of the silk bananas. Therefore, the extracts

cannot be utilized as potential fruit preservative for silk bananas.
